New Orleans native Charlie Andrews demonstrates how to make New Orleans style Shrimp and Eggplant dressing. The dressing does have some Italian influence. It consists of roasted eggplant, Lots of shrimp, trinity. Italian breadcrumbs, eggs and my favorite blend of New Orleans seasonings. It also has a Parmesan cheese Italian bread crumb topping. Welcome Back to Cooking Tips & Household Hints !!! On our 10th Episode I will Prepare Y'all my Rendition of the Millers Cafeteria Eggplant Casserole !!! I Tweek it a Bit !!!
Original Recipe :
1 large eggplant
2 cups chicken broth
10¾-ounce can cream of mushroom soup
8-ounce package stuffing mix
3 tablespoons Parmesan cheese
1 small green pepper, chopped
½ cup diced onion
1 tablespoon butter
Olive oil
Salt and pepper, to taste
½ teaspoon crushed anise seed
1 to 1½ cups mixed shredded cheddar and mozzarella cheese
Peel and dice eggplant. Soak in saltwater 30 minutes.
Combine chicken broth and cream of mushroom soup. Add stuffing mix and Parmesan cheese. Stir until stuffing is moistened.
Sauté green pepper and onion in butter and 1 tablespoon olive oil. Remove pepper and onion from pan, and drain. Add 2 or more tablespoons olive oil to drippings in pan. Add eggplant. Sauté until tender. Season with salt, pepper and anise. Stir. Add to stuffing mixture.
Pour mixture into a buttered 9-by-13-by-2-inch baking dish. Top with cheese. Bake in a preheated 350-degree oven 30 to 45 minutes. Makes 8 to 10 servings.
Baked Eggplant and Shrimp Casserole Recipe
Hello! Today I put together an easy dish for dinner. This eggplant casserole came out so yummy! Keep reading below for a full list of ingredients!
Ingredients:
Olive oil (or cooking oil of your choice)
(2) eggplants
(1/2) onion, chopped
(2) red bell peppers, chopped
(1/2 tsp) curry
(1/2 tsp) thyme
(1/2 tsp) cayenne pepper
(1/2 tsp) salt
(1/2 tsp) black pepper
(1/2 tsp) maggi
(1 bunch) scallions
(2-3 lbs) cooked shrimp
(1 pkg) mozarella cheese
(1/4 cup) black olives
(1/2 tsp) soy sauce
Directions:
1. Cut eggplants into even sized pieces.
2. Add eggplants to a bowl of salt water and soak for 5 minutes.
3. After soaking, pat dry with a paper towel and transfer to a baking dish.
4. Bake at 400 degrees Fahrenheit for 10 minutes.
5. Add olive oil, onions, and red bell peppers to a pan and cook on medium heat.
6. Stir in 1/2 teaspoon each of curry, thyme, cayenne pepper, salt, black pepper, and maggi.
7. Add in scallions.
8. Add in cooked shrimp.
9. Cook down for 10-15 minutes.
10. Cut fresh mozarella into even sized pieces.
11. In a baking dish, layer chopped eggplant, cooked shrimp medley, and mozarella cheese.
12. Add in black olives.
(Optional) add in 1/2 teaspoon of soy sauce
13. Continue to layer until all ingredients are used.
14. Bake at 400 degrees Fahrenheit for 10-12 minutes. Allow dish to cool before serving.
Serve and enjoy!

INGREDIENTSEggplant - 400 grams
Salt - 1/2 teaspoon
Red chili - 1/2 teaspoon
Turmeric - 1/4 teaspoon
Oil - 30 milliliters

Garlic - 1 tablespoon
Onions - 160 grams
Salt - 1 teaspoon
Red chili - 1 teaspoon
Turmeric - 1/4 teaspoon
Coriander powder - 1 teaspoon
Water - 60 milliliters
Tomato - 210 grams
Green chili - 2
Water - 120 milliliters
Shrimps - 400 grams
Coriander - 1 tablespoon
PREPARATION
1. Take 400 grams eggplant and cut it into pieces.
2. Transfer this into a bowl, add 1/2 teaspoon salt, 1/2 teaspoon red chili, 1/4 teaspoon turmeric and mix it well.
3. Marinate for 20 - 25 minutes.
4. Heat 30 milliliters oil in a skillet, add the marinated eggplant in it and mix it well.
5. Cook for 8 - 10 minutes on medium heat or until the eggplant is cooked properly.
6. Heat 30 milliliters oil in a another skillet, add 1 tablespoon garlic, 160 grams onions and fry till translucent or until it turns golden brown in color.
7. Add 1 teaspoon salt, 1 teaspoon red chili, 1/4 teaspoon turmeric, 1 teaspoon coriander powder and mix t well.
8. Add 60 milliliters water and mix it well.
9. Cook for 5 - 7 minutes on medium heat.
10. Then, add 210 grams tomato, 2 green chili and mix it well.
11. Saute for 5 - 7 minutes on medium heat or until it turns soft and pulpy.
12. Add 120 milliliters water and mix it well.
13. Cover it with lid and cook for about 5 - 7 minutes on medium heat.
14. Open the lid and give it a nice stir.
15. Now, add 400 grams shrimps and mix it well.
16. Again cover it with lid and cook for about 7 - 10 minutes on medium heat.
17. Open the lid and give it a nice stir.
18. Now, add the cooked eggplant in it and mix it well.
19. Add 1 tablespoon coriander and mix it well.
20. Cook for another 5 - 7 minutes on medium heat.
21. Remove it from heat.
22. Garnish with coriander.
23. Serve hot with rice.
