EASY TO MAKE CHEESE STICKS BY SHERRY (FILIPINA IN UK)
Today, I am going to show you to make an easy cheese sticks.
The ingredients are the following:
1/3 cup plain flour
1/2 tsp salt (or less if you prefer)
1/2 tsp paprika
1/2 tsp ground black pepper (or less)
In another bowl, you'll need:
1 x egg
pinch of salt
pinch of ground black pepper
11/2 cup of breadcrumbs
Oil for frying
And lastly, you'll need Cheddar Cheese or cheese of your preference
1. Mix the flour, salt, pepper and paprika in one bowl.
2. In another bowl, whisk the egg together with a pinch of salt and pepper
3. Cut the cheese into sticks
4. Dip the cheese in the flour mixture, then the egg and breadcrumbs (do it twice)
5. Fry the cheese sticks until golden brown
6. Once cooked, use a paper towel to drain the excess oil from the cheese sticks
7. Serve and enjoy with your preferred dip!

Sherry Cream Mussels
1 Pound Mussels, Fresh and Cleaned
½ Each Yellow Onion, Small Diced
3 Tablespoons Leeks, Minced
4 Cloves Garlic, Chopped
1 Cup Sherry
2 Cups Heavy Cream
½ Bunch Thyme, Fresh
1 Each Green Bell Pepper, Sliced Thin
1 Each Yellow Bell Pepper, Sliced Thin
1 Each Red Bell Pepper, Sliced Thin
2 Tablespoon Butter, Unsalted
¼ Bunch Parsley
5 Slices Baguette, Toasted
Method:
1. Stabilize your grill at 500F and set up for a direct cook. Place a cast iron pan on the grill surface and bring it to temp.
2. Once the pan is hot, add the butter and diced onions. Cook for 1 minute, then add the garlic. Sweat for 30 seconds, then add the leeks. Cook for another 30 seconds before deglazing with sherry (Be careful of flames as sherry is flammable). Reduce by half, then add the heavy cream and fully incorporate and reduce by ¼.
3. Add the fresh thyme and mussels, then close the dome and allow to steam roast for 4 minutes. Check to make sure all of the mussels are open. As the sauce continues to reduce, transfer the open mussels to the presentation bowl. Discard any mussels that do not open and pour the reduced sauce over the bowl of opened mussels.
4. Garnish with sliced peppers, toasted baguette and ¼ bunch of parsley.

Just assemble, cover with plastic wrap and place in the refrigerator. Enjoy this stress-free breakfast.
INGREDIENTS
6 ounces fresh spinach
5 eggs
1 cup milk
Salt and pepper
1/2 16 ounce sourdough boule, cubed 1″ pieces
1 1/4 cup shredded cheddar cheese
DIRECTIONS
0:28 1. Preheat oven to 350 degrees. In a large skillet, heat oil over medium-high, add spinach and cook until wilted (about 2 minutes).
1:09 2. In a medium bowl, combine eggs, milk, salt, and pepper. In a 1 quart greased baking dish, add half of the bread cubes. Sprinkle half of the shredded cheese, half of the spinach and pour half of the egg mixture over the top. Repeat with remaining ingredients.
