How To make Turkey & Chile Soup
16 oz Can of tomatoes
7 oz Can of diced green chiles
1 Onion, cut into chunks
3 c Chicken broth or
-homemade turkey stock 3 c Bite-size pieces of
-cooked turkey 2 c Cooked brown rice
10 oz Pk frozen whole kernel corn
3/4 ts Ground cumin
1/2 ts Garlic salt
1/4 ts Chili powder
This is a recipe that I like to use for turkey leftovers. I use the carcass to make the stock first. I throw in any vegetables I want to use up in the fridge into the stock pot except cabbage and broccoli and carrot greens which smell too strong if I let the stock boil too hard by accident. After straining the stock and discarding the bones and vegetables I use the following recipe from the Sunset "Fresh Ways with Chicken" cookbook, which I usually double. I also use more broth and less turkey than they call for, I really don't measure the ingredients, I just add what I've got until it's as thick as I want it and the proportions look right. In a blender or food processor combine tomatoes and their liquid, chiles and onion; whirl until smooth. Pour into a large pan, add broth and bring to a boil over high heat. Add turkey, rice, corn, garlic and spices. Reduce heat and simmer until heated through. Serve with fresh cilantro, sour cream and tortilla strips, their recipe calls for strips made from flour tortillas, but I use corn tortilla chips sometimes. -- Sandra Chaffin (fnsjc@aurora.alaska.edu)

Creamy Green Chile Soup
My husband absolutely love the creamy green chile soup special at Cheese & Coffee! This is my attempt at recreating it. Cheese & Coffee is a wonderful spot for lunch in Albuquerque, NM. It's a must if you have never been, but in the meantime give this a try. I hope you guys enjoy this soup recipe!
8 chicken thighs or 3 large chicken breasts (your preference on white or dark meat)
2 tablespoons chicken bouillon
1tsp garlic powder
1tsp onion powder
1-2 cups green chile (depending on how spicy you want your soup)
3 cups water
1/2 cup of butter ( 1 stick)
1/2 cup flour
salt (to taste) Not too much because the bouillon adds saltiness

½ tablespoon olive oil
1 medium white onion, chopped
1 can mild green chiles (or sub 2 seeded and diced jalapenos)
1 tablespoon ground cumin
2 teaspoons chili powder
¼ teaspoon coriander

4 cups low sodium chicken broth
2 (15 ounce) cans white beans ,rinsed and drained
¾ teaspoon salt, plus more to taste

Hi lovelies, I am here again to help you with ideas for all your Thanksgiving Leftovers and today it is time for that turkey again. I thought since it is getting cold, it is a perfect way to use up that leftover turkey meat. This soup turned out so hearty and delicious that I couldn't stop camera man from eating it :) And usually he is not even a big fan of soups. Here is the recipe:
Turkey Soup
ingredients:
1 meaty turkey frame
4 quarts water (16 cups)
1 large onion quartered
2 teaspoons salt
2 16-oz can tomatoes cut up
2 tablespoon instant chicken bouillon or 5 cubes
1 1/2 teaspoon oregano minced
1 teaspoon thyme minced
1 teaspoon pepper
4 cups of your favorite vegetables (my suggestions: sliced celery, carrots, scallions/green onions, sliced mushrooms, chopped fresh spinach, chopped broccoli, chopped cauliflower flowerets, bok choy)
1 1/2 cups uncooked wide egg noodles
Break turkey frame or cut in half with kitchen shears. Place in large pot or dutch oven with water, onion and salt. Bring to boil then reduce heat. Cover; simmer for 1 1/2 hours.
Remove turkey frame; when cool enough to handle, cut off meat and coarsely chop. Discard bones. Strain broth. Discard solids.
Return broth to dutch oven. Stir in turkey meat, undrained tomatoes, bouillon, oregano, thyme and pepper. Stir in fresh vegetables. Bring to boil. Reduce heat. Cover; simmer for 45 minutes.
Cook pasta separately. Combine pasta and soup in bowl and serve. Salt and pepper for taste.
Store pasta separate from soup for future use. Combine only when ready to serve.
