How To make Spaghetti Squash and Chicken Skillet Casserole
3 tb Butter or Margarine
1 c Sliced fresh mushrooms
1/3 c Chopped leeks
1/4 c Chopped celery
3 tb Chopped sweet red pepper
3 tb Finely chopped fresh parsley
2 c Cooked spaghetti squash
4 Boneless chicken breasts,
-cooked and cut into thin -strips 1/4 c Crushed seasoned croutons
1/4 ts Salt
1/4 ts Seasoned pepper
1/8 ts Garlic powder
Pinch of dried summer savory 1/2 c Sour cream
2 oz Shredded swiss cheese
-(1/2 cup) Melt butter in a large skillet over medium heat. Add mushrooms and next 4 ingredients. Cook, stirring constantly for 5 mins or until tender. Add spaghetti squash and next 6 ingredients, cook 4 mins, stirring constantly. Stir in sour cream, cook, stirring constantly, just until thoroughly heated. Remove from heat. Sprinkle with cheese. Cover and let stand for 1 minute. To bake, prepare mixture according to directions and spoon into a lightly greased 1.5 quart casserole dish. Cover and bake at 350 for 20-25 mins.

Hey Loves! When it comes to Southern Sides this recipe is in my Top 5. It’s not only easy to make but it takes a few ingredients and it’s absolutely delicious. I can’t wait to hear what you think and share with someone who would love this.
Serves 6
1 large Sweet Onion Sliced
2 medium Squash
4 tbsp of Vegan Butter
1 tbsp of Red House Seasoning
1 tsp of vegan Chicken Bouillon
Melt vegan butter over medium- High heat. Add onions and Squash. Season and cover for 7- 10 mins. Depending on the softness you like. Serve over Rice and enjoy

1 cup chickpeas
1/2 cup green bell pepper chopped
1/2 cup red bell pepper chopped
1/4 cup red onion, diced
2 Tbsp kalamata olives sliced
2 Tbsp fresh parsley chopped
1 garlic clove minced
1 tsp oil
1/2 lemon juiced
1/4 tsp salt
1 spaghetti squash
pesto of choice (see low-fat vegan pesto link below!)
Preheat oven to 400°F (200°C).
Poke holes in squash with a fork and microwave 5 minutes to soften up the squash.
Score all the way around the squash lengthwise with a knife, marking the line of the cut. Cut squash in half lengthwise, scrape out seeds and guts.
Brush with oil, season with salt & pepper. Place cut-side down on a baking sheet lined with parchment and bake for about 40 minutes, until tender enough to scrape strands. Should be easily pierced with a fork. (Not TOO cooked through since you’ll cook more later.) Time will vary depending on the size of squash.
You can store the cooked squash in the fridge for a few days before making your boat, or prep to eat immediately.
When cool enough and ready to eat, scrape/shred the squash.
In a large mixing bowl, mix all salad ingredients together (besides pesto). Season to taste.
Place cooked spaghetti squash boats face up on a plate or cutting board. Spoon 1 Tbsp (to taste) of pesto onto each boat, followed by Mediterranean salad, then mix to combine with squash shreds.
Garnish with parsley and enjoy cold!
Yields 2 spaghetti squash boats.

Keto Friendly Cheesy Spaghetti Squash Skillet Recipe
Shop at Cabela's I do love cooking in my cast iron so this cheesy spaghetti squash skillet is something I needed to share. Being Keto friendly this recipe will go hand in hand with the spaghetti squash recipe I posted last week. Now the three different cheeses I put in this really did add to the flavor. The keto friendly marinara sauce works very well just watch your sugars and try to keep them down. So please give my keto friendly cheesy spaghetti squash skillet recipe a try and let me know how it turns out. 2lbs Ground Beef (i use 80/20)
2 1/2-3cups Marinara Sauce (recipe below)
1 medium Spaghetti Squash
4oz Parmesan Cheese
2cups Colby jack Cheese
2cups Mozzarella Cheese
1tsp Salt
1tsp Black Pepper
1tsp Garlic
1tsp Italian seasonings
1 Brown hamburger meat with seasonings.
2 Add prepared spaghetti squash.
3 Add marinara sauce.
4 Add cheese and combine well.
5 Add hot mixture to an oiled cast iron skillet.
6. Bake in a 350° oven for 20 minutes or until heated through.
Sauce Recipe
2-28oz cans Diced tomatoes
1tsp Black Pepper
1tbl Red chili flakes (add less if you do not want the heat)
1tbl Garlic powder
1tbl Italian seasoning (thyme,oregano,basil)
1 1/2tsp Salt
Blend ingredients together and adjust seasonings as needed.
