Ingredients
¼ cup salted butter softened, plus 1 tablespoon more for greasing pan.
¾ cup packed brown sugar (158g, 5.5oz)
1 large egg
1 tablespoon vegetable oil
¼ teaspoon vanilla extract
¾ cup all purpose flour (90g, 3.25 oz)
¼ teaspoon ground cinnamon
¼ teaspoon ground ginger
⅛ teaspoon ground cloves
⅛ teaspoon ground nutmeg
⅛ teaspoon baking powder
⅛ teaspoon salt
¼ cup milk
Instructions
Heat oven to 350° F (177° C). Lightly grease a small baking dish with butter
Pro Tip: I use a 4x6-inch baking dish that has a base area of 24 square inches. You can also use a 5x5-inch baking dish with a base area of 25 square inches or a 6x6-inch dish which will yield a spice cake that may bake faster.
In a small bowl, beat butter and brown sugar with an electric mixer until well mixed.
Beat in egg, vegetable oil, and vanilla extract.
In a separate small bowl, whisk together flour, cinnamon, ginger, cloves, nutmeg, baking powder, and salt.
Add the dry ingredients to the butter/egg mixture and mix to combine.
Stir in the milk.
Pour the batter into the baking dish and place the baking dish on a rimmed baking sheet to catch any possible spills.
Bake for 40-45 minutes or until lightly browned and a toothpick inserted in the center comes out clean. Remove and place the baking dish on a rack to cool completely.
Frost (if desired) with any commercial or homemade icing. I used some cream cheese icing I had in the refrigerator.
When finished, cut into 4 to 9 squares.
Spice Cake Mix Hack
Hello team diva , y’all we’re known over here for divafied cakes aka hacking a box cake mix to taste homemade. Well here’s a crowd favorite, pecan,pumpkin mini cakes. This mixture you most definitely can throw in a Bundt or tube pan . However I was inspired by a box of two mini bundts I spotted on a recent trip to Aldi at $3.89 ..not my kind of price. 1 box Duncan Hines spice cake mix
1 cup heavy cream
4 eggs
1/2 cup veg oil …combine all these to your bowl stir or beat on low 60 seconds.

1/3 pumpkin purée
Pinch pumpkin spice (optional)
1 tablespoon maple butter or maple syrup
1/2 teaspoon vanilla extract..stir in all ingredients or mix 15 seconds.

Crushed pecan dusted in flour…fold in your pecan mixture to the batter ..butter and grease pan of choice .
Bake at 350 ..mini cakes 12 mins…tube Bundt pan may take 40 mins ….(2) 9 inch round may take 20 mins..keep in mind oven times vary ..check with a skewer every 15 mins if your making bigger cakes.
For cupcakes..10 mins max….

Thinner glaze more liquid..thicker less liquid
..If you don’t have maple butter don’t use regular syrup in the glaze ..it’ll have an artificial sweet taste .

I’m obsessed with this perfectly delicious and moist Applesauce Cake! There’s so much flavor from the spices to the raisins and the cooked caramel icing (penuche icing)! I hope you love this classic Betty Crocker recipe as much as I do!
Perfect dessert recipe for Christmas or any seasonal/ holiday event!
▪️Applesauce Cake Recipe:
▫️2 3/4 C AP Flour
▫️2 C Sugar
▫️1/4 tsp Baking Powder
▫️1 1/2 tsp Baking Soda
▫️1 1/2 tsp Salt
▫️1 tsp Cinnamon
▫️1/2 tsp Cloves
▫️1/2 tsp Allspice
▫️1/2 C Vegetable Oil
▫️1/2 C Water
▫️1 1/2 C Unsweetened Applesauce
▫️2 Eggs
▫️1 C Raisins, chopped
▫️1/2 C Chopped Walnuts (optional)
Bake on 350F for 35-40 minutes in an oblong pan. Bake for 25-30 minutes at 350F in circle 9 inch pans.
▪️Penuche Icing Recipe:
▫️1/2 C Butter (1 stick)
▫️1 C Packed Brown Sugar
▫️1/4 C Milk
▫️ 1 3/4 to 2 C Powdered Sugar (confectioner sugar)
Melt butter and sugar together for 2 minutes, stir in milk. Allow to cool to room temperature. Add butter mix to the powdered sugar in a mixing bowl. With a hand mixer or stand mixing bowl (whisk attachment) whisk for about 5 minutes, or until light and fluffy.

Fresh Apple Spice Cake

Ingredients
1 cup chopped pecans
1/2 cup dark rum, such as Mount Gay
1 cup golden raisins
1 cup granulated sugar
1 cup dark brown sugar, lightly packed
3 extra-large eggs, at room temperature
3/4 cup vegetable oil
2 teaspoons pure vanilla extract
2 teaspoons grated orange zest (2 oranges)
2 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon kosher salt
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/8 teaspoon ground cloves
1 1/2 pounds Granny Smith apples, peeled, cored, and 1/4-inch-diced (3 to 4 apples)
Vanilla ice cream, such as Haagen-Dazs
Caramel sauce, such as Fran's, heated
Directions
Preheat the oven to 350 degrees F. Grease and flour a 9-by-13-by-2-inch baking pan.
Place the pecans on a sheet pan and toast them for 5 to 10 minutes, until lightly toasted. Set aside. Combine the rum and raisins in a small bowl, cover with plastic wrap, and microwave for 60 seconds. Set aside.
In the bowl of an electric mixer fitted with the paddle attachment, beat the granulated sugar, brown sugar, eggs, vegetable oil, vanilla, and orange zest on medium speed for 3 minutes. Sift the flour, baking powder, salt, cinnamon, nutmeg, ginger, and cloves into a medium bowl. With the mixer on low, slowly add the flour mixture to the wet mixture, just until combined. Drain the raisins, discarding the liquid. With a rubber spatula, fold the raisins, pecans, and apples into the batter. Spread into the prepared pan and smooth the top.
Bake for 35 to 40 minutes, until a toothpick inserted in the center comes out clean. Set aside to cool, cut into squares, and serve warm or at room temperature with a scoop of vanilla ice cream and a drizzle of warm caramel sauce.
