Ingredients;
- Pork 1 kg
- Coriander Seed 1 tsp
- Cumin Powder 1/2 tsp
- Curry Powder 2 tsp
- Turmeric Powder 1 tsp
- Salt 1/3 tsp
- Palm Sugar 1/2 tbsp
- Black Pepper Powder as you like
- [Optional] Seasoning Powder 1/2 tsp
- Coconut Milk 2 cups

Quick and Simple Peanut Satay Sauce

There are many variations of peanut or Satay sauce, some can be quite complex if made from scratch. But with a few short cuts it's surprisingly simple to make. This recipe is super simple and the results are outstanding. You could use fresh peanuts if you have the time, otherwise a good quality crunchy peanut butter does an excellent job. This sauce also goes well with any grilled skewered meats, over vegetables or as a dipping sauce. Also see my chicken Satay recipe.

Thai Pork Satay With Peanut Sauce
This is famous Thai street food. This satay can be made with chicken and beef. It is delicious!
The original recipe uses lemongrass but I can't find it in my area. So I substitute it with ginger instead which came out well. Also, I don't have roasted peanuts o I substitute them with cashews which is fine as well. You can use chicken or beef in this recipe if desired.
Ingredients:
1.6 pounds pork, any cheap cut. I'm using rib meat sirloin. Slice into thin strips
1-2 tbsp ginger paste:
1 tbsp chopped ginger +
1 tbsp chopped cilantro stems or roots +
3 cloves chopped garlic +
1/2 tsp salt +
1/2 - 1 tsp white peppercorns +
1/2 coriander seeds
1-2 tbsp Indian curry powder
1-2 tsp turmeric powder
1-2 tsp ground cumin
1 tsp salt
2 tsp light soy sauce or fish sauce
3/4 cup coconut milk, divide it into 3 portions equally: (1 can Thai coconut milk)
1/3 for the meat, 1/3 for peanut sauce, and 1/3 for brushing
1/2 cup water, or more as needed
30-45 skewers (6)
Ingredients for peanut sauce:
1/3 cup coconut milk
1/4 cup creamy peanut butter
1 disc palm sugar, crushed (If you don't have it, use brown sugar instead)
1/4-1/2 cup water, as needed
1/2 cup crushed roasted cashews or peanuts
2-3 tsp Sambal Orlek (chili-garlic sauce) or any red curry paste
(adjust the amount if you do not eat spicy food)
1 tsp light soy sauce or fish sauce
Ingredients for cucumber pickle (condiment):
1 cup cucumber, cut into small pieces (peeled or unpeeled)
2 whole shallots, sliced thinly
1-2 chilies, optional (I do not have it.)
1/2 cup water
1/2 cup white vinegar
1/4 cup + 1 tbsp sugar
1/2 tsp salt
Method:
1. After cleaning the pork and slice thinly, place them into a large container or a ziplock bag.
2. Make a ginger paste by using a mortar and pestle to mash the ginger, garlic, cilantro stems, salt, white peppercorns, and coriander seeds into a fine paste.
3. Add the paste to the pork. Then add all the rest of the ingredients listed for the pork above. Mix well and marinate in the fridge for at least 6 hours or up to overnight. Recommend putting the container into a ziplock bag to prevent the odor from ruining your refrigerator.
4. Make peanut sauce by adding all of the ingredients listed for the peanut sauce above, except chopped cashews in a saucepan.
5. Bring the mixture to a boil over medium heat. Stir constantly until the peanut butter and palm sugar are completely dissolved.
6. Cook the sauce for about 10 minutes or until thicken or reduce a little bit so that the flavor will be intense. Remove it from the heat and stir in chopped cashews. Set aside until ready to serve.
7. Make cucumber pickle: In a saucepan, combine water, white vinegar, sugar, and salt together. Bring the mixture to a boil for 2-3 minutes. Let cool completely. Then add cucumber and shallots. Set aside until ready to serve.
8. Bring the pork out of the refrigerator and skew them into the skewers (sticks). This recipe makes about 30 sticks. Let the pork skewers come to room temperature. Get the last portion of the coconut milk out with a silicon brush.
9. Grease a large griddle (or you can use a charcoal grill or an electric grill here.) with oil. Set the temperature to medium or 325 def. F.
10. Arrange the pork skewers on the griddle and grill them until char. Brush them with coconut milk every time you turn the pork. Keep turning and brushing until cooked through.
11. Serve the pork satay with peanut sauce and cucumber pickle.
