Dates (seedless) - 250 grams
Baking soda - ½ tsp
Milk (hot) - 1 Cup
Butter - ¾ Cup
Caster Sugar - ½ Cup
Eggs - 2 nos
Vanilla Essence - ½ tsp
Maida - 1 Cup
Baking Powder - ½ tsp
Butter Cream:
Soft Butter - 125g
Powdered Sugar - 190 grams
Milk - 1 tbsp
Vanilla Essence - ¼ tsp
Cooking Instructions:
1. Add the dates to a bowl of hot milk. Once it is soft, mash it with a fork.
2. In another bowl, add butter, caster sugar and whisk it till it becomes creamy.
3. Add the eggs one at a time and whisk it till it combines evenly.
4. Add the vanilla essence and mix it well.
5. Sieve maida and baking powder and baking soda into the mixture and whisk till all ingredients combine to form a thick batter .
6. Add the dates mixture and fold it till it combines evenly.
7. Line a muffin mould with butter and paper muffin cups.
8. Evenly spoon the batter into each muffin cup.
9. Bake it at 180 degrees for 25 minutes. Take it out of the oven, place the muffins on a wire rack to cool down.
10. Serve at room temperature.

Healthy Almond Flour Blueberry Muffins are tender, fluffy and naturally gluten free! Made with almond flour, Greek yogurt, and sweetened with maple syrup they are perfect for a grab and go breakfast or snack. ⬇️⬇️⬇️ CLICK FOR RECIPE ⬇️⬇️⬇️
►INGREDIENTS:
3 large eggs
1/2 cup maple syrup or honey
1/3 cup Greek yogurt, 2% fat or higher
2 tsp pure vanilla extract
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
Orange or lemon zest, optional
3 1/3 cups + 1 tbsp almond flour
1 cup blueberries, fresh or frozen
Cooking spray

►DIRECTIONS:
1. Preheat oven to 350 degrees F. Line 12 muffin tin with parchment paper muffin liners (highly recommended) and spray with cooking spray. Set aside.
2. In a large bowl, add eggs, maple syrup, yogurt, vanilla extract, baking powder, baking soda and salt. Whisk very well until combined and no lumps.
3. Add almond flour (make sure to level the top with a knife and do not pack) and stir gently with spatula until well mixed.
4. In a small bowl, combine blueberries with 1 tbsp of almond flour and stir to coat evenly (this prevents them from sinking).
5. Add blueberries to the bowl with batter and give a few gentle stirs just enough to combine.
6. Using an ice cream scoop, divide batter between 12 openings of previously prepared muffin tin. Bake for 20 minutes on the middle rack or until toothpick inserted in the center comes out clean.
7. Remove from the oven, let cool for 15 minutes and enjoy.

The recipe today comes from a church based community cookbook published in Toronto Canada in 1915. Community cookbooks give us a great insight into culinary history and the community cookbook recipe glen cooks today is no different.
Squash Muffins Recipe:
Two well beaten eggs, one cup cooked and strained squash, one cup milk, a little salt, two cups flour, two teaspoons baking powder, one tablespoon melted butte; after all the ingredients are mixed together, add melted butter last. Bake thirty minutes in a slow oven, having oven very hot when first put in.

INGREDIENTS:
1 and 1/2 cups rolled oats
1/2 cup semolina flour
3-5 dates (chopped)
3-4 large and very ripe bananas
1 tablespoon honey
1/4 cup peanut butter
1 tablespoon baking powder
2 large eggs
1 tablespoon black seeds (nigella sativa seeds)
1/2 chocolate chips (unsweetened)
1 tablespoon of coconut oil for greasing muffin pan
INSTRUCTION
- Preheat your oven to 350F.
- Mash banana in a clean bowl and add chopped dates.
- Add eggs and mix together
- Add oats, semolina flour, baking powder, honey and peanut butter and mix all together.
- Now add black seeds and half of the chocolate chips and mix well.
- Coat muffin pan with coconut oil and scoop out your batter into each muffin tins.
- Sprinkle the rest of the chocolate chips on top of each muffin.
- Place in the preheated oven and bake for about 15-20 munites or until golden brown and skewer comes out clean when inserted into the muffin.
- Bring muffins out of the oven and allow to cool before serving. I love my muffins warm soo I do not let it cool completely.
- Store in airtight container and refrigerate for 3-5 days. When you are ready to eat, you may microwave or reheat in the oven to fully enjoy it.
