Upgrade that store-bought ravioli to something you'd get at a restaurant with this rich and creamy tomato ravioli sauce with spinach and parmesan. You can get it on the table in 15 minutes, and best of all, you can make it all in one pan.
This is perfect comfort food for busy weeknights!

Ingredients: ▢1 tbsp olive oil ▢1 onion - finely diced ▢2 cloves garlic - peeled and minced ▢500 g (1.1lb) fresh ravioli - (use your favourite flavour) ▢1 red bell pepper - sliced ▢½ tsp Italian herbs ▢½ tsp chilli flakes (red pepper flakes) ▢½ tsp black pepper ▢a pinch salt ▢1 tbsp tomato puree (paste if you're in the US) ▢90 ml (⅓ cup) white wine ▢100 g (3 ½ oz) roasted cherry tomato halves - (you can buy these from the deli counter) ▢120 ml (½ cup) chicken stock ▢90 ml (⅓ cup) double (heavy) cream ▢90 g (3 packed cups) baby spinach ▢50 g (½ cup) parmesan - grated ▢1 tbsp fresh parsley - finely chopped
Instructions: 1. Add the 1 tbsp of olive oil to a large frying pan (or skillet) and heat over a medium heat, then add in the finely diced onion and cook for 4-5 minutes until the onion starts to soften.
2. Add in the minced garlic and cook for another 30 seconds stirring continuously.
3. Now add in the ravioli and the sliced red bell pepper and cook for another minute, stirring a few times.
4. Add in the Italian herbs, chilli flakes, black pepper and a pinch of salt, give it a stir then add in the tomato puree and wine, stir again, and cook for another minute to reduce the wine down slightly.
5. Add in the roasted tomatoes, chicken stock and cream. Stir everything together and bring up to a simmer. Allow to simmer for 5-6 minutes, until the centre of the ravioli is piping hot (you can open one up to check this).
6. Add in the spinach and parmesan and cook for a minute to allow the cheese to melt and the spinach to wilt.
22 ounces frozen ravioli 1 ½ cups mozzarella cheese 3/4 cup sour cream 16 ounce (one can) artichoke hearts 5 ounces spinach, cooked and chopped ½ cup parmesan cheese 1 cup milk 1 tablespoon garlic salt (optional)
Instructions
1. In a large bowl, mix sour cream, parmesan cheese, mozzarella cheese, sour cream, artichoke hearts, spinach, milk, and garlic salt (if you want it). 2. Pour a third of the spinach artichoke mixture in a large glass baking tray and spread it evenly over the bottom. 3. Line the tray with frozen ravioli, spread more mixture over top the ravioli, then spread the rest of the ravioli in the tray and cover that with remaining mixture. 4. Bake in the oven at 375ºF/190ºC for 30-35 minutes or until the bake has browned. 5. Enjoy!

Chicken Alfredo Ravioli Bake
Serves: 6
Ingredients 1 lb. Gerber’s CARE Certified chicken breasts 2 Tbsp. olive oil 18 oz. Heinen’s four cheese ravioli 24 oz. Heinen’s Alfredo sauce 1 ¼ cups shredded mozzarella cheese ½ cup grated parmesan cheese Salt and pepper, to taste
Instructions 1. Preheat the oven to 375°F. 2. Season the chicken breasts on both sides with salt and pepper. 3. Add the oil to a frying pan over medium-high heat and cook the chicken breasts for 5-6 minutes per side, or until well browned and cooked through. 4. Remove the chicken breasts and cut them into one-inch pieces. Set aside. 5. Add the ravioli to a pot of boiling water and cook for 3 minutes. Drain and transfer to a 13x9 casserole dish. 6. Pour the Alfredo sauce over the ravioli and top with the cooked chicken and 1 cup of mozzarella cheese. Gently mix until combined using a rubber spatula. 7. Sprinkle the remaining 1/4 cup of mozzarella and parmesan cheese over top. 8. Bake in the oven at 375°F for 25 minutes, or until lightly browned on top. 9. Serve with optional garnishes of chopped fresh parsley or fresh basil.
Ravioli Lasagna
An easy lasagna that can be made with raviolis.
Ingredients: Frozen Raviolis Marinara - Here's a link to my Marinara Sauce recipe: Grated mozzarella
In a 9x13 inch pan place some sauce on the bottom. Put down a layer of frozen raviolis( no need to defrost). Add more sauce on top of the raviolis, add some grated mozzarella. Then add another layer of raviolis. Repeat with more sauce and mozzarella and then cover with foil. Cook at 375 covered for about 40 minutes. Then uncover and cook for an additional 15 minutes until nice a gold on top. Late stand for 20 minutes when you take it out of the oven.
