Everything Bagel Seasoning Waffles / Cold smoked salmon, capers, avocado, tomatoes, & cream cheese
Crisp waffle with everything seasoning inside. A play on Bagels & Lox but replacing the bagels with waffles. We used cold smoked salmon, capers, avocado, heirloom tomatoes, cream cheese, dill, lemon, more everything seasoning, & freshly cracked pepper to top the waffles. The waffles can be used for any combination you like including a version of Avocado Toast. They are great.
Recipe
1/ 4 cup Everything Bagel seasoning (bloomed in water)
1 1/3 cups All Purpose Flour (cassava flour will work for gluten free)
1 tsp baking soda
1 tsp baking powder
3 eggs (room temperature- cracked and beaten with a whisk)
2 TBSP avocado oil (any neutral oil or melted butter)
1/ 2 cup buttermilk or plain yogurt
1/ 2 cup cold water
Mix the everything seasoning in a couple ounces of water and let sit for about a half hour.
In a large mixing bowl sift the dry ingredients into this. Add eggs and stir (do not overmix). Add milk and water, and oil. Stir a little but just enough to incorporate the ingredients. Taste and adjust the seasonings if necessary. Heat a waffle iron. Add a small amount of cooking spray the first time if necessary (all waffle irons are different). Add about 6 ounces or so to make each waffle. If you do not have a 4 compartment waffle iron then follow regular waffle directions for your waffle iron. cooking for anywhere from 7 to 10 minutes... or until the waffles are golden brown and crisp on the outside. Remove and allow to cool.
Garnishes can be many things. We used cream cheese, avocado slices, heirloom tomatoes, dill, cold smoked salmon (lox), sliced red onion, everything bagel seasoning, fresh lemon juice, and freshly cracked black pepper. Use your imagination!!!
The waffles can be cut into 1/ 4s and served on a tray either for a buffet or as passed appetizers at a party or gathering.

Amazing Watercress Article! (Who knew?!)
BETH’S EASY SALMON ROULADE RECIPE
Serves 1
INGREDIENTS:
1 bunch watercress
Drizzle of Olive Oil
Sat & Pepper to Taste
2 tbsp (30 ml) cucumber, peeled and diced
1 radish, diced
3 tbsp (45 ml) Boursin Cheese
3 large slices of smoked salmon
fresh dill or parsley
2 lemon wedges
METHOD:
Place watercress on a plate to form a base. Drizzle with olive oil and season with salt and pepper
Dice cucumber and radish into tiny cubes. Lay out salmon, overlapping to form a triangle or rectangular.
Spread cheese on top of salmon, in the center. Top cheese with cucumbers and radishes. Roll up to form a log. Place salmon log on center of watercress bed.
Squeeze lemon wedge on top of salmon, add freshly cracked pepper.
Top with fresh dill or parsley.
Enjoy!

Recipe : Salmon Potato Waffles

For 4 people
TOTAL TIME : 25 min
PREP TIME : 10 min
COOK TIME : 15 min
Ingrédients :
6 slices smoked salmon
½ cucumber
20 cl Fresh cream
1 Lemon
500 g Potatoes
20 cl Gloria semi-skimmed milk
2 Eggs
1 Yellow
60 g grated Gruyère
5 cl olive oil
1 Small onion
120 g Flour
1 garlic clove
5 Dill sprigs
Salt
Pepper
Step 1 : Peel and grate the potatoes, onion and garlic together.
Beat the eggs with the milk, flour, Gruyère cheese and 2 chopped dill sprigs.
Step 2 : Put the potatoes in a salad bowl and stir in the beaten eggs. Salt and pepper and let stand 15 min.
Put 20 cl of heavy cream in a bowl, add the lemon juice, salt and pepper then mix with a whisk.
Step 3 : Place in the refrigerator. Wash the cucumber and cut it into thin slices.
Oil a waffle iron, heat it and cook the waffles, about 4 min.
Step 4 : Enjoy with smoked salmon sprinkled with dill, cucumber slices and lemon cream.

Norwegian Style Salmon with Dill - 5 Ingredients - ZERO carbs
I have never cared for salmon. Then I tried this recipe from Milk Street Magazine and my opinion on salmon has changed in a serious way. In this recipe, the salmon is dry brined with salt and dill. The salt firms up the flesh while the dill infuses a subtle flavor into the salmon. Additionally, we only cook the salmon until it's just past rare, so the flesh is firm, yet delicate.
