This super easy Quiche Recipe is so delicious and simple to make. Quiche is one of my favorites because its so versatile. It works just as well for breakfast as it does for dinner! Feel free to be creative and switch it up with your favorite cheeses, vegetables, or meats to make it perfect suit your taste!

Ingredients:
1 pie crust refrigerated
6 large eggs
3/4 cup half and half
1 tsp salt
1/4 tsp black pepper
1 1/2 cups cooked ham chopped
1 cup mozzarella cheese shredded
1 cup cheddar cheese shredded
4 tbsp scallions
Instructions:
1. Preheat oven to 375F and place frozen pie dish into refrigerator to thaw.
2. In a large bowl, mix together eggs, half and half, salt and pepper.
3. Once the pie crust is thawed, pierce the bottom with a fork then sprinkle the ham, scallions, and 1 cup of the mozzarella and cheddar mix into the pie crust. Pour the egg mixture over the top and sprinkle the remaining cup of cheese on top.
4. Bake for 25 minutes covered then cover with aluminum foil for the remaining 10 minutes if the crust starts to brown too much.
5. Once the center is completely set, let cool for 5-10 minutes before slicing and serving.

Hi, Jess in the Rada Kitchen, thanks for joining me! Today we are going to use up some leftover ham for this delicious, cheesy Southwest Ham and Corn Chowder. We’re going to start with our stock first.
So here in my pot I’ve been simmering leftover ham bone for about an hour. I’m going to remove it now. We’re left with super flavorful, salty broth that we’re going to use as the base for our chowder.
For my chowder I’m going to use some buttery Yukon Gold potatoes, about 5 to 7. We’re going to cube those with my Rada Cook’s Knife.
Now we’re going to chop two different peppers, a bright, red sweet pepper and a green pepper. Cut them into some nice, long strips.
We’re also going to chop one small onion. Remove the blossom and the root, take your knife down the middle, and bring it down all the way through. Down and through the middle. Run your knife across. Then we’re going to use garlic. Crush it and chop.
To my simmering stock I’m going to add cubed potatoes first because they take longer to cook. Then I’m going to add about a tablespoon of chicken base. We’ll give this 4 to 5 minutes and add our other veggies.
For this recipe we’re going to use 2 cups of milk total. I’m going to whisk into that a quarter cup of flour. Just get it all incorporated. It’s going to thicken our chowder.
To our bubbling pot we’re going to add our red and green pepper, onion, and garlic. Get that all down in there. To that I’m going to add some smoked paprika and some black pepper. I’m not adding salt because our ham is going to be pretty salty.
The last of our vegetables that will go in is 1 bag of frozen corn that I let come to room temp and 1 can of tomatoes with green chilies. Give it a stir with my non-scratch spoon and let it sit.
We are going to add our milk and flour and just stir constantly as we pour. To this I’m adding 2 cups of shredded sharp cheddar. Then we’ll add 1 more cup of milk and let this go.
So our cheese has incorporated and we’re ready for our leftover ham. You can use as much or as little as you like. Give it a stir.
So now we’re ready to plate. With my Rada Tomato Slicer I’m going got scoop out a bread lid and we’re ready to ladle in our chowder.

Southwest Frittata / Mother’s Day Brunch Idea
Southwestern flavors pair extremely well with eggs, which is why I love this Frittata. Similar to an omelette, frittatas can have endless variations, the difference is they do not have a crust. However, baked in a cast iron skillet you end up with crispy edges without the hassle of pie crust. This southwest frittata is my favorite variety and is gone in a matter of minutes. I use diced ham, pepper jack cheese, onions, and peppers with some flavorful spices and end up with perfection on a plate.
Southwestern Frittata
Ingredients
8 eggs
1/2 cup half and half (or milk)
1 cup pepper jack cheese (other cheese include, cheddar, colby, monterey jack)
1 cup diced ham
2 Tbsp butter
1/4 cup chopped onion
1/4 cup chopped bell pepper
1/2 tsp garlic powder
1/2 tsp paprika
1/2 tsp cumin
pinch of salt and pepper
Instructions
In a large oven safe skillet, sautee onions and peppers in butter. Once they are tender add diced ham. Whisk eggs with milk, spices, salt and pepper. Pour over the ham mixture in the skillet. Top with cheese. Gently move a spatula to cook the eggs slightly. Once you see that the edges are beginning to dry, place in a 400 degree oven for 10 to 12 minutes or until eggs are cooked through. Optional toppings are sliced green onion, sour cream, or salsa.

Southwest Hawaiian Roll Turkey Sliders are bursting with flavor and easy to make for a crowd. Layers of turkey, pepperjack cheese, and green chiles are sandwiched between Hawaiian rolls and drizzled with a butter sauce. And oh that spicy mayo!

SPICY MAYO:
• 1/4 cup mayonnaise
• 1/2 teaspoon paprika
• 1/4 teaspoon cayenne pepper
• 1/2 teaspoon curry powder
• 1/4 teaspoon salt
SANDWICHES:
• 1 (12 count) package Hawaiian Rolls
• 1 pound deli sliced turkey
• 8 ounces shredded pepperjack cheese
• 7 oz can diced green chiles, drained well
BUTTER SAUCE:
• 1/2 cup melted butter
• 1 tablespoon poppy seeds
• 1 tablespoon dijon mustard
• 1 tablespoon onion powder
• 1 teaspoon worcestershire sauce

1️⃣ 00:30 - Make your spicy mayo by whisking together mayo, paprika, cayenne, curry powder, and salt in a small bowl.
2️⃣ 00:52 - Cut slab of rolls in half, separating it into two slabs. Spread mayo over bottom slab.
3️⃣ 01:16 - Sprinkle the bottom slab with half of the pepperjack cheese. Layer on all of the sliced turkey. Spoon green chiles on top. Sprinkle with remaining pepperjack cheese. Top with other slab of rolls. Place in a lightly greased 9x13 pan.
4️⃣ 02:23 - In a small bowl, whisk together melted butter, poppy seeds, dijon mustard, onion powder, and worcetershire sauce.
5️⃣ 02:48 - Drizzle butter mixture over the top of the compiled slab of sandwiches.
6️⃣ 03:08 - Loosely cover the pan with aluminum foil. Bake at 350 degrees for 10 minutes, or until cheese is completely melted. Serve hot.
