In a single muffin cup you have a brown and crispy hash brown crust, that is filled with ham, sauteed vegetables, melted cheese, and a perfectly cooked sunny side up egg.

How to Make Hash Browns - Diner Style Restaurant Hashbrown Recipe
Learn how to make crispy hashbrowns just like you get at a diner! These are super simple and only require a real potato, butter, oil and a technique. That's it. Enjoy!
For one serving of hash browns:
1 (4-5 ounce or 110-140 grams) russet potato
2 Tbsp vegetable oil
1/2 Tbsp butter or margarine
Wash and peel the potato. Grate or shred on a box grater or food processor. Do so into a bowl of water to prevent oxidation. Drain and rinse until water runs clear. Spread shredded potato out onto paper towels or a clean kitchen towel. Pat dry and let air dry for 5-10 minutes. In a small frying pan, add oil and butter. Heat over medium-medium high heat. When butter solids start to brown, add shredded potatoes. Cover with a lid and cook for 5 minutes without lifting the lid. When time is up, remove lid, season with salt and pepper and flip. Continue cooking for an additional 1-2 minutes. Makes 1 serving of hashbrowns. Enjoy!

6 cups (about 2 pounds) sweet potatoes cut into ¾-Inch or 2cm dice
1½ tablespoons olive oil
1 teaspoon paprika
½ teaspoon salt
FOR THE HASH
1½ tablespoons olive oil
1 yellow onion
4 cloves garlic
1½ teaspoons cumin
1 can (15-ounce) black beans
1 yellow bell pepper
3 scallions
1 teaspoon salt
¼ teaspoon black pepper
TOPPINGS
avocado, lime, cilantro *see notes for more ideas

800 grams sweet potatoes cut into ¾-Inch or 2cm dice
20 grams olive oil
1 teaspoon paprika
½ teaspoon salt

240 grams black beans
1 yellow bell pepper
3 scallions
1 teaspoon salt

5-Step BACON & POTATO HASH | Recipes.net
This classic bacon and potato hash recipe will make breakfasts even more enjoyable! The addition of Canadian bacon to the typical potato hash gives it a more savory flavor to devour. If Canadian bacon is not to your liking, feel free to switch it up with some ham!
Ingredients:
4 cups potatoes, diced, blanched, and cooled
1 cup Canadian bacon, chopped, or ham
¼ cup red onions, chopped
2 tbsp olive oil
¼ tsp ground celery seed
Salt and ground black pepper to taste
⬇️ How to make Bacon & Potato Hash ⬇️
0:10 Heat oil in a large skillet over medium heat. Add the bacon and saute until heated through for 5 minutes.
0:27 Add in the onions and saute until translucent. Stir frequently.
0:35 Add the potatoes and ground celery seed. Continue sauteing until potatoes turn golden brown.
0:47 Adjust the taste with salt and ground pepper.
1:00 Garnish with ¼ teaspoon of parsley and serve immediately
