How To make Spaghetti with Tofu
2 1/2 c Tofu
crumbled
8 c :
water; boiling
2 tb Olive oil
1 lg Onion chopped
5 Garlic cloves :
minced
1 t Thyme
1 t Basil
1/2 ts Oregano
1/4 ts Celery seed
1/8 ts Cloves, ground
2 c Mushrooms sliced
4 tb Tamari
8 oz Whole wheat spaghetti
1/4 c Parsley :
minced
1/2 c Dry red wine
Drop the tofu into a large kettle of boiling water. Bring the water back to a boil and cook for 1 minute. Line a colander with a clean dishtowel and drain the tofu in the colander. Rinse the tofu under cold water to cool it off for easier handling. Bring the edges of the towel together, twist the towel, and press the excess water out of the tofu. Continue pressing the tofu until it has a firm ground-beef-like texture, then set it aside. Heat the oil in a large skillet. Add the onion, garlic, thyme, basil, oregano, celery seed and cloves. Saute over low heat until the onion is almost tender. Add the mushrooms and cook until they are done. Add the pressed tofu to the sauteed mixture. Stir in the tamari and mix well. Set the skillet aside while you prepare the spaghetti. Boil a large kettle of water and cook the spaghetti until it is tender. Drain the cooked spaghetti and add it to the skillet with the tofu mixture. Add the wine and the parsley; mix well. Serve with a big green salad. From the files of DEEANNE

Laisser la sauce épaissir, et vous pourriez la mettre dans du pain pour un sandwich style ''sloppy joe''
Ingrédients:
-1 bloc de tofu ferme
-1 cuillère à table d'huile d'olive
-1 oignon coupé en dés
-1 gousse d'ail écrasée (j'aime bien aussi râper)
-2 carottes coupées en dés
-1 cuillère à table de poudre d'ail
-1 cuillère à table de poudre d'oignon ou d'oignon séché
-1 cuillère à table de persil séché
-1 cuillère à table de basilic séché
-1 cuillère à table de sel de mer
-1/2 cuillière à table de paprika
-1 tasse de coulis de tomates ou 1 petite conserve de pâte de tomates
-3 tasses d'eau
Directives
1. Râper le bloc de tofu
2. Dans une casserole moyenne, mettre un peu d’huile et faire revenir l’oignon et l’ail environ 2 minutes en mélangeant quelques fois.
3. Ajouter par la suite les carottes et faire revenir 2 minutes additionnelles
4. Ajouter les assaisonnements et mélanger
5. Ajouter le coulis de tomates, mélanger
6. Ajouter 3 tasses d’eau
7. Laisser mijoter environ 10 minutes à feu moyen
8. Rectifier l’assaisonnement au besoin et ajouter de l’eau/bouillon de légumes au besoin
9. Servir sur vos pates préférées

An easy tofu spaghetti sauce that will become your go to quick recipe.

Ingredients:
-1 firm tofu block
-1 tablespoon of olive oil
-1 diced onion
-1 crushed garlic clove (I also like to grate)
-2 carrots cut into cubes
-1 tablespoon of garlic powder
-1 tablespoon of onion powder or dried onion
-1 tablespoon dried parsley
-1 tablespoon dried basil
-1 tablespoon of sea salt
-1/2 tablespoons of paprika
-1 cup tomato coulis or 1 small can of tomato paste
-3 cups of water
Instructions
1. Grate the tofu block
2. In a medium saucepan, add a little oil and fry the onion and garlic for about 2 minutes, stirring a few times.
3. Add the carrots and cook for another 2 minutes
4. Add the seasonings and mix
5. Add the tomato coulis, mix
6. Add 3 cups of water
7. Simmer about 10 minutes over medium heat
8. Rectify seasoning as needed and add water / vegetable broth as needed
9. Serve on your favorite pasta

This Creamy Pasta Sauce has my cajun blend for a smoky delicious flavor profile. The sauce is creamy, fluffy and is made with tofu. I have started to make more Tofu sauces(Lemon Asparagus Pasta) as they are so much quicker than cashew sauces. They also amp up the protein in the meal!
The peppers and onions add flavor. I top the pasta with a smoky breaded tofu. You can use other toppings such as roasted cauliflower or veggies, or chickpeas or vegan meat subs. Or just serve as is! See Recipe notes for tofu-free option.

⭐️ Tofu pasta is a delicious vegan recipe with tasty crumbled tofu and a rich tomato sauce. This is essentially a tofu bolognese that you can put together for a quick, easy, and nutritious meal in less than 30 minutes.
⭐️ Ingredients
14 - 16 ounces tofu firm or extra firm
2 tablespoons olive oil
1 onion
1 carrot
1 stalk celery
28 ounces crushed tomatoes or tomato puree, or passata
2 tablespoons soy sauce (1 for the sauce, 1 for baked tofu)
1 teaspoon garlic powder (optional)
1 teaspoon salt (½ for the sauce, ½ for baked tofu)
4 twists black pepper
1 pound pasta spaghetti, linguine, rigatoni, penne, or other
