Hey Guys, this Spam Recipe is quick and easy taking no more than 15 minutes. The longest part is waiting for the noodles to boil. With only a few ingredients you can make a decent meal. The spam acts as cheap and affordable Guanciale. The salty and fatty spam mixed with the creamy and cheesy sauce is a great combo. Spice up your spam recipes and give this Spam Carbonara a shot.
Ingredients:
- 1/2 a Can of SPAM (25% Less Sodium)
- 8 oz or half a spaghetti noodle box
- 2 Egg yolks and 1 Egg
- Half a cup Parmesan or Pecorino Romano
- 1 Tsp of Black pepper
- Half cup of Pasta water

Fresh Pasta A La Carbonara with Spam
An authentic Carbonara consists of simply 5 ingredients; cured guanciale or pancetta, pasta, eggs, cheese (such as Pecorino, Parmigiano or Romano), and black pepper. Sometimes, salt is added if needed. IT DOES NOT CONTAIN A DROP OF CREAM. Otherwise, it is called a pasta with cream and cheese.
In this video, I have made fresh pasta a la Carbonara and use spam instead of the cured meat. It turns out pretty good, so I would like to share it with you all. Have fun and may God continue to guide us all. -Ryan Bergunio
Recipe, yield 4 servings
Fresh Pasta (about 10-12 oz of dried pasta)
1 cup. all purpose flour
3 each. eggyolks OR 2 eggyolks & 1 whole egg
2-3 Tbsp. water
6 oz. spam
3 ea. eggyolks
2-3 oz. finely grated pecorino cheese (romano or parmigiano is fine)
1/2 tsp. black pepper
a touch of salt to taste if necessary
garnish:
shaved pecorino & black pepper

【ingredients】
100g pasta
120g carbonara sauce
15g SPAM
20g mushroom
1 egg yolk
parmesan cheese
5 Star gourmet truffle sauce 1/2 bin
【how to make SPAM carbonara】
a pro teaches how to cook using SPAM canned food
with pasta to make a delicious dish!
take out the 15g of SPAM and cut it into sticks
cut off the root of shimeji mushrooms and break it up
put the heat on medium, and pour in vegetable oil
After putting in the SPAM, put the heat on high
cook it until it changes color
when you can smell the SPAM, but the shimeji mushrooms in
cook it until it's like crunchy bacon
put the heat on low, and pour in 120g of carbonara sauce
to boil pasta, boil water on high heat
put 1% of the amount of water of salt and put 100g of pasta in
hold the pasta in a bundle then let it go so it would spread out evenly
cook the pasta for 3min (or what is stated on the package)
turn the heat off the pasta pot, and turn the heat on for the sauce
put the pasta into the sauce, and mix
heat 5 star gourmet truffle sauce, serve the pasta on a plate
sprinkle parmesan cheese on the pasta
pour truffle sauce over the pasta
(it's nice without the sauce, but it better with it)

(makes 2 portions)
▪225g/8oz very thick cut bacon, diced into small batons
▪Olive oil
▪340g/12oz spaghetti
▪50g or 1/2c aged parmesan, feather shredded
▪50g or 1/2c pecorino romano, feather shredded
▪1 egg + 3 egg yolks
▪2g or 1teas ground black pepper
▪Reserved pasta water
To cook the pasta, bring water to a boil. I’m using a 12” saute for this for faster boiling. Salt water then add spaghetti. Simmer on high for about 8min. When done, noodles should have just a bit of crunch in the middle.
To cook the bacon and prepare the sauce, preheat a large heavy-bottomed pot over low. Add a bit of olive oil to the pot followed by bacon. Allow to render and brown for around 8min, stirring occasionally.
In a separate bowl, mix together cheeses and eggs.
When bacon is rendered and golden, remove it from the pot, and reduce heat to medium low, adding any bacon grease that comes with it back into the pot followed by black pepper. Fry black pepper and stir with wooden spoon, scraping up bacon fond.
At this point, ladle in about 300mL/1.5c pasta water into bacon pot and continue to deglaze up bacon fond. Transfer spaghetti into bacon pot (remembering to save additional pasta water to adjust sauce later).
Stir 100mL/.5c of pasta water together with the egg and cheese mixture.
Add 100mL/.5c of additional pasta water into the spaghetti pot and stir. Simmer pasta in shallow water for about 90 seconds. Taste pasta. It should be al dente. Remove from heat and stir in rendered bacon. Add egg/cheese mixture and stir very well until cheese melts. If needed, return pot to low heat, stirring constantly until cheese is melted and sauce is velvety and creamy. Don’t take it too far or sauce will become gloppy.
Top with a pinch of aged parm and black pepper and serve.
