Dan Dan Noodles | Kenji's Cooking Show
There are a million versions of Dan Dan Noodles, the one dish you should eat if you want to understand the ma-la (numbing-hot) flavor profile. I have four or five recipes for them myself, like this one:

I do not follow any of these recipes - or any recipe at all - when I'm making them at home.
In the short time I spent in Chengdu, I found that dan dan noodles are to Sichuan what the hamburger is to the U.S.: They're ubiquitous, there are certain expectations, but there are no hard and fast rules other than the main ingredients (noodles, chili oil, Sichuan peppercorns, and vinegar) and the manner in which they're served (fast and cheap). Beyond that they can be soupy or not, they may or may not have sesame or peanuts, they might have greens, or not. Sometimes they have raw garlic or even a sprinkle of sugar on top, etc etc.
In other words, get the chili oil and Sichuan peppercorn bit right, and the rest is really up to you.

Today we are making Dan Dan Noodles. It is a Sichuan classic and I think it is the most delicious and flavorful noodle dish. I will be showing you how to make it from scratch and how to make it authentic as well. So, let’s get started.

How to Make Chinese Noodles by Hand -

INGREDIENTS FOR THE HOMEMADE EGG NOODLES (Enough to make 6 portions)
450g (1lb) of high gluten flour (bread flour, dumpling flour, or noodle flour)
30-60 grams (1-2oz) of high gluten flour to adjust the water and flour ratio
80-110g (3-4oz) of water
1 tsp of salt
2 whole eggs
1/2 cup of cornstarch to prevent stickiness
INGREDIENTS FOR THE GROUND PORK SAO ZI (臊子)
400g (14 oz) of ground pork (preferably 50% fat)
1.5 tsp of oil
2 cloves of garlic
black pepper to taste
2.5 tbsp of Chinese cooking wine (Amazon Link:

INGREDIENTS FOR THE SICHUAN HOT CHILI OIL (油泼辣子)
2.5 cup of cooking oil (seasoned with scallion, ginger, garlic, cinnamon, star anise, bay leaves)

INGREDIENTS FOR THE SESAME PASTE (芝麻酱)

INGREDIENTS TO ASSEMBLE 1 PORTION OF DAN DAN DAN NOODLES
1.5 tsp of sesame paste
2-4 tbsp of Sichuan chili oil
1/2 tsp of Sichuan peppercorn powder (Amazon Link:

1/4 of sugar
1 clove of garlic
4-5 tbsp of stock or water
1 portion of noodles
Green vegetables
1 tbsp of Ya Cai (Amazon Link:
3 tbsp of Sao Zi
Toasted and crushed peanut
Scallion
Dan Dan Noodles| Street Food Style Spicy Sichuan Noodles| Amazing flavor and very easy to make.
Dan Dan or Dan Dan Mian noodles- not for the faint of heart. Its fiery, spicy, but sooo good!! It started out as a street food in Sichuan. Street hawkers used to carry the noodles on a bamboo pole (Dan) from which the dish got its name. There were two baskets attached to the pole, one holding the ingredients, the other holding the cookware. It’s a very easy dish to make which has a complex flavor. It will shock your tastebuds.
Ingredients-
½ lb ground chicken
1 portion wheat noodle/any noodle/spaghetti
3 tsp pickled mustard green. Ideally it’s a must for this dish.
1 tsp sesame oil
Handful Yu Choy or your fav leafy greens
¼ cup hot chicken or veggie stock
For sauce
1 tsp Sichuan peppercorn, grounded using mortar n pestle/ blender (use black peppercorn if not available)
2 tsp tahini
2 tsp soy sauce
1 tsp dark soy sauce
1 tsp black rice vinegar (optional)
3 tsp chilli oil
1 tsp brown sugar
¼ tsp minced garlic
To marinate ground chicken
1 tsp minced garlic
½ tsp grated ginger
1 tsp soy sauce
¼ tsp salt n Sichuan pepper mix (salt n pepper will do too)
Step 1 – Toasting and grinding the Sichuan peppercorn
Toast 1 tsp peppercorn on high heat for min. Transfer to a mortar n pestle and grind it a powder. You can use a electric grinder too.
Step 2 – Making the sauce
Add 2 tsp tahini, 2 tsp soy sauce, 1 tsp dark soy sauce, 1 tsp black rice vinegar (optional), 3 tsp chilli oil , 1 tsp brown sugar, ¼ tsp minced garlic in a bowl and mix well. I used my favorite chilli oil which has Sichuan peppercorn in it and chilli flakes. It is store bought. There are Chinese sesame paste available in stores. I had middle eastern Tahini at home so just used it instead.
Step 3 – Marinating the ground chicken
Marinate the ground chicken with 1 tsp minced garlic, ½ tsp grated ginger, 1 tsp soy sauce, ¼ tsp salt and Sichuan pepper mix (salt n pepper will do too). I had made this salt and Sichuan pepper mix for my Salt n Pepper Shrimp previously. You just use salt and pepper too as I mentioned. There’s no need to marinate the ground chicken for long.
Step 4 – Cooking the ground chicken
Heat 1 tsp sesame oil on hi heat. We are looking for a crispy texture on the ground chicken. So cook it till its very dry and you get the texture. When its done, add 3 tbsp pickled mustard green and cook for 30 secs. It’s a must for this dish for its distinct flavor. However if you don’t have it just use some leafy greens and add 1 tsp vinegar. Leave everything in the pan
Step 5 – Preparing the noodles
I used wheat noodles. You can use type of noodles or spaghetti. There are also special Dan Dan noodles available in the market. Follow the directions on the package to boil your noodles. Right before its done add some leafy greens. I used Yu Choy. There’s no need to strain anything. We will transfer the noodles and the greens directly from the pot.
Step 6 – Final step
In a serving bowl, add the sauce mix. Then add the noodles right from the pot. Add ¼ cup of hot chicken or veggie stock. It will add more flavor and keep the noodles loose. Add the greens, then add the cooked ground chicken. Now its all about mixing everything in to get the flavors out. I was out of sesame seeds and scallions. You can use it to garnish. It tasted fantastic anyway, soo spicy but soo good !!!

