VEGAN NACHOS W/ JACKFRUIT CARNITAS | #hellajackfruit
I hope you guys enjoy this recipe as much as I enjoyed making it =) Below are the recipes for each ingredient in these LOADED VEGAN NACHOS:
SOUR CREAM
1 cup raw cashews soaked over nigh
1/4 cup lemon juice
1/4 teaspoon salt
1 teaspoon nutritional yeast
1/2 cup water
Throw all of those ingredients in a blender and blitz until it becomes creamy
GUAC
For this recipe, I just eye-balled it. So the measurements below aren’t exact, but feel free to play with the measurements to your personal taste buds.
1 avocado
1/4 cup red onion minced
3 tablespoon cilantro minced
1 juice of lime
1/4 teaspoon minced jalapeno
Salt and pepper to taste
Cut up all the ingredients, then put them in a bowl and smash away.
SALSA
I eye-balled this recipe as well, so, again, play with the measurements to your liking.
2 ripe tomatoes
1/4 cup red onion minced
3 tablespoon cilantro minced
Salt and pepper to taste
Cut up all the ingredients and mix in a bowl.
JACKFRUIT CARNITAS
1 20 oz canned jackfruit in brine or water (not syrup)
2 teaspoon chili pepper
2 teaspoon garlic poweder
1 teaspoon pepper
1 teaspoon cumin
1 teaspoon paprika
8 oz veggie broth
Cut up or tear the jackfruit pieces until they start looking like shredded meat. I like to cut out the core and cut them up into smaller pieces to make more of a consistent texture.
Cook the shredded jackfruit with some olive oil on medium heat and add all the spices.
Cook those for about 5 minutes or until it starts to brown.
Add in the veggie broth.
Cook until the liquid reduces and the jackfruit softens, then you’re all done.
NACHO CHEEZE
1 cup peeled and cubed potatoes
1/2 cup peeled and cubed carrots
2 tablespoon olive oil
1/4 cup unsweetened alternative milk
2 teaspoon lemon juice
1 tablespoon tomato paste
1/2 tablespoon potato starch or corn starch
1 teaspoon garlic powder
1 teaspoon onion powder
2 tablespoon nutritional yeast
1/2 teaspoon salt
Throw all those ingredients in a blender and blitz. If the cheeze sauce is too thick, add more milk to your liking.

Ranch Style Nopalitos
Nopales or nopalitos are the pads of the prickly pear nopal cactus. The prickly pears are consumed as fruit, the pads are used as a dietary vegetable. You can find them in most grocery stores, farmer's markets, or you can grow them yourself if you live in the southwest part of the US or Mexico.
Ingredients:
4 Medium Cactus Pads
1 Medium White Onion (divided)
4-5 tomatillos
1 Roma tomato
4-5 Serrano Peppers
2-3 Garlic Cloves
2 Cups Water
1/2 Tsp Cumin
1/2 Tsp Salt
1 Tbsp Mexican Oregano
1 Tbsp Chicken Bouillon
4-5 Cups of Pork Rinds or Chicharrones

Hello Everybody, In this video I am making a delicious recipe for chicken mole using Doña Maria mole sauce and it came out great! This one of the ways I like to make my mole so I hope you enjoy it and have a Blessed Day!

Chicken Mole
Ingredients:
-8.25 jar of Dona Maria mole
-8 chicken pieces I prefer thighs and drumsticks
-1 medium onion chopped in half
-1 tablespoon of Lawry's garlic salt seasoning
- 1 tsp of ground black pepper
-1 tablespoon of granulated chicken bouillon (you may use carton or canned bullion but that will count for both the liquid and add no extra boullion powder needed)
-1 tbsp of chili powder or to your preference if you prefer it even more spicy. Add a little at a time and stir until you get desired spiciness.
*Optional one heaping tablespoon of creamy peanut butter.
Instructions:
-In a large pot(if you don’t have a dutch oven) have in your 8 cups of water and your chicken pieces . Add your garlic and onion and boil about 15 minutes.
-Remove a piece of chicken and cut into it to see that it is thoroughly cooked if not add back to pot and cook about 10 minutes or until temperature with poultry thermometer reads 165° F
-In a blender place the garlic and onion that you have fished out of the broth with a slotted spoon into blender add your Dona Maria mole paste, chili powder, peanut butter and about 1 cup of the broth , blend until smooth add one more cup of broth and blend until chili is fairly thin enough to pour back into pot. As chicken continues to cook it will thicken.
*When using a blender with hot liquids do not leave the little center cap on blender use a hand towel or tea towel to cover while blending as hot liquids will make it splatter.
* You may skim foam off mole with a slotted spoon if you prefer, it is basically just fat from chicken.

✅Ingredients
• 4 tablespoons butter
• 1 small white onion, chopped
• 1 jalapeno, minced
• 5 cloves garlic, crushed
• 3 tablespoons flour
• 2 teaspoons ground cumin
• 1 teaspoon chili powder
• 4 cups chicken stock
• 6 cups frozen corn kernels
• 1 tablespoon sugar
• 2 teaspoons salt
• 1 1/2 cups heavy cream, half and half, or milk
• 1 cup freshly chopped cilantro
TOPPINGS:
• 1/2 lb bacon, cooked and crumbled
• 1/2 cup crumbled cotija cheese
• 1 jalapeno, sliced
✅Instructions
1️⃣ 00:18 - Melt the butter in a large saucepan over medium high heat. Add in the onions and minced jalapeno and sauté for about 5 minutes, then stir in garlic and cook an additional 1 minute.
2️⃣ 00:55 - Stir in the flour, cumin, and chili powder and cook 1-2 minutes. Whisk in the chicken stock until smooth and bring to a boil. Add in the corn, sugar, and salt. Once it returns to a boil, reduce the heat to low and simmer 10 minutes.
3️⃣ 01:56 - Stir in cream and cilantro. Serve topped with crumbled bacon, cotija, and jalapeno slices.
