Aleppo style dishes are very delicious and hard to compare with anything. This dish is one of the signature dishes of Aleppo, named as kebab bel karaz. It’s actually super delicious, fancy dish with yummy sweet and sour taste.

The Recipe:
Ingredinets;
500 g ground Lamb or Beef
1 tbsp allspice :7 spices blend (sabaa baharat)
1 tsp Cinnamon
Salt
500 g fresh sour cherries
1 tbsp Pomegranate molasses
1 tbsp Cinnamon
1 tbsp sugar
Freshly squeezed lemon juice – to taste
(In case you are using sweet cherries, you should use more lemon juice)
1 handful chopped Parsley
½ cup Pine nuts for garnish
2 pita breads
Directions
1-Pit the cherries and place in a pot over medium heat with cinnamon, lemon juice and sugar. Bring to a simmer, reduce heat to low, and cook covered for 15 minutes, until cherries soften and the sauce thickens slightly, about 20 minutes.
2- Now in a large bowl, add Allspice, ground cinnamon, black pepper, salt to the ground lamb/beef and incorporate well.
3- Form the meat mixture into meatballs about an inch in diameter, arrange them in a pan over parchment paper, drziile some olive oil and bake in the oven for about 10 minutes until well browned, we will not cook them all the way through.
4-Transfer the browned meatballs to the pot with the cherry sauce. Simmer an additional 15 minutes.
5-Meanwhile, lightly toast the pine nuts in a hot skillet.
6- Place sauced meatballs on the center of a large platter with pita bread points on the sides. Garnish with parsley, and toasted pine nuts and enjoy this heavenly meal.

Meliz Cooks The BEST Turkish Restaurant-Style Chilli Sauce (Ezme)
This is my recipe for a super easy, Turkish style chilli sauce (Ezme). It’s THE BEST, and all you need are a few simple ingredients and a food processor.
Ingredients
1 400g can chopped tomatoes
2 tbsp Turkish sweet red pepper paste (tatlı biber salçası) OR tomato puree
1 tsp pomegranate molasses
1 tsp dried mint
1 small handful fresh flat leaf parsley
1 large / 2 small onions
2 cloves garlic (1 tsp)
2 tsp pul biber
1 red or green chilli
2 tbsp extra virgin olive oil
The Method
Add all the ingredients into a food processor, and blitz it to a consistency of your liking. Try it, and if you wish, feel free to add a pinch of salt.

Will Bowlby's Rabbit & Pork Fat Kebab with Sulla Sauce & Carrot Pickle
Will Bowlby's rabbit kebab is inspired by a rabbit dish he had whilst in Rajasthan. Enriched with pork fat, flavoured with a Sulla spice mix and served alongside a sauce and carrots cooked in Kasundi (a Bengali mustard sauce), it's a delicious representation of some of the lesser-known flavours beloved in huge parts of India.
Source the rabbit mince and pork fat from a good butcher, and you'll find Kasundi sauce in Indian grocers.
