How To make Tuna Stroganoff
13 1/2 ounces Can chicken broth
1/4 cup Flour
2 7 oz. cans water packed tuna
Drained
reserving liquid 8 ounces Can tomato sauce
1/4 cup Instant minced onion
4 ounces Can mushrooms :
undrained
1 teaspoon Parsley flakes
1 cup Lowfat plain yogurt
Skim the fat from the chicken broth by chilling it until the fat floats to the top and can be whisked away. Combine the flour with the liquid from the tuna in a saucepan. Gradually stir in the broth and cook over low heat, stirring constantly, until it has thickened. Stir in the tomato sauce, onions, mushrooms, parsley, and tuna. Cover the pot and simmer until heated though. Stir in the yogurt and continue cooking just until hot...do NOT boil. Serves 8 Per serving: Calories116.3 Carbohydrate:

This is my really simple Beef Stroganoff recipe. Beef Stroganoff is a classic dinner that Chris and I have been making for each other for years, and my recipe is super simple but delicious, creamy and and feels like a real treat! Perfect for date night.
You can serve with rice or pasta. This will make a really delicious and impressive dinner.

Ingredients for the Beef Stroganoff:
2 tbsp olive oil
1 tbsp unsalted butter
1 onion peeled and finely sliced
7 oz (200g) baby chestnut mushrooms thickly sliced
14 oz (400g) fillet or ribeye steak sliced into strips around 1cm thick
1/4 tsp salt
1/4 tsp black pepper
2 tbsp brandy (optional)
1 cup (240ml) double (heavy) cream
2/3 cup (160ml) sour cream
1/4 tsp paprika

STOVETOP TUNA CASSEROLE - Homemade Creamy Sauce
Quick and easy homemade stovetop tuna casserole recipe perfect for any night of the week. Seasoned egg noodles with green peas and chunk light tuna in a homemade creamy sauce then garnished with parmesan seasoned crushed saltine crackers.
Shopping List:
5 ounces egg noodles
1 cup frozen peas
2 tablespoons butter
2 tablespoons all-purpose flour
1 ½ cups milk, at room temperature
½ cup heavy cream
½ teaspoon kosher salt for the béchamel sauce
Pinch of nutmeg for the sauce
1/8 cup Kosher salt for the pasta water
¼ teaspoon garlic powder for the sauce
¾ teaspoon white pepper for the sauce
½ cup (2 ounces) freshly grated cheddar cheese
2 6 ounce cans of tuna packed in water, drained and flaked
1 tablespoons freshly chopped parsley for garnish
¼ cup crushed butter or Club crackers.
¼ cup freshly grated Parmesan cheese
Directions:
In a bowl, crush finely the crackers and add in the grated parmesan and parsley and set aside.
In a strainer add the tuna and allow to drain in the sink. When drained use a fork to flake.
Bring a large pot of water to a boil over high heat. Add the salt then add the egg noodles and cook 1 minute less than per package directions.
About 3 minutes or so before the noodles are done, add the frozen peas to the boiling water. Once the noodles are cooked to your liking, reserve ½ cup of the pasta water before you drain the noodles and peas and set aside.
Heat the cream and milk on low until slightly warmed.
Heat up a pan or skillet over medium heat. Add the butter and stir until melted. Add in the flour and constantly whisk for 2 minutes until it form a light paste.
Continue to whisk vigorously as you slowly and gradually pour in the warmed cream and milk. Stir until smooth and bring to a high simmer, whisking frequently to prevent burning.
Cook for a minute or two until the sauce has thickened.
Stir in the salt, garlic powder, nutmeg and pepper
Blend in the cheddar and parmesan and stir until melted, and then stir in the drained tuna then remove the sauce from the heat.
Add the drained noodles and peas into the sauce.
Add the reserved pasta water and mix until everything is well coated.
Mix well and sprinkle the cracker, parmesan and parsley garnish over the top of the noodle/sauce.
