2 c Margarine, softened
2 c Granulated sugar
3 Eggs
2 ts Vanilla extract
1 ts Lemon extract
6 c All-purpose flour
1 ts Baking soda
BEFORE BAKING, SPRINKLE WITH GRANULATED SUGAR, IF DESIRED COOKIE MIX: Cut four 14X12-inch pieces of waxed paper or plastic wrap; set aside. In a large bowl, cream margarine & sugar. Beat in eggs, vanilla and lemon extract until light & fluffy. In a large bowl, combine flour and baking soda. Gradually stir flour mixture into egg mixture until blended. Divide dough into 4 equal pieces. Shape each piece into an 8-to10-inch roll. Wrap each roll in 1 piece of waxed paper or wrap. Place wrapped rolls in a plastic freezer container w/a tight fitting lid, or wrap air-tight in a 14x12 piece of heavy duty foil; label. Store in freezer. Use within 6 months. YIELD: 12 dozen cookies. TO BAKE: Preheat oven to 350F. Lightly grease 2 large baking sheets. Cut frozen dough into 1/4-in slices. Place on baking sheets 1/2-in apart, 8 to 10 min. or until edges get slightly brown. YIELD: 36 cookies.

Cinnamon Slice and Bake Cookies - Recipe using a Cake mix #52
Delicious easy cookies start with a cake mix!
1- 18.25 oz package spice cake mix
1/2 cup vegetable oil
1/3 cup butter softened to room temp.
1 large egg
2 tsp ground cinnamon
1 cup turbinado (coarse brown) sugar for rolling cookie dough in (optional)
Mix all of the ingredients together (except for the turbinado sugar) in a bowl.
Shape dough into 4- 2 rolls.
Roll dough logs in the brown sugar.
Wrap and chill for an hour or more.
Slice cookie dough into 1/4 slices and place 2 inches apart on an ungreased cookie sheet (or covered with a silicone mat).
Bake at 350F for 8-10 minutes until edges are lightly browned.
Once they are cooled, you can add spread some filling between two cookies and make sandwich cookies with them.

Cherry Pie Sugar Cookie Cups | Easy Christmas Cookie Recipe
Cherry Pie Sugar Cookie Cups are easy and beautiful cookies to make for Christmas this year!
Cherry Pie Sugar Cookie Cups

1-16 oz. tube refrigerated sugar cookie dough
1/2 c. granulated white sugar
1-21 oz. can cherry pie filling
1 c. powdered sugar
1 Tbsp. unsalted butter, melted
1-2 Tbsp. milk
Preheat oven to 350*. Cut the cookie dough into 24 even slices. Pour 1/2 c. granulated sugar onto a plate or shallow bowl. Roll each slice of cookie dough into a ball. Roll each ball into the sugar to coat evenly. Spray a 24 cup mini muffin tin with baking spray then place one dough ball into each cup. Bake at 350* for 15 minutes. Remove from the oven and press the inside of each cookie cup down (if necessary) to create a well. Spoon about 1 Tbsp. of cherry pie filling into each cookie cup. Bake for 3-4 minutes. In a small bowl, whisk together the powdered sugar, melted butter and milk until it is smooth and pourable. Drizzle the glaze over the cookie cups. Cool completely before eating. Store in the refrigerator. ENJOY!
