Carnivorous Chili & Vegetarian Chili | Basics with Babish

This week on Basics, I'm showing you how to make the meatiest chili con carne and the best ever vegetarian chili. Both use chili paste that you can make from scratch.

Ingredients & Shopping List:
+ For the chili con carne:
2 pasilla chiles (dried whole)
4 arbol chiles (dried whole)
4 chipotle chiles (dried whole)
3 guajillo chiles (dried whole)
3 ancho chiles (dried whole)
1 whole chuck roast
Vegetable oil
1 white onion, roughly chopped
6 cloves garlic, crushed
4 cups chicken stock
Cinnamon
Ground allspice
Ground coriander
Dried oregano
2-3 Tbsp tomato paste
2-3 Tbsp masa harina
2 limes, juiced
Shredded cheese, for garnish
+ For the vegetable stock:
1 white onion
4 ribs celery
1 bulb fennel
1 parsnip, peeled
3 carrots
1 leek
1 small head cauliflower
2 beets
Vegetable oil
Sprigs of fresh thyme
Small head of garlic, halved
1 bunch parsley
2 dried bay leaves
1 Tbsp whole black peppercorns
1 handful dried porcini mushrooms
2 sheets dried kombu
+ For the vegetarian chili:

2 dried porcini mushrooms
3 poblano peppers
3 jalapeno peppers
2 large onions, roughly chopped
Olive oil
6-7 cloves garlic, roughly chopped
2-3 Tbsp tomato paste
3 tsp toasted cumin
Ground coriander
Dried oregano
1 can cannellini beans, drained and rinsed
1 can kidney beans, drained and rinsed
1 can pinto beans, drained and rinsed
14oz can diced tomatoes
14oz can fire-roasted diced tomatoes
1 tsp liquid aminos
2 Tbsp nutritional yeast
3 cups vegetable stock (ingredients above)
Sour cream and sliced jalapenos, for garnish

Texas Chili Parlor (An Austin Institution!) with Kirk Watson
When in Austin...you eat a classic bowl o'red at the iconic Texas Chili Parlor with former Austin Mayor and Texas Senator Kirk P. Watson! If y'all ain't been to this Texas institution, you're surely missing out!
Folks often argue over whether or not true Texas chili has beans or no beans, but no matter which side you're on, the Texas Chili Parlor serves up both -- and might I suggest a famous Mad Dog Margarita, with that? We sat down with Kirk Watson at one of the most iconic places to eat in Austin that's been featured in all sorts of movies and songs. He gave us the low down on chili and what's awesome about the Austin area!

TRUE Texas Chili (Chili Con Carne)
True Texas Chili. This authentic chili recipe results in tender, flavorful chunks of meat coated in chili sauce that has just the right amount of smoky heat. Learn all you need to know to create an Award Winning True Texas Chili and how to customize it to make it your own.
Ingredients:
6 Ancho peppers, dried, (Use 2 per lb of meat for a mild chili, can use up to 4 chilis per lb of meat if you want a kick)
3 lbs chuck roast, Select or choice, NOT PRIME
4 cloves garlic , minced
½ tsp dried oregano
½ tsp ground cumin
3 tsp salt
1-2 cups beef broth, if needed
2 tbsp masa harina
Instructions:
0:00 Intro
0:06 Prepare the dried chiles by removing stems and seeds
0:13 Roast the peppers to bring out more flavor
0:18 Soak the peppers in boiling water to soften
0:23 trim large chunks of fat off the meat
0:28 sear the meat in a large dutch oven
0:42 remove peppers and reserve the chili broth
0:47 remove skins from the peppers and chop
0:55 sauté garlic, add chili broth and diced peppers to create broth
1:03 add meat to the broth and cover with chili broth
1:13 simmer the meat in the broth
1:19 spice dump of oregano, cumin, and salt
1:26 skim excess grease
1:32 combine some broth with masa to thicken
1:45 serve with toppings of choice

Lazy Hazy Beef Chili - No Chop Hazy IPA Beef Chili - Food Wishes
Despite all the shortcuts, this cheater beef chili recipe is incredibly delicious, and the hazy IPA adds a certain something nobody will be able to figure out. As everybody knows, the most fun part of cheating is getting away with it. Enjoy!

Now chili is a really complex recipe, there are a billion and one ways to make it and this is just ONE way, and the key to an award winning chili at home is to make it your own. That’s the key to any award winning recipe.
In this recipe we’re using
3 ½ lbs ground beef
½ onion
3 garlic cloves
4 tbs chili powder 3 Fiesta / 1 Gephart
2 tsp smoked paprika
¼ cup tomato paste
1 bell pepper
2 tsp cumin
½ tsp oregano
1 tsp cayenne pepper
1 TBS OG - add to taste at end
1 TBS WOW -add to taste at the end
3 Roma tomatoes
We’re also adding
Mirepiox
(thats ½ chopped onion, ¼ cup chopped carrots, ¼ cup chopped celery)
2 TSP Better than Bouillon or use beef broth in place of water
2 TBS masarina or flour to thicken if necessary or desired
Condiments at my house
Onions
cheese
Salsa verde to taste
Chili piquin to taste
Habanero to taste
Beans of your choice, yes i said beans haha
Now here is the biggest pro tip that the chili champs use – brown your meat over high heat before adding it to the dish. This will take your recipe to a whole other level of flavor nirvana.
