Ballerina Farm Grilled Mozzarella Sandwiches
Making fresh mozzarella, pesto and sourdough to make the ultimate grilled cheese sandwich. After making the sourdough and mozzarella, it was time to make the pesto. Here's what I put in:
2 cups fresh basil
1/4 cup sharp white cheddar cheese
1/2 cup extra-virgin olive oil
1/4 cup pine nuts
3 cloves garlic peeled
1/4 tsp salt
Ballerina Farm seasoning to taste
Juice from 1/2 of lemon ????
Put all the ingredients in a blender and blend until smooth. Add more olive oil if necessary.
For the sandwiches! Sourdough bread, fresh mozzarella and then your pesto. Just seer them in a hot skillet with butter until the cheese is melted... then ENJOY ????

Copycat Starbucks Tomato and Mozzarella Panini
Learn how to make your own Starbucks Tomato and Mozzarella Panini!
Ingredients:
Focaccia or Ciabatta bread
Beefsteak Tomato
Mozzarella (suitable for slicing)
Pesto ( I used tomato pesto, the starbucks one has basil pesto)
Spinach
Tomato Roast Seasoning:
Olive oil
Vinegar
Garlic
Parsley Flakes
Onion Powder
Garlic Powder
Butter Mix:
Butter
Garlic Salt
The panini is literally so freaking good!

Ingredients:
1 tomato
A little olive oil
A handful arugula
A little oregano
A little basil
A little salt
1 mozzarella
A little balsamic sauce
Better at Home: Tomato Mozzarella & Pesto Panini Starbucks Copycat
Ahem. Starbucks, you better watch your backs, okay?
Because Jenny and Anna are making your menu, BETTER AT HOME.
This is so good, we couldn't stop eating it. It was borderline embarrassing.
Here's what you need:
Tools:
Panini Press, Jenny used this one -
Ingredients:
Ciabatta Bread
Spinach, two handfuls
Tomato, sliced
Mozzarella, sliced
Pesto, for lathering
Salt & Pepper to taste
Olive oil, drizzles
Chicken, shredded (optional)
Directions:
Split the ciabatta through the middle to make a top and bottom for your panini. Heat your panini press to about 400 degrees. Drizzle with olive oil, and lay ciabatta bread face down. Spread generously pesto, then top with a good handful of spinach. Top with 2-3 slices of tomato, season with salt and pepper. Top with 2-3 slices of mozzarella, season again. Place chicken on top, if using. Lather the top layer of the ciabatta with a generous lathering of pesto, then place on top of the panini. Drizzle a little olive oil, and some fresh cracked pepper. Gently lay the press down, careful to make sure it presses down instead of across.
Continue to press down until the top and bottom layer of the panini are nicely browned and mozzarella is soft. It is unlikely you'll mozzarella will fully melt before the bread burns, so put it on a plate and microwave for 40 seconds.
Wrap it in a cute little sack if you're feelin' real frisky! and have a freakishly delicious panini that's better than Starbucks and better at home!

FRESH TOMATO MOZZARELLA BASIL SANDWICH
I had this wonderful pizza during one of my recent jaunts.. a simple mozzarella, basil & tomato pizza. Now, who could have thought that this humble pizza could be anything but. I was wrong. I am not big on pizzas or cheese but this blew me away. I never knew that mozzarella could be this fresh and melt in your mouth and the flavor of fresh basil transported me to Italy (or I how imagine it to be).
Naturally, I tried this at home. But in a slightly different way. I made a sandwich using the freshest of ingredients sourced locally. Try using fresh bread, mozzarella and basil for maximum flavor. I assure you this will become a regular on your menu too.
You can also spread pesto on your baguette and add vine or grape tomatoes to give it a twist. Club it with a hot soup for a heartwarming meal on an Autumn evening.
Ingredients:
Olive Oil, 1/2 cup
Italian Herbs, 1 tsp
Sea Salt to taste
Black Pepper, 1/4 tsp (optional)
Roma Tomato, 2 sliced thickly
Fresh Mozzarella, 5 ounces
Fresh Basil, handful
