6 Eggs
6 tb Dry Sherry
6 tb Light Cream
6 Bacon strips
3 English muffins, toasted
Butter Salt Pepper
Preheat oven to 350 deg. Butter the insides of 6 muffin cups in a large muffin tin. Cook bacon until most of the fat is rendered out but bacon is still limp. Place 1 slice each into the bottom of the buttered muffin cups (curl around so that bottom is completely covered. Crack 1 egg into each muffin cup. Sprinkle with salt and pepper. Dot with butter. Place 1 tb each of Dry Sherry and Light cream into each muffin cup. Bake in 350 deg. oven 10 to 15 minutes or until egg is of desired doneness. Serve on halves of English muffins.

Here we make healthy every day recipes that the whole family can enjoy. The recipes are also suitable for those following the Dukan lifestyle as well as those on low carb and high protein diets. We keep the salt (sodium) low and we use sweetener in stead of sugar. We do not use any wheat flour but occasionally we use small quantities of corn starch. We use oat bran that is high in fibre to substitute regular flour.
Today's recipe is baked eggs, also called shirred eggs or in French : Oeufs en cocotte. We are are making two fillings : one for pure protein days and one for protein and veg days (if you are on the Dukan).
Ingredients : for 4 portions
4 eggs
oil for greasing
80 to 120g smoked salmon finely sliced in strips
1 table spoon fresh dill (chopped)
seasoning
4 heaped teaspoons of fat free or low fat (less than 7%) quark or ricotta
1 small handful of frozen sweet bell peppers
fresh chillies, parsley and lemon for garnish (optional)

Oeuf cocotte (egg in a pot) is a very simple way of cooking eggs for breakfast or lunch and get something really tasty and really enjoyable. For the classic oeuf en cocotte a la creme:
Half a teaspoon of butter (for the mold)
2 or 3 tablespoons of cream (heavy whipping cream)
1 whole egg
a pinch of salt and pepper
1 tablespoon of finely chopped chives
cook in the oven at 150 degrees Celsius (302 F) for 12 to 15 minutes depending on how well cooked you want the egg. serve warm with a toast of bread
Cookware:
small oven proof ramequins ( affiliate link)
if you try like me to improvise and make your own version of the oeuf en cocotte I would first add just a little bit at the bottom of the ramequin. then the eggs then cover with plenty of sauce or cream. as the egg need to poach in the liquid.

Baked Eggs or Shirred Eggs or Oeufs en Cocotte with feta cheese
Heat the oven to 375F
Butter the ramekins
Add a tbsp of cream to each ramekin
Add a large egg to each ramekin
Add a pinch of salt and pepper over each egg
Add crumbled feta to each ramekin
Bake for 10 minutes (less if you like runny or more if you like them more set)
Remove them from the oven and top with fresh chipped chives
