How To make Tandoori Marinade
Stephen Ceideburg 2 c Nonfat yogurt
1/4 c Fresh lemon juice
1 1/2 tb Minced peeled ginger root
3 Cloves garlic, minced
2 Jalapeno or other hot
-chilies, seeded and minced 2 Bay leaves
2 ts Paprika
1 1/2 ts Ground cumin
1 1/2 ts Ground coriander
1 ts Turmeric
1 ts Salt
1/2 ts Freshly ground black pepper
1/8 ts Ground cardamom
In India, meat that has been marinated in a mixture of yogurt and spices is roasted in a giant urn-shaped clay oven called a tandoor. Use this marinade with poultry, lamb or seafood Drain yogurt in a cheesecloth lined colander in the refrig- erator for 2 hours. Reserve the liquid for another use (baking or sauces). Place the drained yogurt in a bowl and stir in the remaining ingredients. Discard bay leaves before cooking. Makes 1 3/4 cups. From an article by Steven Raichlen in The San Mateo Times, 5/25/93.

Restaurant style Tandoori Chicken recipe | Using oven at home
This is a restaurant recipe for Tandoori Chicken.
Ingredients
4 chicken legs with thigh on
1/2 tablespoon cumin
2 tablespoon paprika
1/2 tablespoon turmeric
1 tablespoon Kashmiri chilli powder
1/2 tablespoon coriander powder
1 tablespoon garam masala
1 tablespoon methi
1 teaspoon black pepper
1 tablespoon salt
2 tablespoon garlic ginger paste
1 tablespoon lemon juice
2 and half tablespoon olive oil
3 tablespoon yoghurt

Tandoori Chicken in the Air Fryer is definitely the easiest & fastest way to make authentic looking & tasting tandoori chicken that is slightly charred on the outside, while still being tender, juicy & succulent on the inside.

Ingredients:
1.7kg of chicken legs - thigh & drumsticks
2 heaped tablespoons of:
Greek yoghurt and pataks tandoori marinade
4 tablespoons of oil
The juice of two limes
Garlic, ginger & chilli paste:
50g of fresh garlic cloves
40g of fresh ginger
4 green chillies
1/2 tablespoon heaped of:
Salt
Coriander
Garam masala & deghi mirch (Kashmiri chilli powder)
1 teaspoon of turmeric powder
1/2 teaspoon of dried chilli flakes
1/2 tablespoon of cumin seeds
1/4 teaspoon each of red and orange food colouring (optional)

Tandoori Chicken Recipe | Best Tandoori Chicken Marinade | How to Make Authentic Tandoori Chicken
This Tandoori Chicken Marinade is just simply delicious and can be made to be vegan too and used on vegetables!
It's taken me a while to come up with it and the final tips came from my trip to India and speaking to chefs over there!! So I'm really happy to bring this recipe to you so that you can enjoy this authentic and finger-licking good chicken in your home. Of course the chicken tastes best when it is barbecued, (even better on a tandoor or clay oven) but you can make it in the oven too!
Don't forget to check out my recipe for Butter Chicken / Chicken Makhni that uses this tandoori chicken in it. That is a feast in itself! So make extra chicken so you can enjoy both of these dishes.
If you are vegetarian, use this marinade for tandoori vegetables like partly-cooked potatoes, peppers, mushrooms, cassava, onions etc and marinate them for 2-3 hours.
And if you're vegan, just substitute vegan yoghurt in the recipe and marinate your vegetables for 2-3 hours!
