How To make Snowball Cake
Ingredients

unflavored gelatin
4
tablespoon
cold water
1
cup
boiling water
1
cup
orange juice
3
tablespoon
lemon juice
1
cup
granulated sugar
1
each
large angel food cake
3
cup
whipping cream
4
oz
coconut shredded, or flaked
Directions:
Soften gelatin in cold water. Add boiling water, stir to dissolve completely. Add orange juice, lemon juice and sugar. Stir until sugar is dissolved. Refrigerate until thick as eggwhite.
Whip one pint (2 cups) whipping cream, using chilled bowl and beaters. Fold into thickened gelatin mixture. Coat sides of 3 qt. bowl or 10" tube pan with vegetable shortening and line with waxed paper.
Break angel food cake into 1 inch pieces. Alternate layers with gelatin/whipping cream mixture. Chill overnight or 6 to 8 hours.
Invert onto cake plate and frost with 1/2 pint (1 cup) cream whipped. Cover generously with coconut. Refrigerate until serving time. Refrigerate any leftovers promptly. Serves 12-16.

Ingredients
125g butter/margarine
50ml vegetable/sunflower oil
250ml /1 cup castor sugar /200g
5 ml vanilla essence/extract
3 large eggs/room temperature
500ml /2 cups Selfraising flour/250g
2.5 ml/halve teaspoon baking powder
60ml milk
coating
1 cup apricot jam/250ml
100ml water
desicated coconut
bake @ 190 degrees Celsius/374 degrees Ferenheit
10-15 minutes check at 10 minute mark
if toothpick comes out clean remove from oven
allow to cool completely

Hey folks! Today to kick off my festive food line up I made these wonderful Scottish snowballs! So very popular at this time of year in Scotland :) but all year round really!
Everything I used will be listed below.

Makes 6 snowballs (or 12 halves)
55g (2oz) Butter - I used unsalted
55g (2oz) Caster sugar
1/2 Teaspoon of salt
200g (7oz) Self rising flour
1 Large egg
3-5 Tablespoons of milk
A few teaspoons of jam - I used raspberry
For the glaze-
200g (7oz) icing sugar/powdered sugar or confectioners sugar
4-5 Tablespoons of milk
Desiccated or toasted coconut - amount will vary
