BBQ Glazed Smoked Turkey

For this BBQ Turkey, it's not about those traditional Thanksgiving Flavors... it's all about creating juicy, flavorful, delicious BBQ pulled turkey. Then I make a white BBQ sauce to serve alongside.
This is one turkey recipe that’s great year round. I brine a whole turkey for 48 hrs in my bird brine combined with Killer Hogs The BBQ Rub - and apple juice. After a 2 day soak the skin is air dried for an hour in the refrigerator then I stuff the cavity with citrus fruit and green apples. The skin gets a light coating of peanut oil and dusted with Killer Hogs The BBQ Rub. It’s a lot like smoking a whole chicken but on a much larger scale!
You can smoke the turkey on any pit, but my Traeger makes a beautiful bird; so I fired it up running at 300°F with apple pellets for smoke flavor.
Once the Traeger was ready, the bird goes right on the center rack. It takes about 3 1/2 hours for a turkey this size to smoke, so kick back and enjoy the process. After an hour I start basting the outside with melted butter, and I start monitoring the internal temperature. For this I use a Themoworks DOT meat probe into the thickest part of the breast.
First the Thermoworks DOT is set for 155 and when the temp alarm goes off its time to glaze the turkey. Use a silicone brush and drizzle the sauce over the skin without touching the turkey too much. Close the lid and keep cooking until the internal reaches 165°F in the breast. It should take about 30 minutes to get there.
The turkey is done at this point but needs to rest for at least 15 minutes before carving. To serve it I like to pull the whole bird. Fist I remove the legs, carve off the breast and finally the thighs and wings. Use a pari of cotton gloves underneath nitrile gloves and pull the meat apart by hand just like pulled pork. You’ll end up with about 4-5lbs of pulled meat.
I serve it with my version of Malcom's White BBQ Sauce buy it’s great with any bbq sauce. It goes great with pulled pork as another option and it gives you an opportunity to cook turkey year round!
Malcom’s White BBQ Sauce Recipe:
- 2 cups Mayo
- ½ cup Apple Cider Vinegar
- 1 Tablespoon Course Ground Black Pepper
- 1 Tablespoon Granulated Garlic
- 1 Tablespoon Sugar
- 1 teaspoon Horseradish (optional)
- 1 teaspoon Salt
- ½ teaspoon Ground Cayenne Pepper
- Juice from 2 Lemons
Whisk the ingredients in a large bowl and store in the refrigerator for a few hours before serving.

Buttermilk Brine
3/4 Brown Sugar

1/2 Gallon of Buttermilk
To adequately brine any bird, you'll need about 1 hr per lb under refrigeration. In this recipe I cooked a 14 lb Ferndale Turkey grown right here in Minnesota. Ferndale Turkeys are my favorite, because they do not contain any injections like you might find in Turkeys from your bigger grocery chain.
I cooked this turkey on my Kamado smoker set at 300 over lump charcoal. In the video I alluded to the Turkey Taking about 3-4hrs to cook, however this will vary depending on the size of Turkey you buy. A digital instant read thermometer is your friend, once it hits 159, in the thickest part of the breast, go ahead, take it off and let it rest on your counter.
You can ideally suit this Turkey to your specific tastes but I encourage you to grab a Caribbean BBQ Rub and Mississippi White Sauce and give it a go. The Oak Ridge Jah-Love is a great Small Batch BBQ Rub that really packs a punch, made with only the best ingredients I assure you, it is the real deal. (This is not a paid advertisment, I'm just a fan). As for the white sauce, its got the consistency of Ranch but a little different, its hard to describe you just have to go out and grab yourself a bottle of the Malcom Reeds Mississippi White Sauce. Together the Caribbean spice and the sauce are a combination made in heaven and will make your Turkey the star of the dinner table this holiday season

HOW TO SMOKED TURKEY BREAST

INGREDIENTS:
- Turkey Breast (ours was two wrapped together)
- 1/4 cup melted butter
- Postal Barbecue - CHICK'N RUB (or rub of your choice)
STEP #1
To prepare your Turkey breasts for the smoker, first we need to help it out a little bit by adding some richness and moisture as well as some great flavour as turkey breasts can easily come dry and lack flavour. To start with take your melted down butter and inject your boneless turkey breast filling the inside with that rich buttery flavour. Once injected, apply your favoruite BBQ rub for poultry. I used the new Postal Barbecue CHICK'N Rub which add incredible flavour to all things poultry.
Step #2
With your Turkey Breasts all prepared, place it onto the grill opposite the coals and begin smoking your roast between 300-325F. We will be bring the internal tempreture up slowly to 160F-165F. During the cook, I also added in some cherry wood to provide a little bit of delicious smoky flavour and let it smoke away.
Step #3
After about 1 hour 40 minutes your turkey breasts should be at or nearing your target tempreture (NOTE: If you are only cooking a single turkey breast your times will be shorter). At this point remove it from the grill to let it rest for a few minutes before slicing it up and enjoying your feast!

BBQ Turkey Recipe | How to BBQ A Turkey
How to BBQ a Turkey! In this video you will learn how to BBQ a turkey on the grill. *****TO SEE OUR BBQ ACCESSORY GUIDE CLICK HERE:
The night before the cook, you will need to make a a salt water brine and allow it to sit in the fridge for 12 hours. This will help make the turkey more juicy as well as add some extra flavours.
On the day of the cook before you put the bird on the bbq, place some chopped celery and onions on a baking sheet and cover with chicken stock. Once this is done place the turkey breast down with a little bit of oil and place on the bbq for indirect cooking at 325 degrees. After one hour flip the turkey over so that it is breast up for another 2 hours basting halfway through.
The turkey will be when the internal temp is 165 degrees (3 hours +/- for our 6.5kg turkey). Once it is cooked remove from the grill and let it rest for at least 20 minutes.
lastly, you will want to carve it and enjoy a great feast with good friends!
