How To make Tropical Quesadillas
1 Medium-size ripe banana,
-diagonally cut into 32 -slices 2 ts Lime juice
4 (6-onch) flour tortillas
2 tb Canned chopped green chile
-peppers 1/2 c Shredded reduced-fat
-Monterey Jack cheese Tropical Quesadillas Combine banana and lime juice in a bowl: toss gently. Place 1 tortilla in a non-stick skillet. Arrange 8 banana slices on half of the tortilla; top banana with 1 1/2 tsp. green chile peppers and 2 tblsp. cheese. Place skillet over medium heat until hot. Fold unfilled half of tortilla over banana topped side. Cook 30 seconds. Turn tortilla over and cook 30 seconds or until crisp. Repeat procedure with remaining tortillas. Cut each tortilla into 4 wedges. Serve warm. Yield: 16 appetizers (about 57 calories each)

BLACK BEAN QUESADILLAS | Easy Quesadilla Recipe
This Easy Black Bean Quesadilla recipe is definitely one of my favorites! Soft cooked vegetables on the inside and a crispy tortilla shell on the outside. Black Beans and corn are the star of the show. But you can definitely kick it up a notch by adding some sautéed bell peppers. Top it all off with your favorite toppings like sour cream, salsa and avocado!
Perfect for Meatless Mondays, Meal Prep and Vegetarian or Vegan meals.

Shrimp & Chicken Quesadillas
Ingredients:
Large Tortillas
Shredded Colby Cheese
1 cup Pico de Gallo
3 Tbsp Garlic Cilantro Sauce
10 Large Shrimp
1 Chicken Breast
Blackened Shrimp & Chicken Seasoning:
½ tsp salt
¼ tsp pepper
1 tsp onion powder
1 tsp garlic powder
2 tsp paprika
¼ tsp cayenne pepper
1 Tbsp butter
2 Tbsp avocado or olive oil
Steps:
Start off by combining all the dry seasons. Then sprinkle the blend on the shrimp and chicken and set aside to give it a few minutes to marinate.
Bring a pan up to medium high heat add 1 tbsp of avocado or olive oil. Place chicken breast in the pan and do not move until ready to flip over. Cook until the internal temperature is 165°F (about 5-7 minutes). Let it rest for five minutes then cut into slices.
Add another tbsp of oil and cook shrimp for about 3 minutes on each side and set aside.
Shred the cheese (pick your favorite) or you can buy a pack of shredded cheese.
Time to build
First heat a large pan or skillet to medium high heat.
Evenly coat the pan or skillet with ½ tbsp of butter and lay the tortilla wrap on top.
Immediately sprinkle shredded cheese all over the surface of the tortilla.
Next, add the pico in the same manner.
Now place shrimp/chicken (or both) on one side of the tortilla and drizzle garlic cilantro sauce on top of the shrimp/chicken.
Once the cheese starts to melt, fold the other side on top of the shrimp/chicken.
It should have a nice golden brown crust on the other side.
Cut into 2 or 4 pieces and enjoy with more pico and garlic cilantro sauce.

1/4 cup (60 ml) vegetable oil or grape seed oil (for marinade)
3 cloves garlic , minced
1/2 teaspoon (4 ml) Kosher salt or sea salt, or to taste
2 teaspoons (10 ml) Worcestershire sauce
1 teaspoon (5 ml) chili powder
1/2 teaspoon (2.5 ml) cumin
1/2 teaspoon (2.5 ml) paprika
1/2 teaspoon (2.5 ml) sugar
1 Tablespoon (15 ml) lime juice or lemon juice
For Fajitas
1 pound (454 g) boneless skinless chicken breast or chicken thighs , sliced into thin strips
1 Tablespoon (15 ml) vegetable oil or grape seed oil (for cooking)
1 onion , sliced
1 large bell pepper , sliced thin
1 jalapeno pepper , seeded and minced (optional)
Options For Serving Alongside
