Turkish Delight, also known as lokum, most likely originated in Turkey in the 1700s. Part of the family of confections that use a mixture of starch, like flour or cornstarch, and sugar, it's usually flavored with a bit of rose water, orange, or lemon. The candy is usually cut into small cubes and individually wrapped. It is said that Turkish delight, with its gummy interior, was the early precursor of the modern jelly bean. Turkish Delight may be a delight for some accustomed palates but can be fancifully altered with a number of different flavor concentrates. Whip up a batch to coerce and manipulate the black sheep of your choosing today. Turkish delight or lokum is a Turkish delicacy that is based on a mixture of starch and sugar that is colored with food coloring.

Ingredients for making Turkish delight:
4 cups Sugar
4 1/2 cups Water
2 tsp Lemon juice
1 tsp Lemon zest
1 1/4 cup Cornstarch
1 tsp Cream of tartar
1 tsp Vanilla Extract
2-4 drops Red Food Coloring
1/2 cup Powdered Sugar
Instructions for making Turkish delight:
- Start by adding 4 cups of granulated sugar to a pot then pour in 1 1/2 cups of water followed by 2 tsp of lemon juice and 1 tsp of lemon zest
- Turn the heat on high and whisk the mixture until it comes up to a boil
- Turn the heat down to medium-high and continue cooking until the color darkens slightly and the temperature reads between 240-250 F
- At this point, remove from the heat and VERY CAREFULLY pour the liquid through a sieve into a glass jug to remove any sugar crystals that may have formed
- Set this aside and in a larger pot add 1 cup of cornstarch, 1 tsp of cream of tartar, and 3 cups of water
- Whisk until all the cornstarch has been incorporated into the water and there are no lumps
- Turn the heat to high and whisk frequently unit the mixture comes to a boil then lower the heat to medium-low and continue whisking until it thickens
- Now you can start to add the sugar mixture gradually making sure to whisk in between until all the sugar has been added
- The mixture needs to cook on low heat for about 45 minutes stirring frequently
- When it’s done, the mixture will be a nice golden color and you’re ready to add the flavoring
- We went with vanilla but rosewater or orange are also popular choices
- You can also add some red food coloring to get this lovely shade of pink
- Pour the mixture into a greased and lined 8-inch baking dish and spread it out evenly with a spatula
- This now needs to set in the fridge overnight
- The next day when you’re ready to serve, combine 1/2 a cup of powdered sugar with 1/4 cup of corn starch through a sieve
- Give it a little mix then sprinkle a small handful over the set sugar mixture
- Spread it out with your hands then carefully flip the dish over and the Turkish delight should fall to the counter
- You can then remove the dish and the parchment paper and give the other side a generous sprinkle of the sugar and cornstarch mixture
- This will be very sticky so don’t skimp on the coating
- Dust your knife with the cornstarch mixture then firmly slice the Turkish delight into roughly 24 pieces or more if you prefer smaller bites
- Finally, transfer the pieces to the remaining cornstarch and sugar and gently toss until all side have a thin coating

How To Make Turkish Delight Recipe In Just 5 minutes
Ingredients :
1 cup of juice ( any juice flavor you like)
1 Cup of sugar
1/3 cup of corn starch
1tsp of butter
Icing sugar
Method :
Begin by mixing the juice, sugar, and corn starch off heat.
Then move to the cooker at low heat.
Keep stirring until it thickens.
Then add the butter.
Mix for 2min and it's done.
Place in a dish that is layered with cling film
before pouring the delight to form a shape.
Allow cooling completely. Then cut into desired pieces.
Coat in icing sugar, and serve.

Is homemade Turkish Delight better than the stuff my nan liked? Only one way to find out! Recently you saw how much I dislike Turkish Delight but you all told me to try making my own, so I’ve gone way out of my comfort zone today to do just that, the question is, did I actually like it??

Homemade Turkish Delight Ingredients
800g (2 cups) sugar
1000ml (4.25 cups) water
1 tsp cream of tartar
1 lemon
½ tsp salt
1½ tsp orange extract
2 tbsp rosewater
35g (¼ cup) pistachio kernels, chopped
Red food colouring
Homemade Turkish Delight Recipe
Pour 426ml water (1.5 cups) and all the sugar into one saucepan, then bring to the boil to dissolve the sugar into the water over a high heat. This needs to boil until the sugar syrup reaches 115C (240F).
While this boils, line a baking dish with foil and spray with cooking oil. I would probably prefer baking parchment, but I’m following the recipe this time! This should* help get it out at the end!
Meanwhile, weigh out the cornflour, add the rest of the water (that’s 575ml or 2.75 cups), the cream of tartar and the juice of 1 lemon. Whisk this together to agitate it so there are no lumps over the heat. Keep whisking until it looks like a thick white paste AKA that transparent ketchup with NO lumps at all!
When the sugar syrup reaches temperature, slowly pour it into the thick white paste to bring it back to life over a medium heat. Be very careful as this could easily scold you! Whisk it from time to time as it bubbles gently over the medium heat for at least 45 minutes (I went nearly double the time!) until it turns into a golden orange jelly.
It’s time now to add the flavours, you can go any way you like with this, it doesn’t have to be rosewater! The food dye is optional, I added a splash of red though. Then in with the orange extract, our good friend the rosewater, a little shimmy of salt, and give these a stir through.
Layer half of the mixture into the bottom of your baking dish, sprinkle with a layer of chopped pistachios, then finish with a final layer of the Turkish Delight mixture. You could stir them through or dollop on top or omit them entirely, it’s your choice!
Let this stand until it reaches room temperature, then put into the fridge to set for around 2 hours.
Once it’s set, tip out of the baking dish onto a board and peel off the foil. To cut it up, I dipped my knife into some icing sugar which is what we’re going to decorate it with anyway. In a bowl, measure out your icing sugar, then one by one, dip the cube of Turkish Delight and coat it entirely in sugar. Now this might taste awful to me, but I’m very proud of myself - it looks awesome!

Ever wondered how to make Turkish Delight at home? Here is an authentic Turkish Delight recipe with pistachios! I used pistachios in this recipe, if you like you can use hazelnuts or walnuts instead. Also, it is without gelatin as in the authentic recipe. It has a nice chewy yet juicy texture. It is a nice sweet option for vegans as well. I loved the subtle lemon flavour along with pistachios in this Turkish delight.

1 cup water
1/2 cup corn flour / corn starch
1/4 cup lemon juice
1/2 tsp cream of tartar ( For those who can't find cream of tartar, you can substitute 1/2 tsp cream of tartar with 1 leveled tsp of baking powder.)
1 tsp vanillin sugar or vanilla extract
