How To make Tortellini Cheese Filling
1/4 c Olive oil
2 md Onions; roughly chopped
2 tb Minced garlic
1 ts Salt; or as desired
1/2 ts Ground white pepper
1/4 ts Mace
1 tb Chopped fresh thyme leaves
1 lb Cottage cheese
1 lb Hoop, pot or ricotta cheese
1 lb Mozzarella cheese, grated
-or shredded 6 Eggs; lightly beaten
HEAT OIL OVER MEDIUM HEAT in a small pot, add the onions and garlic and cook, stirring, 5 minutes. Scrape mixture into a large bowl and add the salt, pepper, mace, thyme and three cheeses. Mix well, add the eggs and mix to incorporate. Stuffing can be stored, covered, in the refrigerator for up to 5 days. To freeze, place 1-cup amounts of stuffing in air-tight freezer bags or containers, label and place in freezer for up to 3 months. Makes 6 Cups Filling -----

87yr old Maria makes cheese & parsley tortelloni! | Pasta Grannies
These tortelloni are lovely! Maria is one of our 'star' Pasta Grannies, who is happy to demonstrate her skills for visiting film crews. The tortelloni are filled with a mixture of cheeses, parsley and spinach and dressed with sage and just melted butter:
for the pasta: 400g 00 flour (or 80g semolina flour and 320g 00 flour) plus 4 eggs
For the filling: 200g each of young, but firm but not crumbly cheeses - Maria uses Castel San Pietro and Bucciatello - one egg, 400g 24 month Parmigiano, 2 tablespoons finely chopped parsley, 1 tablespoon finely chopped spinach.
For serving: a handful of fresh sage leaves, 50g of butter (or the amount you want)

Ingredients Needed:
Pasta-
- 2 cups (300g) all purpose flour
- 2 whole eggs
- 3 egg yolks
Tortellini Soup:
- Filtered water
- 1 whole chicken
- soup bones
- 3lbs boneless chuck roast, cut into cubes and BROWNED!
- 3 carrots
- 1 onion
- 2 stalks celery
- 1 bay leaf
- 1 teaspoon black peppercorns
- 1/4 bunh italian parsley
- 1 parmigiano reggiano rind
Filling:
- 1/2 lb pork loin, diced into small cubes
- 1/2 lb mortadella
- 1/3lb prosciutto
- 100g parmigiano, grated
- 2 eggs
- 1 tbsp butter
- 1 tablespoon veg oil
- fresh grated nutmeg
- salt and pepper to taste
Tortellini with Sauce:
Filling:
- 1/2 lb cremini mushrooms
- 1/2 lb maitake or oyster mushrooms
- 3 tablespoons butter
- 4 cloves garlic
- 1 shallot
- 3 sage leaves finely chopped
- 1 cup grated parmigiano
Sauce:
- 1/2 cup butter
- 1 cup heavy cream
- 1/3 cup milk
- 5 cloves garlic, minced
- 1/4 teaspoon fresh ground nutmeg
- 1 cup pecorino cheese, Grated
- 1 cup parmigiano reggiano, grated
Assembly:
- FRIED SAGE TOPPING
- shaved parmigiano
- fresh cracked black pepp
