Smoky Salsa | Best Homemade Salsa | Salsa Mexicana / Tomato Salsa Recipe |How to make Salsa
A glass of Margarita, Quesadillas, Nachos & a bowl of Salsa!!! A perfect Mexican treat!
SMOKY SALSA
Makes 1 cup app / serves 2
Ingredients:
Tomatoes 4 big – cut in 4 pcs
Onions 2 medium – cut in 4 pcs
Capsicum 2 medium (deseeded) – cut in 4pcs
Green Chilies 2 – split in half
Garlic 4 cloves – peeled
Olive Oil 1tbsp. plus a tspn extra
Crushed Black Pepper to taste
Lemon Juice 1 – 2 tbsp
Salt to taste
Charcoal (lit) 1pc – to smoke the salsa
Method:
Put all the vegetables in a baking dish
Add Olive Oil
Add Salt
Coat all the veggies well.
Preheat oven to 220 degrees.
Place dish on middle rack for 40 - 45mins.
Each oven works differently. Check oven frequently after 35mins.
Veggies are ready.
Empty veggies in a jar.
Use hand blender / mixer to make a coarse paste. Do not puree the vegetables.
Add lemon juice, crushed black pepper.
Check salt.
Add a dash of Tabasco (optional).
Mix well.
Empty salsa in a bowl.
Put the salsa bowl & lit coal bowl in a bigger bowl.
Drop a tspn of olive oil on the charcoal. Smokes starts to come out.
Immediately cover the big bowl.
Allow the smoke to engulf the whole bowl.
Keep the lid on for a few minutes.
Serve salsa with quesadillas, nachos & sour cream.

Smoky Roasted Salsa
Charred vegetables and canned tomatoes give this salsa a deep roasty flavor. While some homemade salsas come out watery, the techniques used in this recipe solve that problem. To make this special salsa, start with drained whole canned tomatoes. Roast tomatillo, onion, jalapeño, and garlic with one dried guajillo chile to give the salsa a roasty flavor. Remove the seeds from the guajillo; taste the jalapeño and decide if the seeds should be removed from it too. To keep it chunky, chop everything and blend half. Add salt and cilantro to taste. Serve with chips or use it as an ingredient in another dish.

This Spicy and Smoky Salsa comes together in under 5 minutes. Just throw ingredients together and pulse in a food processor and you have an amazing salsa. Its bursting with freshness and has the smokiness and spice from chipotles in adobo sauce
1/2 medium red onion
1 quartered and seeded green bell pepper
1/2 cup fresh cilantro
1-4 tablespoons of Chipotles in Adobo (depends how spicy you like it)
2 tablespoons of lime juice
2 chopped garlic cloves
Salt/pepper
1 28 ounce/793grams diced tomatoes drained
Instructions:
Combine in food processor: onion, cilantro, chipotles, lime juice, garlic, salt, pepper - pulse until coarsely chopped
Add strained tomatoes, pulse 3 times until combined

1 shallot, sliced
1 Tbsp olive oil

Chipotle Aioli - Smoky & Spicy Homemade Chipotle Mayo Recipe With Roasted Garlic
Chipotle aioli, also known as chipotle mayo, is a delicious spicy and smoky dipping sauce that you can easily put together in your own home kitchen in under 5 minutes! This recipe will put any prepackaged sauces to shame as we will be using the freshest and highest quality ingredients. Ingredients:
-1/2 cup light olive oil or other neutral flavored oil
-1 egg yolk
-2 chipotle peppers in adobo sauce
-juice of 1/3 lemon
-2 cloves roasted garlic (raw also works).
-1/8 teaspoon salt
-1/8 teaspoon black pepper
-1/8 teaspoon cumin
-1/8 teaspoon paprika
Directions:
-Juice the 1/3 of a lemon, remove the roasted garlic from it’s skin, and separate the egg yolk from the white. Discard the egg white. Put the lemon juice, egg yolk, chipotle peppers in adobo sauce, roasted garlic, and all of the spices into a food processor.
-Give the mixture a quick 2-3 second blitz in the food processor just to break down the peppers.
-Turn on the food processor and SLOWLY add in the oil. It is very important to add the oil slowly when making aioli, mayo, or any other type of emulsion. This will prevent the fat from separating from the egg yolk.
-After you have added all of the oil, turn the food processor off and unplug it. Use a spatula to stir the aioli around and be sure to remove any chunks from the corners.
-Plug the food processor back in and blitz again for about 20 seconds.
-Serve with your favorite dish and enjoy!
