Today we’ll do some baking, talk about grandma, and what they wore.
Raisin Bran Muffins, with Cocoa and Cinnamon - super healthy and tasty!
Bran Muffins are healthy to begin with, but when you add cocoa and cinnamon, they become even healthier! This is an easy recipe and the muffins are so tasty, you are going to love them - really :)

Ivo’s Cocoa/Cinnamon Bran Muffins
Makes 9 large or 12 medium sized muffins.
Ingredients
• 150 grams ( 5.3 oz) (~1 ¼ cup) all purpose white flour
• ½ TSP fine salt
• 1 TSP Baking Soda
• 1 TSP Baking Powder
• 1 TBSP Cinnamon
• 3 TBSP Cocoa
• 1 1/2 cups, wheat bran
• 1 cup buttermilk (or mix regular milk with 1 TBSP lemon juice to make buttermilk)
• 2/3 cup raisins
• ¼ cup chopped walnuts (or nuts of your choice)
• 1/3 cup olive oil or extra virgin olive oil.
• ¼ cup unsweetened apple sauce
• ½ cup brown sugar (or ¾ cup if you prefer sweeter muffins)
• 2 eggs, slightly beaten.
• 2 TSP vanilla
• 1/3 cup olive oil (or vegetable oil)
• Optional oatmeal for decorating
Process
• Preheat oven to 375 degrees F.
• Soak raisins in water, set aside.
• In a bowl, mix buttermilk to bran until incorporated – set aside, let stand 5 minutes.
• In a different bowl, add flour, salt, baking soda, baking powder, cinnamon, and cocoa. Mix (a whisk works great), set aside.
• To your bran mixture, add the eggs, vanilla, brown sugar, apple sauce and olive oil – mix to incorporate.
• Now you can mix the bran mixture with the flour mixture and mix until all the flour is absorbed.
• Fold the nuts into the mixture.
• Strain the water from your raisins and fold them in as well.
• Place muffin cups in your muffin baking pan and fill each of them to the same level
• Sprinkle optional oatmeal on top of each muffin.
• Bake for 17 – 20 minutes.
• Let cool and enjoy ????

Bran Muffins with Coconut Oil & Blackstrap Molasses
These are tasty and nutritious, plus a great way to use up a jar of coconut oil you may or may not be using. I did a nutritional analysis on these: each muffin is 187 calories with 4g protein, 6.4g fat, 32.8g carbohydrate and 5.4g fiber.
MOIST Bran Muffins w/Raisins. THE BEST!!
I’ve tried to perfect muffins MANY TIMES to make them moist and not dry. Especially the next day, different recipes seem to dry out overnight. However! :-) These ones are a sure winner. I like that they don’t have white sugar in them also. I used raisin bran cereal this time, but you can use any brand cereal you like. Please follow along as I explain a little tips and tricks along the way. One of them is using cupcake papers and the difference between using theirs and not using those. Making bran muffins with my muffin ???? | LEICHTNING HEALTH
Okay - so maybe the title is a little misleading - I wouldn't say this is my HEALTHIEST vlog, but it IS the tastiest yet!
Here's the thing, I'm a big fan of not baking very often, but enjoying it when you do. Join Jared and me baking bran muffins and try the recipe for yourself! I tweaked the recipe from this video, but I'll also post the recipe below!
Recipe:
1½ cups 100% all bran cereal
1 cup buttermilk
1/3 cup coconut oil melted
1 large egg
2/3 cup honey
1/2 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
Mix the bran and buttermilk together and let sit for 10 minutes. Then stir in the rest of the ingredients.
Bake at 450 degrees for 5 minutes, then lower to 350 (without opening the oven door) for 10 minutes.
VOILA!
