TKEMALI - The Magical Georgian Plum Sauce You'll LOVE !
Tkemali is an excellent cold quick sauce made out of plums - make it more tangy and sharp or more on a sweet side. Goes with meat, chicken, fish, potatoes, vegetables. A quick chicken tray bake shown.
Ingredients Tkemali:
Plums - about 500g, 1 garlic clove, 1 tea spoon khmeli-suneli ( or mild curry), 1 tea spoon dry coriander, fresh coriander, 1 tea sp. of sugar (or to taste - optional), chilly to taste, salt

Tkemali is a quite addictive tangy and sweet plum sauce made out of fresh plums. Make it more tangy and sharp or more on a sweet side. This sauce is very popular in Georgia. Goes with pork ribs, burgers, chicken, duck, fish, potatoes, vegetables - virtually anything !
Often it is made out of very sharp green plums - I prefer using sweet plums though.
A good way of using these tasteless supermarket plums, which otherwise are not edible !
Plums - about 500g, 1 garlic clove, 1 tsp khmeli-suneli ( or mild curry), 1 tsp dry coriander, fresh coriander, dill ( fresh/dry), 1 tsp of sugar (if plums are good by themselves you might not need it), chilly to taste, salt

Tkemali - Georgian Plum Sauce
Tkemali is a Georgian sauce primarily made of Tkemali plum, sometimes Alucha or other varieties of plum. That is a great healthier alternative to ketchup or cranberry sauce. You can make tkemali at home from scratch from any plums that you have on hand!
How to Make Tkemali
3 kg plums
100 ml water ( I use very small amount of water, to make my sauce thicker )
8-10 large cloves garlic minced
4 tsp adjika or 1-2 red chili pepper finely chopped
100 gr chopped fresh cilantro or dill ( also you can use both of them, its up to you )
5 tsp ground coriander
3 tsp ucxo suneli( georgian)
4 tsp salt
When sause is ready pour into hot and dry jars. Cover with 1-2 teaspoons of olive oil to preserve. Seal and store in the fridge or in a cool place for at least 2-3 months. Enjoy!

How to make Tkemali Plum Sauces | Vegan | Georgian
Tkemali - Sour Plum Sauce
You will learn how to make from a Georgian authentic Tkemali Sour Plum Sauces from real tkemali plums (red, yellow and pink plums).
Tkemali is as popular in Georgia as ketchup is in United States, and it is typically served at the table for all meals. There are various types of locally grown green, yellow, and red sour plums from which it is made, creating tkemali sauces of various colors. Green tkemali is made from small, unripe green plums harvested in May. This tkemali is not preserved; it is enjoyed immediately to celebrate the blossoming of spring.
For the tkemali made early in the season, Georgians use fresh herbs; later in the year Georgians will use a combination of fresh herbs and spices. In all varieties of tkemali a key ingredient is the herb ombalo, or pennyroyal. You can substitute mint. Since tkemali plums are unavailable outside of Georgia, use unripe Mirabelle or Santa Rosa plums. The sauce will keep for minimum 2 months in the refrigerator.
Tkemali plums are typically sour, and some cooks opt to add a little sugar. Since tartness varies depending on the type of plums, taste the sauce at the end of the cooking process and gradually add granulated sugar to get the desired balance. Adjust the amount of salt, pepper, sugar and the consistency of the sauce to your personal taste. I prefer tkemali thick, so I add less tkemali water than other cooks. You can process garlic and fresh herbs in a food processor until finely chopped.

Makes 3 cups/720ml
2.2 pounds/1kg small red or yellow sour plums
7 or 8 garlic cloves, peeled and minced
1/3 cup/15g chopped flowering cilantro
1/2 cup/20g finely chopped cilantro
1/2 cup/20g finely chopped pennyroyal or 1/3 cup finely chopped mint
1/3 cup/15g finely chopped tseretso fennel (substitute dill)
1 teaspoon ground coriander seed
0 to 5 tablespoons granulated sugar, depending on the sourness of plums
1/2 teaspoon hot red ground pepper or cayenne, or to taste
