How To make Summery Cuke Soup
2 ts Vegetable oil
5 Cucumbers
-- peeled, seeded & chopped 3 Garlic cloves
2 md Onions; chopped
2 1/2 c Vegetable broth
1/4 c Chopped fresh dill
Pepper; to taste 1 c Soy milk
In a large saucepan, heat the oil over medium heat and saute the cucumbers, garlic, and onions until onions are transparent, about 6 minutes. Add the broth and simmer until the cucumber is soft, about 15 to 20 minutes. Remove the soup from the heat and transfer to a blender or food processor and blend until smooth. While the mixture is still warm, stir in the dill and season with pepper. Chill. Stir in the soy milk just before serving. Jacques Pépin's recipe for mint and cold cucumber soup is a refreshing summertime dish. Jacques pulls most of these ingredients straight from his garden. Heat will depend on individual tastes and there is plenty of room to experiment with this one.
What you'll need:

Here is my a chilled cucumber soup recipe for summer. Cooling cucumbers combine with fresh dill, onions and garlic for a smooth creamy cold cucumber soup that is vegetarian, vegan, and very refreshing. Enjoy it!
Polish Pickle Soup Recipe | Zupa Ogórkowa
Polish creamy dill pickle soup or zupa ogórkowa (ZOO-pah oh-goorr-KOH-vah) Recipe.
The original pickle soup version is with grated vegetables but we like it diced.
You can use chicken stock instead of vegetables in this ogorkowa recipe.
