How To make Sesame Anise Melts
2 c Flour
1/4 ts Baking soda
3/4 c Butter; softened*
3/4 c Sugar
1 tb Anise seed; crushed
1/4 ts Salt
1 Egg
1 c Sesame seed; toasted
DESCRIPTION: Melt-in-your mouth balls topped with crunch sesame seeds are a delicious, not too sweet, accompaniament to coffee or tea. Preheat oven to 400. Combine flour and baking soda, set aside. Beat together butter, sugar, anise seed and salt until light and fluffy. Beat in egg. Stir in flour in increments, blending after each addition. Divide dough into qurters and place all but one in refrigerator. With floured hands, roll rounded teaspoons of dough into 1-inch balls. Roll in sesame seed, pressing seeds in slightly, to coat all sides. Arrange balls 1 1/2 inches apart on greased baking sheets. Use the bottom of a glass to flatten balls to about 1/3" thickness. Repeat with remaining dough. Bake 6-9 minutes or until browned around edges. Cool on racks. These cookies are fragile, so store carefully in airtight container at room temp 10 days, freeze three months. From "THe Joy of Cooking," -----

RECIPE
1/2 cup organic sugar
1/4 cup neutral oil
3 Tbsp. non-dairy milk
1 tsp. anise extract
1 1/4 cups all-purpose flour
1/2 tsp. baking powder
1/4 tsp. salt
1/4 cup organic sugar
1/2 tsp. ground cinnamon
Preheat oven to 350 degrees Fahrenheit. To a bowl, add sugar, oil, non-dairy milk, and anise extract. Stir well. Add flour, baking powder, and salt. Stir until a smooth dough forms. Stir the sugar and cinnamon together in a small bowl. Roll the dough out on a floured surface. Use a 2-inch cookie cutter to cut into small stars. Press into the cinnamon sugar, before placing on a lined baking pan. Bake 10-12 minutes. Let cool for a couple of minutes on the pan, before moving to a cooling rack to cool completely. Makes about 3 dozen 2-inch cookies.

Ingredients
The Wet Ingredients:
1 cup (220g) granulated sugar
1 cup (250 ml) light olive oil or vegetable oil
1 cup (250 ml) orange juice
2 teaspoons pure vanilla extract
1/2 cup tahini
The Dry Ingredients:
3 and 1/2 cups (500g) all-purpose flour
1/4 teaspoon salt
zest of 2 oranges
2 teaspoons ground cinnamon
2 teaspoons (8g) baking powder
1/2 teaspoon baking soda
Topping: 1/2 cup sesame seeds
Notes
Preheat the oven to 350 °F, 180 °C
Line 2-3 baking trays with parchment paper.
Make the Cookie Dough:
Combine all of the dry ingredients in a bowl and whisk them together.
Combine all of the wet ingredients in a large bowl and whisk them together. Add the dry ingredients in 2-3 batches and whisk together. Switch to a spatula and mix until a sticky dough is formed. Cover loosely with a towel and set aside to rest for 20 minutes.
Make the Cookies:
Take about a tablespoon of dough and roll it into a ball. Roll the ball into a 5-inch (12-13 cm) long rope. Roll the rope in the sesame and then place on the prepared baking pan. Shape it into an S or into a circle.
Alternatively, skip the sesame roll part and form the cookies on the baking tray. Sprinkle the tops with sesame seeds for a lighter sesame flavor. (see video)
Bake the cookies for 20-25 minutes.
For crispier cookies, bake them a bit longer and cool the cookies on a cooling rack.
For softer cookies, bake them for between 2025 minutes and allow them to cool on the baking trays.
Transfer the cookies to cookie jars or to an airtight container and store at room temperature up to 2 weeks.
Serve with Greek coffee. Kali Orexi!

It is simply a caramel syrup with sesame seeds stirred in, poured onto a counter to cool in a thin layer, and cut into bite-sized candies.
