Bakery Style Chocolate Chip Banana Muffins:
• 2 CUPS ALL PURPOSE FLOUR (If Gluten Free Use King Arthur's Gluten Free Measure For Measure Flour)
• 1 TBSP BAKING POWDER
• 1/4 TSP SALT
• 1/2 CUP VEGAN BUTTER (SOFTENED ROOM TEMP)
• 3/4 CUP BROWN SUGAR
• 2 EGGS BEATEN (ROOM TEMP)
• 3-4 MASHED BANANAS
• 1 CUP CHOCOLATE CHIPS OR CHUNKS (separate a handful for top decorating)
• 1 TSP VANILLA EXTRACT

Oh, and this recipe is gluten-free, refined sugar-free, and dairy-free! Whether you are gluten free, dairy free, or not, this recipe is such a tasty and easy treat. Here's what you'll need:

2 eggs

Banana Muffins by Mai Goodness | Banana Cupcake | Very Moist & Easy To Make | Breakfast Muffins
Banana Cupcake
Baking needs exact measurements so you'll arrive at the same taste as mine.
Wet ingredients :
3/4 cup light brown sugar
1/2 cup vegetable oil or canola oil
2 large eggs
1/4 tsp vanilla extract
1/4 to 1/2 tsp banana extract
3 big lacatan bananas, mashed
Dry ingredients:
1 2/3 cup all purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp iodized salt
1 tsp cinnamon powder
Toppings are optional:
You can choose 1 from these toppings or a combination of two:
- 1 cup Choco chips for baking (you can also use a chocolate bar and chopped it into pieces
- 1 cup glazed fruit (you can buy it in a baking store)
- 1 cup raisins
- 1 cup chopped walnuts
- 1 cup chopped almonds
Baking pan:
3oz cupcake liners
2 - 3oz cupcake baking tray
you may also use 7x3 or 8x3 inch loaf pans
Baking time:
180⁰C temp for 15 mins for cupcakes - using the middle and bottom rack of the oven. Switch positions after 10 minutes to avoid burning the bottom. No need to switch positions if you are only using the middle rack.
180⁰C for loaf pan - 40 to 50 minutes using the middle rack only
* Double the measurements if you need to make more

• 1 cup flour
• ½ tsp baking soda
• ⅛ tsp salt
• 1 tsp cinnamon
• ¼ tsp nutmeg
• ¼ cup butter, softened
• ½ cup brown sugar, packed
• 1 egg, beaten
• 2.5 - 3 very ripe bananas, mashed (if less ripe, add more sugar)
• ¾ tsp vanilla
• extra butter and cinnamon sugar (topping)
Preheat oven to 325F. Lightly grease 6-9 muffin tins or use liners. In large bowl, combine flour, baking soda, salt, cinnamon, and nutmeg. In separate bowl, cream butter and sugar. Then mix in eggs, vanilla, and mashed bananas until well blended. Stir wet mixture into dry mixture until just moistened. Spoon into muffin tins. If desired, sprinkle with brown sugar (or wait til after baked and do the butter/cinnamon/sugar topping). Bake for 17-22 minutes, until toothpick comes out clean. Drizzle with melted butter and sprinkle with cinnamon sugar.
