R36: Dill soup / Rasam :
This soup is very versatile, which can be eaten like a soup or eaten with rice as Rasam. Fresh Dill is very low in calories, yet surprisingly good source of vitamins and minerals.
Dill is a good source of:
* Vitamin A, Vitamin C, Calcium, Iron.
* Improve Vision
* Antioxidant
* Improve bone health.
* Wound healing.
Ingredients :
* 1/2 tsp cumin seeds
* 1 tsp coriander seeds
* 1/2 tsp black pepper
* 1/2 cup finely chopped dill leaves.
* 2 green chillies
* 1/4 cup grated coconut.
* 1 1/2 tsp cooking oil
* 1/4 tsp mustard seeds
* 1/4 tsp asafetida (optional)
* 1 dry red chilly
* Small sized tamarind( may be 1 tsp tamarind paste)/ 1 tsp lemon juice
* 1/2 tsp jaggery / brown sugar
* Salt to taste
* Water as required ( 1 cup )
Method:
* Dry roast cumin seeds, coriander seeds and black pepper till you get a nice aroma.
* To a pan add 1/2 tsp oil fry green chilles. Once done remove it.
* To the same pan add chopped dill leaves, let it cook for few minutes.
* Take all the above ingredients in a blender add coconut to it. Grind to a paste.
* Take this paste in a pan , add 1 cup of water or as required.
* Add tamarind paste ,jaggery and salt. Bring it to boil.
* Take left over oil in a small pan, add mustard,asafetida and red dry chili. Let it splatter. Pour the seasoning to the rasam / soup. Enjoy.
Note:
* Seasoning is optional, you can omit it if you want to drink like a soup.

INGREDIENTS:
-1 medium onion, thinly sliced
●1 garlic clove, minced
●2 tablespoons canola oil
●1 tablespoon butter
●3 large tomatoes, sliced
●1/2 teaspoon salt
●Pinch pepper
●1 can (6 ounces) tomato paste
●1/4 cup all-purpose flour
●2 cups water, divided
●3/4 cup heavy whipping cream, whipped
●1 to 2 tablespoons finely minced fresh dill or 1 to 2 teaspoons dill weed
Delicious Tomato Dill Bisque Vegan & Dairy Free
Worlds Greatest Tomato Dill Bisque Soup that's dairy free, vegan & no fat! I used 1 box of chopped organic tomatoes and 1 large tomato. Blend fresh tomato with 2 tablespoons gluten free flour, salt, garlic powder or fresh garlic and pepper. 1 cup chopped dill, approximately 2 cups almond milk (unsweetened). Cook all ingredients for about 33 to 45 minutes on low after bringing it to a bubbly boil. You may top with vegan cheese or olive oil. Add more garlic, salt, pepper, dill and almond milk to taste. Easy, versatile and fat free! Even better the next day!
