Spiced Apple Cake

Ingredients
Apples:
Unsalted butter, for buttering the baking pan
6 small Granny Smith apples, peeled and sliced
1/3 cup granulated sugar
1/2 teaspoon ground cinnamon
Cake:
1 1/2 sticks (12 tablespoons) unsalted butter, at room temperature
1 cup granulated sugar
4 large eggs, at room temperature
2 cups all-purpose flour
1 cup almond flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon kosher salt
1 1/2 cups buttermilk, at room temperature
3 tablespoons powdered sugar
Directions
For the apples: Preheat the oven to 350 degrees F. Butter a 9-by-13-inch glass baking pan.
Mix together the apples, granulated sugar and cinnamon in a medium bowl. Set aside.
For the cake: Combine the butter and granulated sugar in a large bowl. Using a hand-held mixer, beat on medium high until light and fluffy, about 3 minutes. Beat in the eggs one at a time until fully combined, then add the all-purpose flour, almond flour, baking powder, baking soda, cinnamon, salt and buttermilk. Beat on low speed until a few streaks remain, then fold together with a rubber spatula until fully combined. (Do not overmix.)
Sprinkle the bottom of the pan with half of the apple mixture. Spread the batter over the top of the apples. Top the batter with the remaining apples, making decorative rows across the cake. Bake, rotating the pan halfway through, until a toothpick inserted in the middle of the cake comes out clean, about 1 hour. Allow the cake to cool slightly before dusting with powdered sugar and serving.
Cook’s Note
For a twist on a classic topping, beat 2 tablespoons store-bought salted caramel with 1/2 cup heavy whipping cream until soft peaks form. Serve dolloped on top.

Apple Bundt Cake ~ Tastes Like an Apple Fritter!
This Apple Bundt Cake is perfect for Fall and tastes like an Apple Fritter! It is a soft, moist cake, loaded with apples, brown sugar and Fall spices! It is also pretty easy to make!

Ingredients for apple filling:
3 granny smith apples, cored, peeled and chopped
1/4 cup sugar
1/2 tsp cinnamon
1/8 tsp clove
1/8 tsp nutmeg
2 tsp cornstarch
2 Tbsp water
Mix all ingredients together in a saucepan and cook on medium heat until apples start to soften. Set aside
Ingredients for brown sugar mixture:
1/2 cup brown sugar
1/2 tsp cinnamon
a sprinkle of clove and nutmeg
Mix all together and set aside.
Dry cake ingredients:
2 1/4 cup flour
tsp baking soda
tsp baking powder
tsp cinnamon
1/2 tsp salt
Mix all together and set aside.
Wet cake ingredients:
3/4 cup sugar
1/3 cup softened butter
1/2 cup applesauce
1 cup greek yogurt or sour cream
2 eggs
1 tsp vanilla
Cream together sugar and butter. Add remaining ingredients and mix well. Add in dry cake ingredients and mix just till combined.
To assemble the cake:
Sprinkle half of the brown sugar mixture on the bottom of a well sprayed Bundt pan. Layer half of the cake batter over this. Pour apple mixture over cake batter then sprinkle with remaining brown sugar mixture. Top with remaining cake batter. Bake at 350 for 35-40 minutes. When done, let cool for around 5 minutes before removing cake from the pan. Let cool completely before adding the glaze.
Glaze ingredients:
100 grams of powdered sugar
2 Tbsp water
Mix together well and drizzle over cake

Ingredients for making cinnamon apple cake:
Cake Batter:
3/4 cup (170g) dark brown sugar
2 eggs
1/3 cup (75ml) neutral oil, like canola or grapeseed
1 tsp vanilla extract
1 tsp cinnamon
1/4 tsp nutmeg
1/8 tsp ground ginger
1/4 tsp kosher salt
1 cup (140g) all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1 large apple peeled and diced (I used Honeycrisp)
1/4 cup (40g) roasted almonds, chopped
Streusel Topping:
1 1/2 cups (200g) all-purpose flour
1/3 cup (40g) rolled oats
1/2 cup (55g) dark brown sugar
2 tsp ground cinnamon
1/2 cup (115g) melted butter