EASY vegetarian Dan Dan Noodles (mian) Recipe!
LEARN HOW TO MAKE AN EASY VEGAN DAN DAN MIAN RECIPE!
LAY HO MA!! Spicy food is absolutely delicious. I love it! This is a Sichuan (or Szechuan) style spicy noodles recipe that is incredibly nutty and packed with flavour. Join me in this episode and learn how to make a vegan Dan Dan noodles recipe with absolute confidence! Let's begin.
Ingredients:
4 broccolini
1 large piece garlic
small piece ginger
2 sticks green onion
1/2 cup canned chickpeas
small bunch canned bamboo
2 tbsp white sesame paste (or tahini)
3 tbsp soy sauce
3 tbsp chili oil (
1 portion Chinese wheat noodles or udon
1/2 tbsp Sichuan peppercorn
drizzle of grapeseed oil
1 tsp liquid smoke
2-3 tbsp crushed roasted peanuts
1 tbsp white sesame seeds
Directions:
1. Chop the broccolini into bit sized pieces. Finely chop the garlic and ginger. Chop the green onion separating the white part from the green
2. Roughly mash the chickpeas in a small bowl with a fork. Slice the canned bamboo
3. Bring a small pot of water to boil for the noodles
4. Make the sauce by combining the sesame paste, 2 tbsp soy sauce, chili oil, and the green part of the green onions
5. Boil the noodles to package instructions
6. Heat up a sauté pan on medium heat and toast the peppercorns for 45sec
7. Crush the peppercorns in a pestle and mortar. Place the pan back on the heat and drizzle some grapeseed oil
8. Add the garlic, ginger, and green onion
9. Add the broccolini and sauté for 3-4min
10. Add the chickpeas, bamboo, and liquid smoke. Sauté for 4min
11. Add the crushed peppercorns and 1 tbsp soy sauce. Give it a good stir, then turn off the heat. When the noodles are cooked, strain out the water
12. Pour the prepped sauce into the serving bowl
13. Add the noodles into the sauce and top with the sautéed veggies
14. Top with the crushed peanuts and sesame seeds

THINGS YOU’LL NEED:
1 tablespoon vegetable oil peanut oil is great
12 ounces ground pork
Salt and pepper to taste
3 garlic cloves chopped
2 tablespoons fresh chopped ginger peeled
1/3 cup Sui Mi Ya Cai Sichuan Preserved Mustard Greens - use Kimchi as a substitute, or omit if desired
2/3 cup chicken broth
3 tablespoons chili oil
2 tablespoons dark soy sauce
1 tablespoon rice vinegar
1 teaspoon sesame oil
2 tablespoons sesame paste tahini
1 teaspoon 5 spice powder or more to taste
1 teaspoon Sichuan peppercorns coarsely ground
8 ounces Dan Dan noodles boiled per packaging instructions - or use wheat noodles or egg noodles
For Serving: Sesame seeds, spicy red pepper flakes, chopped green onion, chopped roasted peanuts

Mala Noodles - Spicy Sichuan Mala Xiao Mian (重庆麻辣小面)
Chongqing Mala Xiaomian is a classic spicy noodle dish - a street food staple in Sichuan.
It's got a lot of similarities to Dan Dan noodles, but the flavor's predominantly spicy and numbing. After a good mala xiaomian, your forehead should be sweating and your mouth tingling.
