How To make Seven Layer Chocolate Cake
7 Eggs, separated
1 c Confectioners' sugar
1 c Sifted cake flour
1/4 ts Salt
1/2 lb Sweet chocolate
3 tb Cold water
Frosting (filling) -ingredients: 3 Eggs
1 1/2 c Sugar
1/2 lb Butter
1 ts Vanilla
Cake ingredients: Cake directions: Beat egg yokes until thick and lemon colored. Add confectioners' sugar gradually, beating constantly. Sift flour and salt together and fold into yolk mixture. Beat egg whites until stiff enough to hold a peak and fold in lightly. Line seven-layer cake pans with paper and grease the paper. Divide batter evenly among pans and bake in moderate oven (350 degrees F.) for 12 minutes. Remove from pans at once. Frosting (filling) directions: For the frosting, heat chocolate and water in the top of double boiler. Mix eggs and sugar thoroughly, combine with melted chocolate and cook until thick, stirring constantly. Remove from heat; add butter and beat until well blended. Add vanilla and continue beating until filling is stiff enough to spread. Cover each layer and top and sides of cake with filling. NOTE: It may be necessary to place several toothpicks through the top layers to hold them in place until filling sets. Serve after 24 hours. Serves 14 to 16. This is a melt in your mouth old fashion recipe. 10 thin layers with luscious chocolate dripping through and through. It is sure to win the heart of that someone special!!!
1 CUP SHORTENING, HALF BUTTER
2 CUPS SUGAR
4 EGGS
2 2/3 CUPS SIFTED CAKE FLOUR (I USE WHITE LILY ALL PURPOSE)
2 TSP. BAKING POWDER
1/2 TSP. SALT
1 CUP MILK
1 TSP. VANILLA
CREAM SHORTENING, ADD SUGAR GRADUALLY. CREAM UNTIL MIXTURE IS VERY FLUFFY. ADD EGGS ONE AT A TIME, BEATING WELL AFTER EACH ADDITION. SIFT FLOUR, BAKING POWDER AND SALT TOGETHER, ADD TO MIXTURE ALTERNATELY WITH MILK. ADD FLAVORINGS. SPREAD APPROXIMATELY 2/3 CUP IN EACH PAN AND BAKE 5 OR 6 MIN. AT 350 DEGREES, OR UNTIL GOLDEN. FROST WHEN COOL.
ICING
4 CUPS SUGAR
2/3 CUP COCOA
3 CANS EVAPORATED MILK
1/2 CUP HOMOGENIZED MILK
2 TBSP. KARO
3/4 STICK BUTTER
VANILLA
MIX SUGAR AND COCOA TOGETHER WELL, THEN ADD
KARO AND MILK. COOK SLOWLY OVER MED. LOW HEAT UNTIL IT THICKENS, STIRRING OFTEN. IT WILL TAKE 45 - 60 MINUTES.
AT THE END, ADD BUTTER AND VANILLA.
THIS MAKES A LOT OF ICING. YOU CAN SAVE THE LEFTOVER IN THE FRIDGE FOR A WEEK AND APPLY TO ANOTHER CAKE.

Make your own buttermilk!
For the cake in the video: 4 x 7 tins. Will also work for 3 x 8 tins.
250g Unsalted Butter
250g 70% Chocolate
180ml Brewed Coffee (or 180ml Hot water with 2 tbsp Instant Coffee Granules)
4 Eggs
150ml Buttermilk (see link below for how to make your own)
3 tbsp Vegetable or Sunflower Oil
430g caster sugar
150g Plain Flour
150g Self Raising Flour
60g Cocoa Powder
3/4 tsp Bicarbonate of Soda
1/2 tsp Salt
430g Caster Sugar
100g Butter
200g Chocolate (I like 50% for ganache)
100g Double Cream
If you want to fill and ice with ganache you can double this quantity.
125g Soft Unsalted Butter
225g Icing Sugar
80g Melted Chocolate (70% is best for buttercream)
If you want to fill and ice with buttercream you can double this quantity.
For a 6 cake follow these ingredients. If you need something even smaller just halve all of the ingredients!
190g Unsalted Butter
190g 70% Chocolate
120ml Brewed Coffee (or 180ml Hot water with 2 tbsp Instant Coffee Granules)
3 Eggs
115ml Buttermilk (see link below for how to make your own)
2 tbsp Vegetable or Sunflower Oil
325g Caster Sugar
115g Plain Flour
115g Self Raising Flour
45g Cocoa Powder
1/2 tsp Bicarbonate of Soda
1/4 tsp Salt
75g Butter
150g Chocolate (I like 50% for ganache)
75g Double Cream

Y'all are in for a real treat today. Bernice Kidd is known in our hometown of Harpersville for her chocolate cake. I can remember tasting it as a child and it was always so good. In today's video, she shares her recipe for her famous 6-layer chocolate cake. We have a good time making it together. Did I mention she is 92 years young? Watch the video and you will see why I love this woman.
