Moni's Tropical Cheese Cake Delight
Tropical, Buttery Coconut Cream Bars
These coconut cream bars are made with a soft, buttery cookie bar base topped with a light coconut frosting and toasted coconut. A quick and easy treat for spring or summer!
Recipe:
Ingredients
Buttery Soft Cookie Bars
1 cup (226 g) unsalted butter softened to room temperature
2 oz (57 g) cream cheese softened
1 ¾ cup (350 g) sugar
2 large eggs + 1 egg yolk
1 teaspoon vanilla extract
¼ teaspoon coconut extract
2 ½ cups (285 g) all purpose flour
½ teaspoon baking powder
1 teaspoon salt
Coconut Cream Frosting
1 ½ cups (180 g) sweetened shredded coconut divided
½ cup (113 g) unsalted butter softened
3 oz (85 g) cream cheese softened
2 cups (250 g) powdered sugar
½ teaspoon coconut extract
⅛ teaspoon salt

Instructions
00:00 Introduction
Bottom layer
00:26 Preheat oven to 350F (177C) and prepare a 13x9 pan by lining with parchment paper (or lightly grease and flour). Set aside.
00:43 Combine butter, cream cheese, and sugar in a large mixing bowl and use an electric mixer to beat until light, creamy, and well-combined (about 1 minute medium/high speed).
02:25 Add eggs, egg yolk, and extracts and stir well.
03:38 In a separate, medium-sized bowl, whisk together flour, baking powder, and salt.
04:08 Gradually add dry ingredients to wet, stirring on medium-low speed until completely combined.
04:56 Spread batter evenly into prepared pan and bake in the center rack of 350F (175C) oven for 25 minutes. Allow cookie bars to cool completely in pan before covering with coconut cream frosting. -- Do not turn off the oven, you will use next if toasting your coconut.
Coconut Cream Frosting
06:10 (Optional) Line a cookie sheet with parchment paper and sprinkle ½ cup (60g) of coconut evenly over the cookie sheet. Bake in 350F (177C) oven for 4-5 minutes, remove, turn with spatula, and return to oven and repeat if needed in 3 minute intervals until coconut is lightly browned. Allow toasted coconut to cool while you prepare the frosting.
07:25 Combine butter and cream cheese in a medium-sized bowl and use an electric mixer to beat until smooth and creamy.
08:18 Gradually add powdered sugar, beating until combined.
09:05 Add coconut extract and salt and stir until well combined.

10:08 Sprinkle untoasted coconut evenly over cookie bars then top with toasted coconut. Cut and serve.
Optional: For an extra decadent treat, drizzle with melted dark chocolate.

TROPICAL CHEESE BALL
1 - 8oz pkg cream cheese
1 - 8.25oz can crushed pineapple, drained
2c (8oz) shredded cheddar cheese
1/2c chopped pecans
1/4c chopped dried apricots
1tsp chopped crystalized ginger
Combine softened cream cheese and pineapple, mixing until well blended. Add remaining ingredients; mix well. Chill. Shape into ball; slightly flatten on top. Garnish with coconut, if desired (I used chopped pecans). Serve with assorted crackers
HOT BEEF DIP
1/4c chopped onion
1 Tbsp margarine or butter
1 - 8oz pkg cream cheese, cubed
1c milk
1 - 4oz can mushrooms, drained
1 - 2.25 oz pkg smoked sliced beef, chopped
1oz grated parmesan cheese
2Tbsp chopped parsley
Sauté onion in butter. Add cream cheese and milk; stir over low heat until cream cheese in melted. Stir in remaining ingredients; heat thoroughly. Serve with chips or bread. Makes 2 1/2 cups.
SNACK SQUARES
1 - 8oz can refrigerated crescent rolls
2 - 8oz containers soft spreadable cream cheese
6 crisply cooked bacon slices, crumbled
1/4c chopped green onion
2T grated parmesan cheese
Separate dough into two long rectangles. Please on ungreased 9x13 baking pan; press onto bottom and slightly up the sides to form a crust. Bake at 375 for 15 to 20 minutes or until golden brown (I ended up baking for 12 minutes).Cool. Combine remaining ingredients, mixing until well blended. Spread over crust. Cut into squares. Makes 32 appetizers.
