How To make Texas Chili'N Pasta
1 pound pasta
uncooked
2 tablespoons vegetable oil
1 1/2 pounds beef chuck :
diced in 1/4-inch
chunks 3 garlic clove -- minced
2 tablespoons chili powder
1 tablespoon ground cumin
1/2 teaspoon cayenne powder
1/2 teaspoon salt
15 ounces canned tomatoes
3 cups water
1/4 cup corn meal
2 tablespoons cold water
Prepare pasta according to package directions, drain. Heat oil over medium hig h heat in a large, heavy pan. Add meat and garlic and brown lightly. Add seas onings and stir to coat meat. Add tomatoes and water. Bring to a boil, then r educe heat, cover and simmer 1-1/2 hours, stirring occasionally. Add cold wate r to cornmeal and stir to make paste. Stir into hot beef mixture. Continue to cook and stir for 20-30 minutes uncovered until desired consistency. Serve ov er hot pasta.

Campfire Chili and Cornbread - Outdoor cooking
This time I try to make a spicy chili and some cornbread at the campfire. I use some parts from my Trangia and my little skillet.
Recipes:
Campfire Chili - 2 servings - 60 minutes
- 1 Red onion
- 1 Red bell pepper
- 2 garlic cloves
- 1 red chili
- 2 tomatos
- 100 g ground beef
- 1 cup red kidney beans
- 2 tbsp tomato paste
- 2 tsp bbq sauce
- 1/3 can of beer
- juice of 1/2 lime
- ancho chili powder
- chipotle chili powder
- cumin powder
- rosmary
- oregano
- basil
- salt
- pepper
- tbsp pickled onions/serving
Cornbread - 2 servings - 20 minutes
- 1/2 cup corn flour
- 1/2 cup all purpose flour
- 1 tsp baking powder
- 3 tsp sugar
- 1 tsp salt
- 1 1/2 tbsp dehydrated milk
- 1 egg
- 1/2 cup water
- butter for the skillet

Peppers, I used 2 (red & orange)
Garlic
Black Pepper
Cayenne Pepper

Crushed Red Pepper
Chili Powder

Stewed Tomatoes

Chili is one of those meals that everyone knows how to make and thinks their chili is the best. I get it. That being said, I've always been on the hunt for that chili recipe.
You know, the one that's gonna blow minds and win championships. Let me tell you I've made 100's of chilis in my 50 plus years. I have 2 chili recipes that have stuck around. Only 2.
This is what I call Chili #1. Does that mean there is a chili #2? Sure does. Entirely different beast. We'll cover that one later. Is Chili #1 Award Winning Chili good enough to win awards? Yes, and it has! Try it ... what do you have to lose? If you do try it, leave me a comment below and let me know how it turned out.
This chili does have beans in it and I know not everyone likes beans in their chili. I get it.. just leave them out, no big deal.
Oh, and do not be afraid. I know the ingredient list is loooonnngggg. I have three words for you: Mise en place. You get this together the night before, chop your veg, measure out your spices, this is soooo easy to put together. I participate in chili cook offs and I made HUUGGEEE portions of this stuff. Mise en place is the key to a stress free chili. I promise.
Ingredients:
2 pounds of ground chuck
1 pound of hot Italian sausage
3 (15 ounce) cans of red kidney beans (drained and rinsed)
2 (15 ounce) cans of chili beans in spicy sauce
1 (6 ounce) can of tomato paste
2 (28 ounce) cans of diced tomatoes with the juice
1 large onion chopped
3 stalks of celery chopped
1 green bell pepper seeded and chopped
1 red bell pepper seeded and chopped
3 jalapeno's total. 2 seeded and chopped and 1 for floating on top
4 slices of bacon fried to a crisp then chopped
4 cubes of beef bouillon
1 dark beer (Guinness is awesome) but I've used other kinds - just not IPA
1/4 cup of chili powder (Gebhardt's is best if you can find it)
1 TBS of Worcestershire sauce
1 TBS minced garlic
1 TBS dried oregano
2 tsp ground cumin
2 tsp hot pepper sauce
1 tsp dried basil
1 tsp salt
1 tsp black pepper
1 tsp cayenne pepper
1 tsp paprika
1 tsp white sugar
1 TBS chipotle pepper powder
2 triangles of Abuelita (Mexican chocolate)
1 TBS white vinegar plus a little splash extra
2 tsp of fish sauce

The weather outside is frightful, but this meal is so delightful. Chorizo beer chili inspired by The Seasoned Life by Ayesha Curry, and cast iron cornbread, inspired by my desire to eat cornbread.