Apple Spice Walnut Cake (Gluten-free, Dairy-free, Grain-free)
In this video, I share a recipe I adapted from my incredibly popular pumpkin spice cake on my blog. And it's just as yummy!!
Apple Spice Cake:
INGREDIENTS
1/2 cup and 1 tbsp coconut flour
1 1/2 tsp ground cinnamon
1 tsp ground ginger
1/2 tsp ground nutmeg
1/2 tsp ground cloves
1 tsp baking powder
1/2 tsp baking soda
4 eggs, whisked
1/2 cup maple syrup
2/3 cup unsweetened applesauce
1/4 cup extra-virgin olive oil
1 cup finely chopped apple
WALNUT TOPPING:
1/2 cup chopped walnuts
1 tbsp coconut sugar
DIRECTIONS
1. Preheat oven to 350oF. Line an 8-inch square or round cake pan with parchment paper or grease with coconut oil.
2. In a large bowl, combine the coconut flour, cinnamon, ginger, nutmeg, cloves, baking powder and baking soda.
3. In a medium bowl, combine whisked eggs, maple syrup, applesauce and extra-virgin olive oil. Pour wet ingredients into large bowl with coconut flour mixture. Fold in chopped apple.
4. Pour into cake pan and sprinkle with chopped walnuts and coconut sugar. Bake for 35-40 minutes or until a fork inserted comes out clean. Let cool in pan for 5 minutes and then remove from pan and cool for 5 more minutes before slicing. Serve with ice cream.
5. Store up to a week in the fridge.

This is a fantastic apple Bundt cake for the holidays or any occasion. It will become one of your favorites!
Guys add your eggs with the wet ingredients. In the video I almost forgot to add :)) The cake didn't mind, it was still delicious.
2 cups white sugar
1 ½ cups vegetable oil
2 teaspoons vanilla extract
3 large eggs
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 nutmeg 1/4 allspice
1 teaspoon salt
2 medium Granny Smith apples - peeled, cored and chopped
1 cup chopped roasted walnuts
Glaze
6 Tbs butter
2 teaspoons milk
½ cup brown sugar
1 teaspoon vanilla
1/2 teaspoon salt
Preheat the oven to 350 degrees F (175 degrees C). Grease a 9-inch Bundt pan.
• Beat sugar, oil, vanilla, and eggs in a large bowl with an electric mixer until light and fluffy. Combine flour, baking soda, cinnamon, nutmeg and salt; stir into batter just until blended. Fold in apples and walnuts. Pour into the prepared pan.
• Bake in the preheated oven until a toothpick inserted into the crown or the cake comes out clean, about 1 hour to 1 hour 20 minutes. Allow cake to cool in pan for about 15 minutes then invert on to a wire rack.
Glaze
Heat butter and sugar in a saucepan over medium heat, stirring, until sugar has dissolved. Add milk, vanilla, and salt, and bring to a boil. Remove from heat, and let cool until thickened.

Apple Cake
Servings: 8
INGREDIENTS
1 cup 1/4 peeled apple pieces
1/2 cup sugar
1/4 cup margarine
1/2 cup sour cream
1 cup flour
1 tsp baking powder
1/2 tsp baking soda
1/4 cup brown sugar
1 tbsp butter
1/3 cup chopped walnuts (NOTE: In the video, I said 1 cup - this was a mistake I made during editing)
PREPERATION
1. Peel and cut apples into pieces.
2. Combine sugar, margarine, and sour cream in one bowl. Mix well.
3. In another bowl mix the flour, baking powder, and baking soda together.
4. Add the flour mixture to the sugar and margarine mixture. Mix well until combined.
5. Put the batter in a baking pan that has been lined with baking sheet.
6. In a separate bowl, mix the brown sugar and butter together. Then, add the chopped walnuts to the mixture and continue to mix.
7. Sprinkle the walnut mixture over the batter in the baking pan.
8. Bake at 350°F (180°C) for 40-45 minutes. Afterwards, allow cake to cool.
9. Serve and enjoy!
