This recipe is simple to make and delicious to eat. I love this on a cold day but it's even tasty on warm day too. We use a secret ingredient to season it...watch the video to see and enjoy!

Hope you guys enjoy this yummy Veggie Chili, perfect for those chilly winter nights (pun intended :P)
Ingredients (Serves 12 - adjust as needed):
• 1 large yellow onion, chopped
• 8 cloves garlic, pressed
• 5 stalks of celery, chopped
• 1 large red bell pepper
• 1/2 pound cremini or button mushrooms
• 1 tablespoon cumin seed toasted and ground
• 2 tablespoons ancho chile powder
• 1 teaspoon cayenne pepper, more or less to taste
• 1½ cups tomato paste
• 3 cups cooked pinto beans or two 15 ounce cans, rinsed and drained
• 2 cups black beans or one 15 ounce can, rinsed and drained
• 2 cups garbanzo beans or one 15 ounce can, rinsed and drained
• 2 28 ounce cans diced tomatoes
• Sea salt and black pepper to taste
To garnish (optional)
• Avocado, chopped
• Cilantro, chopped
Instructions:
Sauté the onion in a large pot over medium heat for 8 minutes. Add the celery, red bell pepper, mushrooms and garlic. Mix well and add the spices: ground cumin, ancho chile powder, and cayenne pepper. Cook for about 3-4 minutes (add some water if the veggies start to stick to the bottom of the pot)
Add the tomato paste, pinto beans, black beans, garbanzo beans, diced tomatoes, sea salt and black pepper to taste, and 4 cups water. Simmer on med heat for 20 - 25 minutes.
Plate, garnish & serve!

Here are your ingredients!
Makes 6-8 servings:
1 garlic clove
1 diced onion
1 diced bell pepper
1 shredded carrot
1 can tomato puree
1 can diced tomatoes
1 can black beans
1 can kidney beans
1 can great northern beans
1 can white corn
2 packs of chili seasoning
1 pack of shredded cheese (optional)
PREPARATION
In a pan, sauté garlic, onion, bell pepper and shredded carrot until lightly browned. Stir in 1 pack of chili seasoning. Remove from heat. In a large pot, add 1 can tomato puree, 1 can diced tomatoes, 1 can black beans, 1 can kidney beans, 1 can great northern beans, and 1 can white corn. Stir in remaining seasoning pack over heat. Stir in sautéed vegetables. Cover and sit for 15-25 minutes, stirring occasionally. Serve with shredded cheese (optional). Enjoy!

Three Bean Chili Recipe
(This is for mild chili. If you like it spicy, use more of the spices or leave the seeds in for the jalapenos)
1 1/2 cup vegetable broth
1 cup of onion diced
1/4 cub jalapeno pepper seeded and diced
2 tsp chili powder
2 tsp ground cumin
2 tsp vegan Worcestershire sauce
2 garlic cloves, minced
two 15oz cans of black beans, drained and rinsed
two 15oz cans of diced tomatoes with the liquid from the can
one 15oz can of kidney beans, rinsed and drained
one 15oz can of pinto beans, rinsed and drained
one 7oz can of hatch chilies (Optional)
Add everything to a slow cooker/Crockpot and cook on low heat for 8 hours. Top with vegan cheese, cilantro and vegan sour cream if you want, otherwise eat it plain for whole food plant based goodness.

Here I have a simple vegetarian chili that has lots of flavors and has a bit of a bite from the spice blend. ENJOY!!
Vegetarian Chili
Yields:
4 cloves garlic
1 cup onion
1 cup CELERY
2 ½ cups mixed peppers
1 2/4 cup sweet potato
1 cup black beans
1 cup navy bean
1 cup kidney beans
1 can diced tomato
1 can tomato sauce
5 ½ cup vegetable stock
Chili spice blend
1 Tbsp granulated garlic
1 Tbsp granulated onion
2 Tbsp chili powder
1 Tbsp paprika
1 Tbsp cumin
1 Tbsp coriander
½ Tbsp oregano
½ Tbsp salt
½ Tbsp pepper
2 bay leaves
