How To make Spicy Turkey Roast
1 Frozen whole boneless turkey
(4 pounds,thawed as pkg Directs 8 lg Cloves garlic
3 tb Rosemary
1 ts Paprika
1 tb Coarsely ground black pepper
1 ts Coarse Kosher style salt
2 tb Olive oil
Rosemary sprigs, for garnish Red pepper, for garnish 1) Remove mesh from the turkey. Lay turkey out as flat as possible
on a cutting board, placing the skin side down. 2) Combine the garlic, rosemary, pepper and salt in the work bowl of the food processor withthe steel blade in place, or in the blender. Turn motor on. Add the oil, processing until coarsely chopped. 3) Spread half the garlic mixture over the inside of the turkey. Reroll the turkey. 4) Tie firmly with string every two inches to return the turkey to its original log shape. Spread evenly with the remaining garlic mixture. 5) Place on rack in roasting pan. 6) Roast at 350 degrees for 1-1/2 to 2 hours until a meat thermometer inserted in the center registers 170 degrees. A long log shape takes less time than a more compact roast. 7) Remove from oven. Let stand 20 minutes before removing strings. 8) Cut thin slices to serve. Garnish with rosemary and red pepper. Scrape up cooking juices from bottom of pan. Spoon over meat, or thicken with flour and add chicken broth for a gravy, if desired.

This is a no fuss turkey recipe and yet it’s probably the best turkey you will ever taste.

There’s no basting required as basting doesn’t do much anyway, except extends cooking time by opening the oven door every 15 minutes. Once the skin has sealed in the juices, the basting is pointless, as the juices simply bead off the skin, just like water on a duck’s back, or should I say turkey? However, preventing the breast from over cooking and drying will make your turkey moist and incredible. So why do we baste? To keep the breast meat cooler which helps prevent overcooking. This is also the science behind the cheesecloth, it keeps the breast meat cooler, stops it from over browning and works even better with the slow ‘less drying’ cooking process. There’s no stuffing in this recipe as that lengthens the cooking time. Best to do your stuffing separately, see my stuffing recipes for ideas. And the gravy? It’s to die for, I kid you not! It’s made with vegetables and enhanced with a dry sherry. As an option, I’ve followed my French tradition by using chestnuts. You can buy fresh chestnuts, sealed bags or even in cans ready to go, so no fussing about here. Ok so I’m making myself hungry just writing this, now off to the kitchen and let’s get this turkey started! It’s so simple! Enjoy my slow cooked cheesecloth turkey with chestnut gravy. ✅if you can get your hands on a oven safe thermometer please do this helps you to make sure not to over cook the turkey!
✅for each pound you roast for 13 minutes (_ x 13=_) divide the total by 60 that’s how many hours!
✅ how to Thaw a turkey properly: Thaw turkey breast side up, in an unopened wrapper on a tray in the fridge
Allow at least one day of thawing for every 4 lbs of turkey.
Keep turkey in original wrapper and place on tray.
Use turkey within four days after thawing.
✅fry brine turkey for at least 24 hours!
Ingredients:
1 whole 14-20 lb turkey
Coarse salt- 7 tsp
1 tbsp black pepper
1 tbsp dried poultry herb blend
2 tsp garlic powder
3 sticks of unsalted butter
8 minced garlic cloves
2 tsp fresh chopped thyme
2 tsp fresh chopped rosemary
2 tsp fresh chopped sage
Extra:
3 celery stalks
1 lime
3 carrots
3 garlic heads
Fresh herbs
1 cup chicken broth
