Szechuan sweet water noodles (tian shui) is a traditional Szechuan noodle dish. The sweetness is from the unique Szechuan sweet soy sauce ( The handmade noodles are extra thick and chewy. It's definitely a treat for noodle lovers.
These cold noodles are slightly spicy from my homemade chili sauce ( and have a rich nutty taste.

Ingredients:3-4 portions
400g flour
1 tsp salt
200g water
For sesame sauce-
2 tbsp sesame paste
1-2 tbsp soy sauce
sesame oil/water
40g peanuts
1 tbsp soybeans
1 tbsp sesame sauce
1 tbsp Szechuan sweet soy sauce
1 tsp peanuts and soybeans powder
1 garlic clove
half spring onion
1 tsp chili oil
sesame oil
Szechuan peppercorns powder

Easy Szechuan Chicken Recipe!

For ease, make sure to follow Jeremy’s ‘wok clock’ method when adding your ingredients – it’s a game changer!

The Ingredients
½ onion
1 red pepper
400g boneless chicken thighs
3 garlic cloves
1 bird’s-eye chilli
1 spring onion
2 teaspoons Sichuan peppercorns
10 dried red chillies
200g cashew nuts
1½ tablespoons vegetable oil
The Marinade
1 teaspoon sesame oil
2 teaspoons granulated sugar
a large pinch of Chinese five-spice
3 tablespoons light soy sauce
1½ tablespoons cornflour
The Sauce
2 teaspoons chilli paste or chilli bean paste
2 tablespoons light soy sauce
2 tablespoons hoisin sauce
3 tablespoons rice wine

Sesame Noodles HD
How to make Sesame Noodles
Ingredients
2 scallions, sliced
1 clove of garlic
1 tsp of fresh ginger root
2 tbsp of soy sauce
1 tbsp of hot sauce
1 tbsp of sesame oil
1 tbsp of rice wine vinegar
1 tbsp of sugar
1 tbsp of peanut oil
1/3 cup of chunky peanut butter
1/3 cup of sesame seeds
1/4 cup of cold water
homemade pasta (reference egg pasta recipe)
fresh cilantro
1 tbsp of peanuts, chopped
Instructions
1. In a blender, combine the scallions, garlic, ginger root, soy sauce, hot sauce, sesame oil, rice wine vinegar, sugar, peanut oil, chunky peanut butter and sesame seeds and blend.
2. Add cold water and then continue blending.
3. Now to a large glass bowl, add the cold noodles and toss with the sauce.
4. Garnish with julienne scallions, fresh cilantro, chopped peanuts and toss.
