How To make Summer Pasta and Lentil Salad(Mf)
1/3 cup vegetable oil
1/3 cup extra virgin olive oil
3 tablespoons white wine vinegar
(up to 4)
1 tablespoon dijon style mustard
1 large garlic clove :
peeled
1 pound penne or medium sized pasta shells
boiled until al dente :
drained --rinsed - cooled and patted dry 3 cups cooked french whole green lentils cooled
:
and patted dry 1 cup uncooked 1 cup grated carrot
1/2 cup sliced scallions
1 cup finely diced celery
1 cup finely diced red or yellow bell pepper
1/2 cup chopped flat leaf parsley
:
and fresh basil 1 cup cherry tomatoes
left whole if small or halved 1/2 cup toasted pine nuts :
optional
In the bottom of a mixing bowl combine the oils, vinegar and Dijon mustard. Pass the garlic through a press into the dressing and season it well with salt and pepper. Add all the ingredients but the pine nuts and toss to blend. Adjust the seasoning; add a bit more of whatever you think the salad needs.
Top each portion of salad with the pine nuts.

Today's recipe is a great brunch addition or treat to add into the mix!
Here's the recipe:
Sweet Saturday - Protein Rich Cantaloupe Bowl!
Ingredients:
1 cantaloupe
2 cups plain Greek yogurt (we use Siggis Greek Yogurt)
1/2 cup fresh or frozen berries
1/2 cup granola
2 tablespoons honey
Cinnamon to taste
Instructions:
Cut cantaloupe in half and scoop out all seeds.
Add about 1 cup of yogurt into each cantaloupe half.
Top with berries, granola and honey and cinnamon
Enjoy on a high carb day!
We love adding greek yogurt (especially the Siggis brand) to meals! It is a great way to get in some additional protein! Greek yogurt is also full of probiotics (AKA: the good gut bacteria) which is great for digestive health!
Honey is a wonderful natural sweetener! We find that adding honey to plain greek yogurt is a great and healthy way to add some sweetness. Honey also has some health benefits and has been shown to help improve your immune system as well as help with allergies!

Sweet Potato Noodle Stir Fry | HIITBURN Carb Cycling Recipes
This is an excellent healthy option for those who love noodles!
Sweet Potato Noodle Stir Fry
Ingredients:
2 sweet potatoes, spiralized thin
1 pound white mushrooms, sliced
2 cups broccoli florets
8 ounces spinach
A splash of water
Slivered almonds, for garnish and sliced green onion, for garnish
Sauce:
1 tablespoon olive oil
1 teaspoon garlic
1/4 cup Braggs liquid aminos
1 tablespoon honey
Instructions:
Heat the avocado oil and garlic in a large skillet. Add the sweet potato noodles, broccoli florets and mushrooms and a splash of water, cook until the sweet potato noodles are soft, about 6-8 minutes.
Whisk together the sauce ingredients.
Once sweet potato noodles are cooked, add the spinach and sauce to the noodles. Toss well to coat. Let cook until the spinach is wilted. Garnish with green onion and almond slivers.
Enjoy on a higher carb day!
Sweet potatoes are one of our go-to healthy carbs! They are a great source of many nutrients such as vitamin A, vitamin B5, B6, thiamin, niacin and riboflavin. They are also high in carotenoids which have been said to help with eye health!

CREAMY BROCCOLI SALAD | VEGAN & GLUTEN-FREE
CREAMY BROCCOLI SALAD RECIPE WITH SPIRALLED VEGETABLES!
Choose your favourite spice blend and mix with non fat plain Greek yogurt (0% MF) for a creamy dressing! Enjoy as a healthy side dish or for lunch with a hard boiled egg!
RECIPE
1 medium head broccoli, chopped into 1 inch pieces
1 cup spiralized sweet potato
1 cup spiralized beets
[b]Dressing[/b]
1/2 cup Plain Greek yogurt (0%)
1 tbsp of your favourite spice blend (I like to use Herb & Garlic from [url:1]Tasty Tidbits[/url])
[b]Toppings[/b]
Sliced almonds
Golden seedless raisons
Instructions:
In a medium sized bowl, combine broccoli, sweet potato and beets.
In a separate small bowl, mix together greek yogurt and spice blend to make a creamy dressing.
Top dressing over medium bowl with vegetables.
Sprinkle with almonds and raisons.
Enjoy as a side dish or enjoy with a hard boiled egg for lunch!

The Reason You Didn’t Like The Feta Pasta
If regular feta is too tangy for your taste, try mixing two types of feta together and you might be pleasantly surprised!
Recipe
2 cups tomato’s
8-10 button mushrooms
5-6 garlic cloves
1/4 cup olive oil
1.5 tsp red pepper flakes
1 tsp* tomato paste
Salt & pepper
100 g goats milk feta
150 g Macedonian style feta
1/4 cup pasta water
Bake at 410 degrees f for 30-45 mins, Broil for 2-4 mins
