1/2 c Sourdough starter
2 c Flour
2 c Lukewarm water
2 tb Sugar, level
1 t Salt
3 tb Melted shortening or oil
2 ea Eggs
1 t Baking soda
To the 1/2 cup starter and the flour and water. Beat until smooth and let stand in a warm place overnight. To the dough, add sugar, salt, and shortening. Beat in eggs. Dissolve soda in one tablespoon of water and fold in gently, Do not stir after soda has been added.

I'll show you how to make authentic scallion pancakes! My grandparents used to make scallion pancakes (葱油饼 cong you bing) at home and these are one of my mom’s favorite foods….so you know I better get this right! Scallion pancakes are one of the most delicious and versatile flatbreads out there. The way I make them gives you crazy flaky layers that are so thin they are translucent. These pancakes are chewy and have such wonderful flavor that you won’t even need dipping sauce.
But you don’t have to use scallions! You can use chives, caramelized onions, grated cheese, or make them plain. If plain, these are more like the delicious Indian flatbread paratha.
They make a great standalone appetizer, side for asian foods and curries, and are perfect for breakfast with some eggs. This is also a relatively quick recipe because there’s no yeast so the dough doesn’t need any time to rise. You don’t need an oven to cook these and this recipe is vegan!
Recipe (4 large flatbreads)
300g or 2 cups flour (I’m using bread flour but all purpose is totally fine)
½ c hot water
¼ c + 1 tbs room temperature water
1 tsp himalayan pink salt
2 tsp white sugar
5.5 oz bag of scallions, about 12-15 stalks
Oil mixture
⅛ cup toasted sesame oil
⅛ cup vegetable oil (I’m using grapeseed oil but any oil with neutral flavor is ok)
2 tbs flour
¾ tsp himalayan pink salt

How to Make Thick Scallion Pancakes | Recipe & Shaping Technique
This shaping technique works especially well for thicker scallion pancakes. Unlike the coil method, this stretch and fold method makes thick scallion pancakes with defined feather-thin layers (but at a height!) that are evenly distributed, which also result in better cooking.
The hot water isn't a strict requirement in this recipe, but it does improve the pancakes' moisture level and tenderness.
Resting the dough for long hours in oil not only relaxes its gluten, but also further softens the dough without making it stickier to handle. To replace the use of oil, rest the dough flattened, between two slightly damp tea towels, and in a container with a cover.

400g bread flour
83g boiling water
8g salt
166g room temperature water
12g oil of choice
For the filling:
110g finely chopped scallion
60g bread flour or all purpose flour
80g cooking oil of choice
