cut in small
dice bay leaf 1 teaspoon creole seasoning
1 teaspoon basil leaves :
roughly chopped
1 teaspoon cilantro leaves chopped
1 teaspoon salt
1 tablespoon japanese bread crumbs*
2 teaspoons Dijon mustard
1 teaspoon fresh lime juice
1 teaspoon garlic :
chopped
1 teaspoon red bell pepper
1 egg plus 1 egg yolk
1 tablespoon green onion chopped
1 tablespoon clarified butter** :
(up to 2)

*Available at Japanese and some Asian markets.
Blanch snapper with bay leaf about 30 seconds in boiling water to cover. Combine Creole seasoning, basil, cilantro, salt and bread crumbs in large mixing bowl. Add mustard, lime juice, garlic, bell pepper, egg, egg yolk and green onion. Add snapper and mix; form into 16 (2-ounce) cakes and saut

**Ingredients**
2 - 3 whole Fish or even slice fish
3/4 cup white vinegar
1/4 cup granulated sugar
10-12 pimento seeds
1 onion
Bell peppers (red, yellow and green)
3 scotch peppers ( more for more spice)
1 large carrot
2 gloves garlic
2 twigs fresh thyme
Salt, black pepper & fish seasoning

* 6 stem thyme

* 4 scotch bonnet pepper optional
* 2 stem scallion optional
* 2 stem rosemary optional
For Four Batter:
* 2 cups flour
* 1 1/2 tbsp fish seasoning
* 1 tsp salt
Fish Sauce
* 1 cup onions
* 1 cup red bell pepper
* 1 cup green bell pepper
* 1 1/2 cup cherry tomatoes
* 1 cup white wine
* 1 cup water
* 2 rosemary
* 3 thyme
* 1/2 butter
* 1 lime juice whole
* 1 tbsp fish seasoning
Black pepper to taste
Garnish with Parsley and enjoy !

INGREDIENTS
4 (8-ounce) red snapper fillets, about 1/2-inch thick
1 teaspoon salt
1/2 teaspoon pepper
1 cup chopped onions
1 green bell pepper, chopped
1/2 cup (1 stick) butter
1 tablespoon Worcestershire sauce
1 cup freshly grated Parmesan
Preperation
Step 1
Preheat oven to 350 degrees F.
Step 2
Season the fish with the salt and pepper. Spread the onions and pepper in a 13 by 9-inch glass baking dish and place the fish on top. Dot the fish with butter. Sprinkle with a little Worcestershire sauce.
Step 3
Bake for 12 minutes, then baste fish with pan juices. Sprinkle the fish with Parmesan and then place under the broiler for about 2 minutes or until the cheese browns. To serve, spoon the vegetables over the fish
