How To make Spaghetti Alla Ciociara
1/2 c Olive oil
3/4 c Drained canned plum tomatoes
- Italian-style 2 Red or green bell peppers
- washed, seeded, and cut - into 2-by-1/4-in strips 1/4 lb Black olives, pitted
-(oil-cured or Gaeta) Salt Freshly ground black pepper 1 lb Imported Italian spaghetti
2 tb Grated pecorino romano
HEAT OLIVE OIL in a nonreactive skillet. Add tomatoes, peppers, olives, 1/2 teaspoon salt and several grindings of pepper; mix well. Cover and cook over medium heat 10 minutes, stirring occasionally. Off heat, set sauce aside until pasta is ready. Bring 4 quarts water to a boil with 1 tablespoon salt. Add spaghetti and cook until slightly less than al dente. Return sauce to a simmer. Drain pasta and add it to sauce. Toss over medium heat 30 seconds, then add cheese and toss once more. Serve at once.

Einkaufsliste:
- 2 Dosen geschälte Tomaten a 400g (wenn möglich San Marzano)
- 200g Schinken gekocht oder Parmaschinken oder Bacon
- 100g Erbsen
- 3 Zehen Knoblauch
- 100g Pilze
- 50g Butter
- 100g Sahne
- 1 Hand voll Petersilie
- 500g Pasta die Ihr mögt z.B. Rigatoni
Zubereitung:
- Schinken in Würfel schneiden
- Pilze in Scheiben schneiden
- Petersilie klein hacken
- Knoblauchzehen halbieren
- Nudeln 3min weniger als auf der Verpackung steht kochen
- Butter und Öl in eine Pfanne
- Knoblauch kurz anbraten und wieder heraus
- Schinken und Pilze anbraten
- Tomaten hinzu
- 1 Teelöffel Salz und Zucker hinzu
- 5min kochen
- Erbsen und Sahne hinzu
- Etwas Petersilie hinzu
- Mit Pfeffer abschmecken
- Nudeln in Soße zu Ende kochen
- Parmesan hinzu

Shopping List:
- 2 cans of peeled tomatoes a 400g (if possible San Marzano)
- 200g cooked ham or Parma ham or bacon
- 100g peas
- 3 cloves of garlic
- 100g mushrooms
- 50g butter
- 100g cream
- 1 handful of parsley
- 500g pasta that you like e.g. Rigatoni
Preparation:
- Cut the ham into cubes
- Cut the mushrooms into slices
- Chop the parsley into small pieces
- Halve the garlic cloves
- Cook the pasta 3 minutes less than what it says on the packaging
- Butter and oil in a pan
- Fry the garlic briefly and then take it out again
- Fry the ham and mushrooms
- Add tomatoes
- Add 1 teaspoon of salt and sugar
- Cook for 5min
- Add peas and cream
- Add a little parsley
- Season to taste with pepper
- Finish cooking the pasta in sauce
- Add parmesan cheese

La Pasta alla checca è un piatto di origine romana, ottimo soprattutto durante l'estate, pochi e semplici ingredienti andranno a creare un piatto che sarà difficile da dimenticare. Com'è la pasta alla checca? Buona, buonissima! Il piatto perfetto quando salgono le temperature perché si realizza in pochissimo tempo ed è molto saporito. Il sughetto per il condimento è con i pelati, ai quali si aggiunge mozzarella, parmigiano e origano. Il tutto è ovviamente profumatissimo e goloso! Sicuramente meno conosciuta rispetto alla carbonara nasce nei quartieri popolari di Roma e da lì sì è diffusa un po' ovunque, e se non l'avete mai provata merita assolutamente il vostro assaggio.
► Ingredienti per preparare la pasta alla checca:
Penne rigate 400 g
Pomodori pelati 600 g
Mozzarella 250 g
Parmigiano 60 g
Origano secco qb
Olio EVO 4 cucchiai

Spaghetti alla Puttanesca
Zutaten für 2 Portionen, Zubereitungszeit ca. 20 Minuten
Salz
200 g Spaghetti
2 Knoblauchzehen
4 Sardellen
2 EL Kapern
2 EL schwarze Oliven
5 Stiele glatte Petersilie
4 EL Olivenöl
400 g stückige Tomaten aus der Dose
(getr. Chilischoten)
1 Prise Zucker
Nudelwasser, um die Sauce zu binden
Parmesan
Zuerst reichlich Salzsasser für die Spaghetti zum kochen bringen. Dann die Nudeln darin al dente kochen. In der Zwischenzeit den Knoblauch in feine Scheiben schneiden, die Sardellen grob und die Kapern fein hacken. Die Oliven mit der flachen Messerklinge leicht zerdrücken. Petersilie ebenso fein hacken.
Nun Olivenöl in einer großen Pfanne erhitzen und zunächst die Sardellen darin schmelzen lassen. Danach den Knoblauch dazu geben. Nun die Kapern, Oliven und die Tomaten hinzufügen und alles leicht einköcheln lassen. Mit Salz, Pfeffer, Oregano und Peperoncino würzen, dann leicht einköcheln lassen.
Die Spaghetti mit zusammen mit etwas Nudelwasser in die Soßenpfanne geben und gut schwenken. Die Spaghetti zum Schluss mit Petersilie bestreuen und sofort mit etwas Parmesan bestreut servieren.
