1 tb Chopped Fresh Tarragon

1/8 ts Pepper
1 1/2 c Plain Yogurt
2 c Water
3/4 lb Small New Potatoes
Quartered 1 lb Fresh Green Beans
1 tb Safflower OR Other
Vegetable Oil 1/8 ts Salt
1/8 ts Pepper
1/2 sm Purple Onion Cut Into
Thin Strips Remove Giblets & Neck From Chicken. Rinse Chicken & Pat Dry. Place Chicken in A Large Cooking Bag. Seal Bag According To Package Directions. Cut Slits in Top Of Bag. Place Chicken & Bag in A 13 X 9 X 2 Inch Baking Pan. Bake At 350 Degrees For 2 Hours OR Untildrumsticks Move Easily. Remove From Bag &
Let Cool. Skin & Bone Chicken; Cut Into 1/2 in. Pieces. Cover & Chill. Combine Wine, Shallots, Tarragon, 1/8 t. Salt & 1/8 t. Pepper in A Small Saucepan; Cook Over Medium Heat Until All Liquid Is Absorbed. Combine Herb Mixture & Yogrut in A Medium Bowl. Cover & Chill Several Hours. Bring 2 Cups Water To A Boil in A Medium Saucepan. Add Potatoes; Cover, Reduce Heat & Simmer 5 Min. OR Until Tender. Remove Potatoes From Liquid, Reserving Liquid. Set Potatoes Aside. Wash Beans, Trim Ends & Cut in Half. Return Reserved Liquid To A Bowl. Add Beans, Cover, Reduce Heat & Simmer 5 Min. OR Until Crisp- Tender. Drain. Combine Reserved Potatoes & Beans; Add Oil, 1/8 t. Salt & 1/8 t. Pepper, Tossing Gently. Cover & Chill. Combine Reserved Chicken, Yogurt Mixture & Purple Onion. Spoon Into Center Of A Serving Platter. Creamy Tarragon Chicken Salad
This is one healthy salad recipe that will make sure to keep you full. The dressing is real tasty but is balanced with other ingredients. The way that chicken is being cooked here adds intensity to its flavor making it a tasty treat. The healthy goodness is found in the greens and works best with whole-grain bread.

Tarragon is one herb that is used to help bring out the tastiness of dishes. Tarragon is an exquisite herb that has plenty of phyto nutrients. It also used in traditional medicine which stimulates appetite and is also used for curing symptoms of anorexia. There even have been studies that showed that the ploy-phenolic compounds in the herb helps lower blood glucose levels.
Ingredients
2 pounds boneless, skinless chicken breast, trimmed
1 cup reduced-sodium chicken broth
1/3 cup walnuts, chopped
2/3 cup reduced-fat sour cream
1/2 cup low-fat mayonnaise
1 tablespoon dried tarragon
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
1 1/2 cups diced celery
1 1/2 cups halved red seedless grapes
Steps
Preheat oven to 450°F.
Arrange chicken in a glass baking dish large enough to hold it in a single layer. Pour broth around the chicken. Bake the chicken until no longer pink in the center and an instant-read thermometer inserted in the thickest part of the breast registers 170°F, 30 to 35 minutes. Transfer the chicken to a cutting board until cool enough to handle, then cut into cubes. (Discard broth or save for another use.)
Meanwhile, spread walnuts on a baking sheet and toast in the oven until lightly golden and fragrant, about 6 minutes. Let cool.
Stir sour cream, mayonnaise, tarragon, salt and pepper in a large bowl. Add celery, grapes, the chicken and walnuts; stir to coat. Refrigerate until chilled, at least 1 hour.

Cooking Time: 30 minutes

EASY STEP-BY-STEP INSTRUCTIONS:
1. Combine the mayonnaise, sour cream, tarragon and salt in a large bowl. Stir until the mixture is well blended.
