Sundried Tomato Pasta in 20 minutes

⭐️ Sun-dried tomato pesto is easy to make in 5 minutes with simple ingredients. It's rich, creamy, nutty, and packed with the sweet and savory notes of sun-kissed tomatoes.
The pesto is excellent as a pasta sauce, dip, or spread in a sandwich. It will add character and flavor to any dish.

1 cup (150 grams) sun-dried tomatoes in oil drained from the oil
½ cup (50 grams) walnuts
½ cup (50 grams) grated parmesan or 3 tablespoons nutritional yeast
2 tablespoon (30 grams) extra virgin olive oil
½ cup (120 grams) water
1 clove garlic chopped
½ teaspoon salt or more to taste
¼ teaspoon black pepper + red pepper flakes for spicy
15 fresh basil leaves optional

Sundried Tomato Fettuccine
Hey guys!! This easy lunch/dinner pasta dish is so easy to make. It's one of my high rated recipes, you'll love how it comes together for your guests.
Ingredients:
About 340g dried fettuccine (its hard to measure pasta, about 3-4 servings)
1 cup reserved pasta water
4 tbsp olive oil
5 cloves garlic, minced
1/2 cup sundried tomato halves, sliced
3-4 tbsp of diced tomatoes
1 tbsp tomato puree/paste
2 tbsp sugar
1/2 cup plain non-fat Greek yogurt
1/4 cup sour cream
1 1/2 cups baby spinach
Salt & pepper, to taste
2 tbsp mixed spices
Method
1 In a large pot, bring water to a boil, add 1 tbsp. of olive oil then add the fettuccine. Cook according to direction on the box then drain (reserving 1 cup of the pasta water) and set aside.
2 In a small bowl, combine the plain Greek yogurt and light sour cream, mix together with a spoon and set aside.
3 While the pasta is cooking, in a large skillet, add the remaining 3 tbsp. of olive oil to the skillet over medium high heat. Once the oil is heated up, add garlic and sundried tomato halves. Sauté until fragrant, about 2 minutes.
4 Turn the heat down to medium low and gently add the diced tomatoes, tomato paste, and granulated sugar. Stir until well-incorporated.
5 slowly whisk in the Greek yogurt and sour cream mixture. After all of it has been added and combined, bring the heat up to medium high and let it simmer and thicken for about 5-7 minutes.
6 Season the sauce with salt and pepper, to taste, then add in the baby spinach. Once the spinach has wilted,add in the cooked pasta and turn off the heat.
7 Toss to coat the pasta. If the mixture seems too thick, gradually add the reserved pasta water. (DO NOT add the full cup all at once, pour slowly and stir and see if you need more).
Serve hot.

SPINACH SUN DRIED TOMATO PASTA
INGREDIENTS
1 pound angel hair pasta (or whatever you like)
1 (10 ounce) jar oil-packed sun dried tomatoes - drained, sliced
¼ cup extra virgin olive oil
3/4 cup dry white wine
6 cloves garlic - sliced
8 ounces baby spinach
1/4 cup packed basil leaves - chopped
1/4 cup parsley - minced
2 cups pasta water - reserved, will most likely not need all of it.
salt - to taste
½ teaspoon crushed red pepper flakes - optional
Parmesan cheese - for serving
INSTRUCTIONS
1. Bring a large pot of salted water (2 tablespoons kosher salt) to boil. Heat a large pan to medium-low heat. Wait 2 minutes then add the olive oil and garlic. Sautee garlic until golden (about 2-3 minutes), then add in the chili flakes and cook for 30 seconds more.
2. Add the sundried tomatoes and cook for 1 minute more.
3. Next, add the white wine and turn heat to medium-high. Cook wine until it reduces by half )about 3 minutes) then turn heat back to medium-low. Cook the pasta. Angel hair only takes a couple of minutes, so watch carefully and cook to al dente.
4. Add a ladle of pasta water and the pasta to the pan. Toss to coat and emulsify the sauce. Cook for 30 seconds, then turn the heat off. Add more pasta water if needed so that the pasta does not dry out.
5. Next, add the spinach and basil to the pan and toss once more. Taste test and adjust salt to taste.
6. Serve with a drizzle of extra virgin olive oil and parmesan cheese on the side. If the pasta gets at all dry while waiting to eat, add a couple ounces of pasta water to loosen things up. Enjoy!

BETH'S CREAMY SUN-DRIED TOMATO AND SPINACH PASTA
Serves 4

INGREDIENTS:
1 lb (450g) Rigatoni Pasta
1-6.5 oz jar (182g) of sundried tomatoes in oil
¾ cup (180ml) of water
1 tbsp (15ml) of Italian Seasoning
¼ tsp (1.25ml) salt
freshly cracked pepper
¼ cup (60ml) fresh parsley
For Béchamel Sauce:
4 tbsp (60g) butter
3 tbsp (22g) flour
2 cups (480ml) milk
½ tsp (2.5ml) salt
freshly cracked pepper
1 garlic clove, minced
1-2 handfuls fresh baby spinach
Garnish:
Freshly grated parmesan cheese
Fresh parsley
Red pepper flakes
METHOD:
Add the sun-dried tomatoes to a blender, oil and all, along with the water, Italian seasoning, salt, freshly cracked pepper and parsley. Blend until a chunky paste forms. Set aside.
Cook rigatoni in boiling water until al dente.
Meanwhile, prepare the béchamel sauce, in a deep skillet melt the butter, the add the flour, whisk until combined and then cook for 1-minute. Slowly add the milk, salt, pepper and garlic, whisk to combine.
Add the sundried to tomato paste to the béchamel sauce, whisk to combine. Add a ladle of hot pasta water if needed to thin out a bit. Add the spinach, whisk until wilted.
Drain pasta, then place it back in the pot. Add sauce on top and stir to cover the pasta with the sauce.
Transfer pasta to a large serving bowl. Top with freshly grated parmesan cheese and fresh parsley.

Ingredients:
2-3 pieces garlic
20g fresh basil
315ml sun-dried tomatoes
170g spaghetti
1/3 cup almonds
pinch of oregano
pinch of salt
pinch of crushed pepper flakes
drizzle of olive oil
pepper to taste
Directions:
1. Bring a pot of water to boil for the pasta
2. Peel the garlic and pick the leaves from the basil. Set some basil aside for garnish
3. Add the sun-dried tomatoes, garlic, and basil into the blender
4. Cook the pasta to package instructions. Stir occasionally to keep the pasta from sticking together
5. Heat up a nonstick pan to medium heat. Dry toast the almonds for a few minutes. Add them to the blender
6. When the pasta is done, add about a 1/4 cup of pasta water to the blender. Add the oregano, salt, and crushed pepper flakes. Blend on medium high for about 30 seconds
7. Strain out the pasta and set aside
8. Heat the nonstick pan back on medium heat. Add a drizzle of olive oil
9. Add the pasta and a 1/4 cup of the pesto. Give it a stir and add a splash of water
10. Cook for 1-2min. Turn the heat off and fold in the reserved basil
11. Plate and add some freshly cracked pepper to taste
