Ultimate Tex-Mex Mexican Cornbread Casserole: A Spicy, Cheesy Delight!

CORNBREAD RECIPE
INGREDIENTS
• 1 cup Cornmeal
• 1 cup All-Purpose Flour
• 2 tsp Baking Powder
• 1 tsp Baking Soda
• ½ tsp Salt
• 2 Eggs
• 1 cup Buttermilk
• ¼ cup Yogurt or Sour Cream
• ½ cup Unsalted Butter (melted, warm not hot)
• 4 tbsp Honey
INSTRUCTIONS
• Preheat oven to 375° F.
• In a large bowl, add cornmeal, flour, baking powder, baking soda, and salt. Mix well.
• In a medium bowl, whisk eggs. Add buttermilk, Yogurt (or sour cream), 2 tbsp of honey, melted butter, and continue to whisk.
• Combine the wet ingredients with the dry ingredients. Make sure the dry pieces are incorporated. Do not overmix.
• Pour into a greased (or cover with parchment paper) 9x9 inches baking pan. Set aside for 10 minutes.
• Bake for 15-20 minutes or until the cornbread is fully cooked.
• Brush with the rest of the honey on top while the cornbread is still hot.
CORNBREAD MEXICAN CASSEROLE RECIPE
INGREDIENTS
• 500 grams Ground Beef
• 2 tbsp Tex-Mex or Taco Seasoning
• Salt & Ground Pepper (to taste)
• 200 grams Black Beans (Canned)
• 1 cup Red Bell Pepper (Diced)
• 1 cup Red Onion (Chopped)
• 3 cloves Garlic (Minced)
• ½ cup Jalapeno pepper (Finely diced, remove seed if you don't like spiced)
• 2 cups Cheddar Cheese (Shredded)
• 50 grams Black Olives (Sliced)
• 3 stalks Green Onion (Chopped)
• 1 Avocado (Sliced)
• 1 Roma Tomato (Diced)
INSTRUCTIONS
• Sauté onion in a large pan over medium-high heat for 5 minutes
• Add minced garlic and cook for another minute
• Brown ground beef. When the beef is almost cooked add Tex-Mex or taco seasoning. Adjust taste by adding salt and ground pepper.
• Add diced red bell pepper and ¼ cup of diced jalapeno pepper.
• Cook for 2-3 minutes or until the vegetables are tender.
• Add black beans on top of the cornbread loaf.
• Transfer the beef mixture on top of the black beans.
• Spread cheddar cheese on top
• Bake at 350° F for 10 minutes or until the cheese has melted.
• Remove from the oven and add black olives, avocado, tomato, green onion, and the rest of the diced jalapeno pepper.

Delicious Corn Casserole // Side Dish with Tips Step by Step❤️
When it comes to a side dish, this CORN CASSEROLE is on the top of my list of favorites. This side dish goes beautifully with just about anything, I love it so much that I can eat it all alone, hot, warm or cold. My whole family loves it and it’s one of the first dishes everyone goes to on the buffet table. I always prepare a double batch for thanksgiving and Christmas a d when I need a dish for a potluck, this is one of my favorites to take, and I always give out the recipe a few times, I know it by heart. This corn casserole is so easy to prepare and it’ll never let you down. I hope you give it a try. ❤️

INGREDIENTS _________________
1 stick of salted butter (melted)
1 14.5 oz. Can Creamed Corn
1 15.25 oz. Can whole kernel sweet corn (drained)
1 large egg
1 C. Sour cream
1/4 C. Chopped green onions (white n green parts)
1/2 tsp. Sugar
Pepper as needed (optional)
1 8.5 oz. Box Jiffy corn muffin mix
Non stick spray
TOPPER_________________________
Chopped green onions (as needed)
Freshly grated cheese of your choice as needed (i used mixed Sharp cheddar and Monterrey jack)
TIPS__________________________
1. You can double this recipe, if you do, add 2-4 eggs (I use 3)
2. You can replace Sour cream with Greek yogurt or Mayonnaise (you decide)
3. You can use fresh, frozen (thawed) or canned corn
4. Use an 8x8 dish or 9x13 if doubling the recipe)
5. For heat you can use finely chopped seedless jalapeño or can pickled jalapeño (drained)
6. You can add finely chopped bell pepper (green, red,orange or yellow)
7. Bake till no longer jiggly In the center
8. Bake single recipe for approximately 45 minutes
Double recipe needs to be checked at 45 minutes and baked Longer if necessary til no longer jiggly in the center
9. Using a metal pan make take less Time than glass
10. ALL THESE TIPS ARE SUGGESTED, but you decide if you want to follow these tips or not, the decision is yours.

Mexican Cornbread Casserole
Ingredients
• 1 pound lean ground beef
• 1 egg
• 1 can (14 oz) cream-style corn
• 11/3 cup milk
• 1/4 cup vegetable oil
• 2 cups cornmeal
• 4 cups (16 oz.) shredded Cheddar cheese
• 1 medium onion, chopped
• 1 package of taco seasoning
• 1 small can green chilis (drained)
• 1 small can rotel tomatoes (drained)
Instructions
1. Preheat the oven to 350° F. Grease a 13x9x2-inch baking pan and set aside.
2. Meanwhile, cook and crumble the beef until no longer pink, saute the onion with the beef. Drain excess grease. Add taco seasoning, ½ of green chilis and rotel tomatoes. Mix together good.
3. In a bowl, mix cornmeal, milk,oil, egg, corn, and ½ chilis. Mix well.
4. Pour half of the batter into the prepared pan. Sprinkle with 2 cups of cheese. Top with beef mixture.
5. Sprinkle with remaining cheese. Pour the remaining batter over the top.
6. Bake, uncovered, for 55-60 minutes or until a toothpick inserted near the center tests clean.
7. Serve hot.

Ingredients:
1 pound ground beef
1/2 sweet onion diced
1/2 cup diced green pepper
1 can black beans drained
1 can corn drained
1 large tomato diced
1 teaspoon cumin
1 teaspoon oregano
salt/pepper to taste
1 teaspoon chili powder
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 heaping spoon flour
2 1/2 heaping spoons corn meal
1/2 stick melted butter
1 egg
1 can diced mild green chili's
1/2 teaspoon cumin
sprinkle Cayenne pepper
1 1/2 cup shredded cheese
about a cup buttermilk, may take more or less to bring together.
