2-3 large Eggs (depends on pan size)
2 Bread slices of tour choice
1 tablespoon (15g) Butter
Salt to taste
Pepper to taste
1-2 slices Cheddar cheese or any other cheese (optional)
1 tablespoon Chives (optional)
Directions:
1. In a bowl beat eggs with salt. Set aside.
2. Heat a medium size pan and melt one tablespoon of butter.
3. When butter is melted pour beaten eggs. Immediately place 2 pieces of bread onto the egg mixture, coating each side in the still-uncooked egg. Allow to cook for 1-2 minutes.
4. Flip the whole egg-bread toast, without braking it. Add the cheese on one slice of bread, sprinkle some herbs (optional). Then, fold the egg wings that hang over sides of the pieces of bread. Then, fold one slice of bread over the second bread that covered with cheese, hinging at the space between the two pieces of bread.
5. Cook the sandwich for 1 minute more.
6. Serve!

$1 Breakfast Tostada
This beautiful looking breakfast treat comes to a whopping 96 cents per serving!! I was 20-30 cents off in my outro, but STILL... 96 cents for this?!?! You have to put in the effort & time, but if you do, you will be greatly rewarded with a wonderful flavor filled morning and no dents in your purse or wallet.
To make this a win-win-win-win for the world, you can join me for a week in September (exact week tbd) by spending no more than $1.90 a day/per person to eat. I know it sounds crazy, but that's what some of these children are surviving off of and if they can do it, I'm pretty dang sure that I can and some. The grand idea is that at the end of the week, whatever money that is left over from your normal food spending budget goes to the kids. With some help from recipes like this and a few others that l'll be posting soon, I think this is a VERY doable task.
Sorry if this is making you feel like I'm asking you to donate something before your transaction at a grocery store and I totally get it, but this was something that moved me and I felt like I have all the proper tools and knowledge to help this HUGE cause in a small way. Thanks for the support and cant wait to share some of these budget friendly recipes with you in the next round of videos!!!

Wafflemaker Hash Browns
RECIPE COURTESY OF REE DRUMMOND
Level: Easy
Total: 35 min
Active: 5 min
Yield: 5 waffles
Ingredients
Olive oil cooking spray, for spraying the waffle iron
One 30-ounce bag frozen shredded hash browns, thawed
4 tablespoons (1/2 stick) butter, melted
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
3/4 cup grated Cheddar
3/4 cup chopped ham
Directions
Preheat a waffle iron on the regular setting and spray both sides with cooking spray.
Squeeze out any excess moisture from the hash browns and put in a bowl. Pour the melted butter over the hash browns, sprinkle with the salt and pepper and stir. Scoop a heaping 1/2 cup of the seasoned hash browns into each waffle section, then top with a generous 2 tablespoons Cheddar followed by a sprinkling of chopped ham. Top the cheese and ham in each section with another 1/4 cup hash browns. Close the waffle iron and cook for 15 minutes on the regular setting.
Repeat with the remaining hash browns, cheese and ham, filling one section of the waffle iron.
