Cold, spicy, chewy noodles (Bibim-naengmyeon: 비빔냉면)
In this video I'll show you how to make a spicy kind of Korean icy cold noodles called bibim-naengmyeon. It's ice cold and made with a slightly sweet, vinegary, spicy sauce, and cucmber and pear. When you eat it, first thing you need to do is mix it up in the bowl, which is why it’s called bibim, which means “mixed up” in Korean (like bibimbap - mixed rice).

Sichuan Cold Noodles, Street Food style Liang Mian Recipe (川味凉面)
A great summer dish, this Sichuan street snack can be found throughout China. It's got a nice sweet, sour, and savory sauce with an optional spicy kick.
If you're familiar with this dish, we add spices to the soy sauce here - not everyone does this, often you'll just see sweetened soy sauce. The whole essence of this dish is that there's tons of variations, and this is the one we prefer :)

Korean spicy cold noodles

Cold noodles season ain't over yet…hehe ???? the spicy cold noodles aka. bibimnaengmyeon is tangy, sweet, and fruity! The perfect dish to fight the heat ????
Recipe:
1/2 apple
1/2 Korean pear (pineapple is a good substitute, best to use canned pineapple, about 50g)
1 scallion
1/2 onion
1 tbsp vinegar
1 tbsp sesame oil
2 tbsp gochugaru 1
1/2 tbsp gochujang
1 tbsp sugar
1 tbsp Korean plum syrup (or honey)
1 tbsp soy sauce
1/2 tbsp crushed garlic
2 tbsp sesame seeds
1) Start by dicing the apple, pear, and onion and blend them in a mixer until smooth.
2) Transfer the mixture to a bowl. Add gochugaru, gochujang, sugar, soy sauce, sesame oil, vinegar, onion, crushed garlic, sesame seeds, plum syrup, and chopped scallion, and mix well. Make a quick taste check and add more ingredients if you like it spicier or sweeter :)
3) Pour the sauce over the noodles and garnish with a boiled egg, and sliced cucumber. Enjoy ????
The BEST 5 Minute Korean Cold Noodles (Bibim-guksu) | How to Cook at Home
If you’ve got 5 minutes, you’ve got yourself a big bowl of BIBIM-GUKSU (or bibim naengmyeon)! These Korean cold, spicy, chewy noodles are deliciously light and refreshing, yet bold and punchy. The spiciness, sweetness, and tanginess makes the perfect mouthful ????
Ingredients (serves 2):
☐ 2 servings of somyeon (thin wheat flour noodles)
☐ 2 tbsp gochujang (Korean red chilli paste)
☐ 2 tbsp gochugaru (Korean chilli flakes)
☐ 2 tbsp rice wine vinegar
☐ 2 tbsp sesame oil
☐ 1 tbsp soy sauce
☐ 2 garlic cloves (finely minced)
☐ 2 tsp sugar
☐ Cucumber (julienne)
☐ Toasted sesame seeds
☐ Soft boiled egg (optional)

Dave Chang is back in the kitchen cooking Sweet & Spicy Cold Noodles, using our new Momofuku Sweet & Spicy Noodles as the base for his on the fly recipe. This dish is inspired by Bibim Naengmyeon or Bibim Guksu, two cold noodle dishes that are central to Korean culture. He loves eating these noodles cold, showing how versatile our pantry products are through creative recipes like this one. The finished dish is not traditional, but it’s absolutely delicious. He brought this recipe to life with Momofuku Sweet & Spicy Noodles, Momofuku Toasted Sesame Oil, Momofuku Soy Sauce, and Momofuku Chili Crunch.
